No, Im not obsessed with bread suddenly. Youre not going to see me in a corner like Gollum stroking a loaf of bread and drooling on myself while gumming the heels off of the loaf with big, meaty bites. Im just noticing there are more options out there than Id previously known, thanks to friends tipping me off. And because so many low carbers do partake in bread occasionally or regularly as a part of a lower carb lifestyle, and Im already in a bread frame of mind, why not share all of my local findings?
Shopping for bread products can be depressing, and even though Ive spotted some pretty reliable low carb bread brands locally, at $7/loaf in this economy with a family of six I know Id be breaking the bank. Thankfully, there are manufacturers out there producing lower carb alternatives for a reasonable price to keep life a little more simple , and at stores many of us either frequent or live somewhere akin to.
While not gluten-free, low carb breads give many low carbers who have no gluten issues a life with greater dietary normalcy . So when I reviewed Carb Helper bread, I was excited to receive a tip about yet another productand one thats even easier to find than the Kroger bread. From the delicious uniblogger:
How To Make Honey Wheat Bread
Add 4.5 cups of wheat flour and yeast in the mixing bowl. Stir to combine.
Add warm water, mix and cover. Let it rise for 15 minutes.
Add melted butter, Greek yogurt, honey, vital wheat gluten, salt, and mix well.
Now add the remaining 1 ½ cups of wheat flour and mix until the dough starts to pull off the sides of the bowl. Knead the dough with the mixer for 5 minutes.
Spray two 9×5 inch loaf pan with nonstick spray.
Divide the dough into two equal portions. Roll them on the counter and make logs of about 9 inches. Place them in the prepared baking pans. Spray the plastic wrap and cover the pans. Let the dough rise for 1 hour.
Place the pans on the middle rack. Turn on the oven to 350F. Bake for 30-35 minutes.
Remove the pans from oven and let them cool before removing from pans. Slice the bread and serve.

How To Make Whole Wheat Bread:
In a Stand Mixer of Mixing bowl: Add 4.5 cups wheat flour and yeast to the bowl and stir to combine. Add warm water and mix. Cover and allow to rest for 15 minutes.
Add: Add vital wheat gluten, salt, melted butter, honey, Greek yogurt and mix well.
Knead: Add 1 ½ cups of flour and mix. Mix well and watch the dough it should begin to pull away from the sides of the bowl. If needed, add more flour, a little at a time, until it does. Knead the dough with your stand mixer for 5 minutes . The dough should be smooth and elastic, but still slightly sticky when touched.
Shape: Spray bread pans* with non-stick cooking spray and line the bottom of the pans with parchment or wax paper. Spray your clean counter and hands with cooking spray. Turn the dough out onto the counter and divide it into two equal pieces. Press each portion into a rectangle about 9 inches on the long side. Roll them into logs and place in prepared pans.
Rise: Spray plastic wrap with non-stick cook spray and gently cover the pans. Allow the bread to rise for about an hour, or until the dough is rounded over the tops of the pans. *See notes for quick rise trick.
Bake: Place both bread pans on the middle rack of your cold oven. Turn the oven to 350 degrees F and bake for 30-38 minutes, until the tops are golden. Remove from oven and smooth a stick of cold butter over the tops of the hot bread. Remove bread onto a wire cooling rack to cool completely.

While personally Im more of a Natures Own type of guy, I definitely dont have anything bad to say about Sara Lees breads.
Almost all of their breads are Vegan, with a few exceptions that contain honey, and one or two that contain dairy/butter.
They even have vegan English Muffins, which are usually never vegan when bought from a grocery store.
So which of their breads are Vegan?
Stroehmann Dutch Country 100% Whole Wheat
Yes, whole grain is their first ingredient, but what follows it is a slew of cheap additives, including an ingredient you’d be hard-pressed to see missing from your overly processed bread: Mono- and diglycerides. These additives are used to prolong flavor freshness, improve the texture of dough, make it more uniform, and increase the loaf volume. The issue: These man-made additives likely contain the same artery-clogging trans fats that the FDA banned from our food back in 2015. The only reason they’re still allowed in your food? The FDA reviewed evidence and concluded that we don’t consume enough of them to count as hazardous however, that “evidence” hasn’t been updated since 1975.
Hold on to your hats, because it gets worse: Not only does Stroehmann contain mono- and diglycerides, they also contain ethoxylated mono- and diglycerides. Although the additives themselves carry no additional threat, they could be contaminated with a carcinogenic byproduct of ethoxylation called 1,4-dioxane, which the U.S. National Toxicology Program has concluded is “reasonably anticipated to be a human carcinogen” based on numerous animal studies.
