How to Make Best Gluten Free Pie Crust Ever

Leadbetter’s is San Francisco based company that distributes their products to Whole Foods and other grocers in the Bay Area. Many urban areas have local bakery brands that produce high quality packaged butter crusts.

  • 8 ounces each
  • $10.99 for a package of 2
  • Frozen rolled out and flat
  • Organic flour, salted butter, water

Tasting notes: Extremely buttery and flaky. Like eating a croissant.

Structure Notes: More of a pastry crust than a pie crust. Very flaky, not very sturdy.

RECOMMEND WITH CAVEAT. The most delicious of all the pie crusts I tested. Best if you need a light and flaky pastry crust. Donât recommend it if you need a sturdy crust.

This particular crust is only available in the San Francisco Bay Area, but is a good example of the excellent packaged crusts that may be available from local bakeries.

Can you freeze this pie crust?

Yes! This pie crust freezes very well. Just defrost, fill with your favorite filling and bake.

How long do you bake a pie crust for?

When baking gluten free, I find that you need to pre-bake your pie crust a little before adding the filling. I bake this pie crust at 350 degrees F for 10-15 minutes. Remove the pie crust from the oven and add your fruit or another pie filling. You can make a top crust, or bake as is to cook the filling in.

Do you have to grease the pie pan?

Even though there is a lot of butter in this pie crust recipe, I like to use a light oil spray to lightly coat the pie pan. This is just extra caution to prevent the pie crust from sticking to the pan.

How do you prevent getting air bubbles in the crust when baking?

Heat can cause all sorts of mischief when you bake. Pinch the edges of the dough in a design. Use a fork to make steam holes on the bottom. These steam holes prevent your crust from bubbling and puffing up in a weird way.

How big do you roll out pie crust dough?

I like to roll my pie crust dough and then when I think I am close to the size of the pan, I will hold the pan up to the dough circle. You want the dough to be rolled out and big enough to go up the sides, and to have a little extra to pinch along the outer edges.

Why This Gluten Free Pie Crust Is Different

My basic principles of flaky pastry-making remain the same. Begin with relatively large chunks of butter , coat them in dry ingredients and then flatten them between your thumb and forefinger.

That way, when the butter melts a bit as youre working with the pastry, it will firm back up when you chill the shaped pastry. This time, though, rather than using ice water to bring the dough together, its sour cream. Sour cream adds a tenderness to the dough that is like nothing else.

Be sure to lift the pie crust up and into the bottom and sides of the pie plate rather than attempting to stretch it. Thatll keep it from shrinking during baking.

If youre a visual learner, Ive created a how-to video to help show every stage of pie-crust making. Its right above the recipe itself.

Ive included instructions for parbaking the crust, but your gluten free pie recipe may or may not require that step. Extra tender and extra flaky?

Thats right. Thank you, sour cream! Whether youre already planning your gluten free Thanksgiving, or still baking up the best of summers stone fruits, you can fill this gorgeous crust with all your favorites.

How To Freeze A Pie Crust

Keeping a few pie crusts in the freezer is the key to saving time when it comes to making pies, especially around the holiday season. To freeze this pie crust, tightly wrap the crust twice with plastic wrap, ensuring to cover all the edges. Then I like to place it in a freezer-safe plastic bag and I use a sharpie and write the date on it as well. It should keep for 1-2 months in the freezer.

Place the refrigerator for a few hours to thaw. Remember the crust should still be cold when you roll it out.

How To Make A Gluten

How To Make Gluten Free Pie Crust

I have tested making this crust two different ways.

  • The first way I tried was the traditional method of cutting the butter into the flour mixture and then adding the wet ingredients, mixing it and forming it into a ball.
  • The second way I tried was using a stand-up mixer. I found that by adding all of the ingredients to my stand up mixer and using the paddle attachment it makes the pie dough smoother and easier to work with.
  • If you dont have a stand-up mixer or hand mixer you can still make this crust the traditional way.

You will be amazed at how easy it is to make your own gluten-free pie crust at home!

    Prepare yourself for pie perfection.

    • Can gluten free pie crust be made ahead of time? Three days max. The fresher the better, but you can make your pie crust up to 3 days ahead of time. Keep the dough refrigerated and covered tightly with foil or plastic wrap.
    • Can pie crust be frozen? Yes it can! Your unbaked pie crust can be frozen and stored for up to 3 months. This is a great way to cut down on the prep time around the holidays or get togethers. To properly freeze, take your prepared crust/dough and wrap tightly with plastic wrap, then place in a freezer bag. You also can roll out your dough and place in a pie tin, wrap the tin tightly with plastic and place in a freezer bag.
    • How do I thaw frozen pie crust? If you have portioned your dough and wrapped to freeze, thaw in the refrigerator for a few hours and then roll out. If youve placed your dough in a pie tin before freezing, you dont have to thaw. Just add about 3 minutes to your baking time.
    • Can pie be frozen after its made? This depends on the type of pie. Fruit pies will hold up well. Custard or meringue pies will not. To freeze a fruit pie, allow the pie to fully cool, then place uncovered in the freezer. Once frozen, you can wrap your pie and/or place in a freezer bag. The rule of thumb is that your pie will last up to 4 months like this.

    Wholly Wholesome Organic Pie Dough

    Gluten
    • $6.49 for a package of 2
    • Comes rolled and frozen, have to defrost completely then microwave 10 sec to unroll
    • Flour, palm oil, water, cane syrup, sea salt, cane sugar, guar gum

Tasting notes: Edible, taste is fine, but the crust itself is a little tough

Structure notes: Out of the box the crust dough circle was not large enough to properly cover my pie dish. I placed a piece of plastic wrap over it , and used my hands to press the dough out a bit. I then lined my pie dish and chilled it for 20 minutes before pre-baking. Even with that, the pie crust slumped with pre-baking.

OKAY. I both prefer the Wholly Wholesome Pie Shell and the Trader Joeâs pie dough to this pie dough. Taste is good, but a little tough and not enough coverage for my pie pan.
