Oftentimes people think a low-carb or keto diet means you have to give up all your favorite sweets. While it does mean you have to make some adjustments, you certainly dont have to do without! I have been able to recreate most of my favorite pre-keto desserts to keto friendly options.

For example, this Keto French Silk Pie has all of the hallmarks of the classic, including a flakey crust, but only comes to about 5 net carbs a slice! Some other favorites include:

  • Keto Cheesecake Brownies: Rich chocolate brownies laced with vanilla cheesecake swirl for about 2 net carbs each.
  • The BEST Keto Lemon Cheesecake Bars: Shortbread crust, topped with a traditional lemon bar layer and then lemon cheesecake. It is so decadent you wont believe they are keto.
  • Easy No Bake Cookies: A keto spin on the classic no bake peanut butter cookies for about one net carb each.
  • Keto Fruit Pizza: Seriously, fruit pizza! This tastes so much like the original it will blow your mind.

Tips For Making Keto Key Lime Bars

  • Let the crust cool completely before adding the filling. If you dont let the crust cool off first, the bars wont set up properly.
  • Likewise, the bars need to cool after being baked. If you try to top them with whipped cream while theyre still warm, the cream will melt.
  • I like to pop the key lime pie bars in the freezer for about 20 minutes to make them easier to slice. Thats an optional step though!

Tips For Keto Key Lime Pie

Once you have the sugar free condensed milk and crust ready to go, this pie is a snap to make. Here are my best tips for getting it right:

  • Make the condensed milk. It needs to cool completely so make this in advance of the crust. You can even make it the day before and refrigerate it overnight. It will thicken a lot in the fridge but you can simply let it come to room temperature and it will loosen up again.
  • Prep the crust. This is a modified version of my easy keto pie crust, with Swerve Brown and a touch of cinnamon to make it taste more like a graham cracker crust.
  • Par-bake the crust. About 12 minutes in the oven will help the crust set nicely before you add the key lime filling.
  • Beat the egg yolks. I gathered some great tips from this recipe on King Arthur Baking. Beating the yolks until they thicken helps set the pie and make the filling super creamy.
  • Beat in the condensed milk. You want to beat this until the mixture increases in volume, which again makes the filling lusciously smooth and creamy.
  • Bake the pie. I recommend covering it in foil for the first 30 minutes to keep the crust from over-browning.
  • Chill the pie. Patience, friend! A good keto key lime pie needs to chill and set for at least 3 hours.

    A Creamy Easy Key Lime Pie Recipe

    This keto key lime pie recipe is sweet but tart. Its a really nice balance between the two and wont make your lips pucker.

    The texture of this pie changes dramatically when allowed to cool. The filling becomes nicely firm and cuts into clean, neat pieces.

    Its a great little pie to make in a jiffy. Its also a wonderful dessert to finish a spicy meal.

    If you are new to key lime pie and/or key limes on their own, Im so excited to introduce you to them!

    Key limes are the cutest little mini-limes. Just like their regular-lime cousins they are bright green when picked, but Key limes get increasingly yellow when ripe. Key limes also have more seeds, higher acidity, thinner skin and have so much more delicious aroma!

    Whats The Difference Between A Lime And A Key Lime

    There are a few subtle differences between regular limes and key limes.

    Key limes tend to be smaller and contain more seeds than regular limes. They also have a more yellowish skin color compared to the thick, bright green skin of regular limes. Key limes also taste slightly less tart than regular limes, which could be considered a plus or a negative depending on how tart you like your key lime pie!

    What Ingredients Are In A No

    To make a No-Bake Key Lime Pie with an almond flour crust, you dont need any complicated ingredients. Just a few things:

    • Butter
    • Monk Fruit or other Keto Friendly sweetener
    • Blue Diamond® Almond Flour
    • Key Limes or Key Lime Juice
    • Cream Cheese
    • Heavy Cream

    The highlight of this Keto Key Lime Pie is the crunchy almond flour crumble we are going to use as the crust. Its addictively delicious on its own, similar to a toasted almond granola.

    While your almond flour crust is cooling, you can make the No-Bake Key Lime filling. I recommend using the juice and zest from fresh Key limes whenever possible, however bottled Key lime juice works really great too.

    One of the biggest advantage to fresh Key limes is that you get the zest to put in the Key Lime Pies in a Jar as well as to use as a garnish.

    Its the little things, like fresh Key lime zest that makes recipes feel so much more gourmet!

    In your mixer beat cream cheese and monk fruit until well combined and smooth. Then drizzle in key lime juice and zest. When its nice and fluffy, add the heavy cream, turn up the speed and WHIP IT!

    You might notice that this filling is almost identical to my Keto Cool Whip Recipe, only with Key Lime Juice. Its like a a No-Bake Key Lime Cheesecake! So much fluffy yum!

    This Recipe Is For Anyone Asking For An Easy Sugar Free Keto Key Lime Pie

    Really, all that you need to do is basically mix the ingredients and bake the pie.To make this recipe even easier, you can use a premade pie crust that is low in sugar or has no added sugar in it.

    Make this a keto key lime pie with coconut milk .Coconut milk, or coconut cream, can be substituted for condensed milk .Look for an unsweetened variety to keep your pie keto friendly.

    How To Make The Most Incredible Keto Key Lime Pie

    One of the biggest reasons why I love making keto style desserts like this is because literally everything is made from scratch, from the filling right on down to the crust.

    The first thing that youll want to do when making this pie is to prepare the crust. First, youll need to lightly grease a nine inch pie dish and set it to the side. Then grab a bowl and combine your almond flour, cinnamon, and whatever low carb sweetener that youre using .

    Add the butter into your almond flour mixture and mix everything together until a soft dough forms. Take this mixture and press it into the bottom and up the sides of your pie dish. Youll then want to throw your crust in the fridge for at least one hour.

    In order to make the filling, get a small saucepan out and add in the butter, sweetener, and heavy cream. Bring to a boil over medium heat, whisking constantly, and then lower the heat and leave to simmer for approximately 20 minutes.

    While the filling is simmering, you can preheat your oven to 350°F. Take your pie crust out of the fridge and bake it for 10 minutes.

    Next, reduce your oven temperature down to 300°F and bake the pie dish for 35-40 minutes. Youll know the pie is done when there is only a slight wobble in the center. Leave the pie to cool completely when you take it out of the oven and refrigerate for a minimum of two hours before serving. I also recommend serving it with whipped cream and lime slices as a topping, but thats totally optional.

    Why Did My Key Lime Pie Turn Out Bitter

    Believe it or not, but one of the most common reasons for key lime pie to turn out bitter is because its made with regular limes instead of key limes!

    Since key limes tend to be slightly less tart than their regular counterparts, if you use regular limes in their place, especially if youre using the exact same amount of lime juice and lime zest, you will naturally end up with a more bitter tasting pie.

    Tips For A Perfect Keto Pie Crust

    I went with a coconut crust for this recipe. Since coconut is a natural partner with limes, I thought it was a good fit.

    The difference with this particular crust recipe is the cinnamon. I loaded this crust with cinnamon to mimic a traditional graham cracker crust.

    This crust bakes to a beautiful golden brown, holds its shape very well, and does not get soggy when filled. Its a very good all-around, all-purpose crust.

    Also, there is no need to roll and cool this crustyou can simply press it into the pan, and its ready to go into the oven.

    However, I have found this crust sometimes sticks, so its a good idea to either line the bottom of your pan with some parchment , or grease your pan a bit before adding the crust.

    How To Make A Low Carb Pie Crust

    Low carb pie crust is easy to make, you just have to use low carb ingredients! Ive found great success in swapping almond flour for regular, refined white flour and using erythritol, allulose, or monk fruit allulose blend instead of sugar.

    It tastes like traditional pie crust, but without all the carbs and sugars! My almond flour crust is perfect for this sugar free key lime pie cheesecake and it couldnt be easier to make.

    Most grocery stores carry key limes for you to purchase, but they may only offer them seasonally depending on where you live. Check in the produce section and look for key limes that are a bit squishy to ensure that theyre ripe and will have a lot of key lime juice to use. If you cant find key limes, regular limes will work, but it may take a little more juice and zest to get that tart flavor.

    Tip: Before you start zesting, give the outsides of the lime a good cleaning! Scrubbing away dirt and grime is key, so it doesnt end up in your mixture. I always soak mine in warm water with a little vinegar for a few minutes before scrubbing.

    • Prepare your pie crust as directed and allow it to cool.

    You may make this no-bake key lime pie recipe a day in advance it does need to cool and have time to firm for a few hours or overnight.

    I added a bit of fresh, whipped cream and some toasted coconut to the top to make it prettyentirely optional.

    This pie will stay fresh in the fridge for daaaaaays. I had one kicking around for five whole days, and it was still as good as it was on day one. Make sure to keep it covered and refrigerated.
