Does Boston Cream Pie Need To Be Refrigerated

Yes, Boston cream pie needs to be refrigerated after assembling due to the perishable custard filling. Let the cake sit out at room temperature about 15-30 minutes before serving to get rid of the chill.

If youre making the cake components ahead of time, the sponge cake wrapped in plastic wrap can sit out at room temperature.

The custard will still need to be refrigerated on its own.

You can get a slice at the Omni Parker House without nuts, just ask. They make them both ways. Omni Parker House is where Boston Creme Pie was invented, so you may as well try the original!

However, every bakery in Boston sells Boston Creme Pie , so you won’t have a hard time finding it.

The Parker House claims it invented Boston Cream Pie…and though I have recipes for it that go way back in a very old Fanny Farmer Cookbook, I can not argue the veracity of that claim.

But I can argue that the Parker House does not make a proper Bostonian Cream Pie.

The hotel’s recipe is readily available on the Internet, and amongst other things the cake calls for a dozen or so eggs. That is just wrong. Everyone knows a proper Bostonian would not waste a dozen eggs on one cake. New Englsnd Yankees = Cheap.

Boston Cream Pie is a variation on a pudding cake. And while Bostonians may say they don’t eat it, it is very popular in Massachusetts and I believe it is the official state dessert.

Maybe Boston Cream Pie is more prevalent in my former neck of the woods – south shore?

What Is Pastry Cream

Pastry cream, or Crème pâtissière, is a custard made from milk , egg yolks, sugar, and cornstarch. Its used in desserts like Napoleons, tarts, or as a donut filling. Sometimes its combined with whipped cream to make a lighter Diplomat cream .

To make pastry cream, you heat some of the milk and temper it into the yolk, sugar, and cornstarch mixture. Then it all gets put back into the pot and heated until its thickened and boiled . Once boiled, strain it immediately into a bowl and place plastic wrap directly on top to prevent a skin from forming. Once its cooled to room temperature, place it in the fridge until youre ready to use it. It will need a good whip before you use it in any form, as it will have thickened quite a bit.

Pastry cream does not keep well. It has a very short shelf life and must be refrigerated. As such, its best to serve this cake the same day, or at least within a couple days.

Overall, I am much happier with version #2 of this Boston Cream Pie, both the look of the cake and the styling of the photos. Its a HUGE pain in the butt to redocakes youre not happy with, but its almost always worth the effort.
