Jim walked Marcus back into the kitchen, where the employees were arguing about running out of shrinkwrap. Jim asked the employees what happened, and they told him that they had warned him about the short its two weeks ago. He called them liars. Jim asked an employee to order the shrinkwrap, and she pointed out that they might not have enough money to cover it. Jim told her not to worry about that, and then walked off in anger throwing a water bottle. When Marcus asked him about it, Jim told him that he had control issues.
Jim was very opposed to giving up control of the company, but Allison was not. He said that he didnt want to give up what he started to someone else. His temper starts to flare up. Marcus offered Jim one dollar per pie sold for the rest of his life. Marcus asked if he wanted to flip the equation so that he got 49% and dollar pie. Jim said that hes been controlling his whole life, and Allison asked how that was working for him. She urged him to take the original offer. Jim took the deal, and they all shook on it.
Tami made up signs discounting everything down to a dollar. Marcus reassured Jim that he would make Jim a millionaire, but he had to trust the process. He rented out a commercial kitchen and hired three chefs in order to make a new product. Jim started to protest that his product was just fine, but Marcus pointed out that he only sold 40,000 pies a year. Jim wasnt tapping into the Key West market.

I was in the Florida Keys and had to get my key lime pie fix . I have been eating pies from this company for over 20 years. After the company got help from the Profit Marcus Lemonis, the taste improved and was great. This trip I bought a whole pie and was disappointed . The 15 or 20 minute drive home in a cooler with a bag of ice still softened the pie so the consistency wasnt optimal which is my fault . However the taste was blah , not much lime . Tasted like it was mostly whipped cream . The crust was awful. It tasted like a store bought ready made graham cracker crust. A cheap one. We didnt finish the pie which is unlike us. I went by the actual Greene St. Store to try it there to see if those were any different. I was told by the staff that it was the same recipe as what they ship to the stores where I got it so I just left . I wasnt interested in eating it again. I use to haul several pies in a cooler 500 miles home years ago. I can make a better one at home now. Im questioning whether theyve gone back to old habits with lots of ingredients. At least for the ones shipped to the convenience stores. It may be just me but I wont be buying these pies anymore. I feel sad about that family tradition being lost.

Real Key Lime Pie From Key West
Living in Miami, every so often I would drive to this shack on U.S. 1 South that sold the VERY best key lime pie in the world. The proprietor was an older lady and she had no problem sharing her recipe. I have made this countless times and it’s VERY good but not as delectable as the one from that shack. Sometimes if I close my eyes, it’s close. I like it because everything is from scratch. A little piece of KEY WEST in dessert! Real key lime pie is not green & does not have a soft pudding texture. It gets its pale yellow color from the egg yolks and the texture is a firm custard.

The History Of Key Lime Pie In Key West
There are a few stories going around about the origins of key lime pie. Some say it originates from New York while others say it was derived from the Magic Lemon Cream Pie published on a promotional brochure by Borden, a producer of condensed milk.
The story told in Key West goes all the way back to the 1800s, when Key West sponge fisherman kept limes on board to prevent sickness. The fisherman, called hookers by the locals, would whip up a sweet treat mixing the limes with condensed milk and sometimes adding a wild bird egg. Theyd pour it over stale Cuban bread and leave it out to set in the sun.
The fishermans wives took it a step further and baked it in a pie crust. It was a modest dessert of the working class, up until Sarah Jane Lowe Curry, the daughter-in-law of Floridas first millionaire started serving it. Known as Aunt Sally, she served it to the children visiting her home and it wasnt long until it was served in every restaurant in Key West.

Kermits claims to serve the original key lime pie in Key West. Its been declared the best in the city, even from the Food Network. Their version of the pie also follows the traditional recipe of creamy lemon filling, graham cracker crust and whipped cream on top.

After the renovation, Key West Key Lime Pie Co. had its grand opening. Lots of customers came in, and expressed interest in the newness of the business. Tami was thrilled with her new position. She liked making more money and also having the time to spend with her children. Even Jim was pleased with the new business. Jim said that he even agreed with getting rid of all the other stuff that they didnt actually make. He recognized that people were saying that all they wanted was the key lime pie. Marcus acknowledged that Jim was acting like a completely different person. It seems like The Profit was the best thing that could happen to Key West Key Lime Pie Co.
