      When I first came across this recipe, I was puzzled. Maybe I hadn’t had my coffee yet, but I imagined tossing ground beef, veggies, and a few whole potatoes into the Instant Pot and then lifting off the lid to reveal a table-ready Shepherd’s Pie topped with mashed potatoes.

      In reality, there are a few more steps involved — though not many!

      Coco has you start by prepping the filling using the Sauté function on the Instant Pot. Then you place a tall steamer rack in the pot and place the peeled potatoes on top.

      Then the lid goes on and everything pressure cooks together. At the end of cooking, the potatoes are perfectly cooked and ready to be mashed with milk.

      This Easy Shepherds Pie With Ground Beef is a perfect dinner for two or three people. The ground beef filling, made completely from scratch, is rich and a little tangy, with a hint of sweetness from the carrots and the onions. Its so good that youll want to eat it with a spoon before it even goes into the oven. And the potato topping is buttery and creamy and glorious.

      One of the perks of running a food blog is that my job makes it super easy to score bonus points with friends and family since I am constantly feeding them the food I make to the site. People love good food, and they love you a little more if youre the one giving it to them.

      Once the shepherds pie is baked, cool completely and cover loosely with plastic wrap. Place it in the freezer until fairly firm, about two hours. Then, cover tightly with plastic wrap, followed by aluminum foil. Mark the date on the outside and store in the freezer for up to two months.

      When ready to serve, remove the foil and plastic wrap. Use the foil you just removed to loosely cover the pie. Make sure that your casserole dish can go straight from freezer to oven if not, set the casserole in the oven while the oven preheats so that the dish warms slowly.

      Bake the casserole for an hour, or until the pie is hot all the way through. Remove the foil for the last 15 minutes to allow the top to brown.

      If you are wondering, where did shepherd’s pie originate, it was England. Although many believe it has an Irish origin, the history hails from the English.

      How To Make Shepherd’s Pie In A Dutch Oven

      • Heat olive oil in a Dutch oven over medium-high heat. Add the beef, onion, garlic, salt and pepper, and cook for about 5 minutes, or just until the beef has browned.
      • Add the broth, carrots, peas, corn, celery, oregano and thyme. Stir and cook on medium heat, uncovered, for 3 to 5 minutes, just until softened. Reduce heat to medium-low. In a small bowl, combine flour and water until well blended, then pour over the filling in the dutch oven. Stir together. Reduce heat to low, and cover.
      • Preheat oven to 350°F, and then make the mashed potato topping.

      Mashed Potato Topping

      • Add potatoes to a large pot and cover with water. Bring to a boil, and boil until potatoes are fork tender, about 12-13 minutes. Drain potatoes and return to the pot.
      • Add the butter and mash potatoes until smooth. Add salt and pepper to taste.

      Assemble and Bake

      • Remove the Dutch oven with the filling from the heat, and top with the mashed potatoes, smoothing into an even topping layer.
      • Bake, uncovered, at 350° F for about 30 minutes. To create a slightly browned, slightly crisp top, turn on the broiler at the end of the 30 minutes and broil for about 5 minutes. Watch the oven to make sure the top doesn’t burn. Serve immediately.

    • Raw onions are a no no. Sauté them first to soften them. Keep the flame low so they dont brown. Next, add a little garlic and the ground beef and let it cook. Sprinkle with flour.
    • Next add your beef stock and other wet ingredients. At this point you want the dish to simmer for about 5-10 minutes so they gravy can thicken up a little bit.
    • Add your veggies.
    • Now this is where we get a little creative and add some CHEESE. Traditionally cheese is NOT a part of Shepherds Pie, but hey why not, right?
    • And the final and most important step is the potatoes! Layered thick and high. Dont skimp here.
    • I dont know anyone who has said that was good but had too many potatoes. If you ever meet such a person please refer them to me. Otherwise I think we can ALL agree that theres no such thing as too many potatoes.

      Once your have your Shepherds Pie complete, just pop it under the broiler for about 5 minutes so those potatoes get all golden brown on top and dig in !
