Whether it is a deep crust destined for a swath of something creamy, or a shallow tart shell that will be filled with fresh fruit, the blind-baked crust is an essential for avoiding the dreaded soggy bottom.
Baking a crust before filling ensures a pleasant crispy crust experience, but you cant just thwap a raw crust into a hot oven and wait for it to brown. Without a filling, that thin pastry you worked so hard to perfect will essentially melt and slump into a sad pile. So you are going to need something to put into the crust as a placeholder, to help the dough keep its shape.
Enter the land of the pie weight. Companies are selling all kinds of things for you to use to prevent your crust from puffing up on the bottom and sagging on the sides. Your grandmother would have used either beans or rice, usually kept in a special jar for just piemaking. Sugar: For a novel and multipurpose pie weight substitute, try filling the parchment with ordinary white sugar. The sugar will weigh down the crust just as the beans or rice will, but the cooking process imparts some caramelization to the sugar and you can actually use the roasted sugar afterward.

There are three types of pie weights, and each one has its advantages and disadvantages. The type you choose will be dependent on your own specific baking style and needs. As well, since they are loose on the pie dough, it can be a pain to gather them up after the baking is done. I bought this single pie piece and had high-ish hopes for it . And it did fare better than the pie chain. This product weighs about 0.3 pounds and has a perforated metal disk encircled by silicone flaps. To use it, I placed it on the base of the pie crust, with its flaps flaring up against the sides of the crust. Again, though, this pie piece lacked the weight needed to properly blind bake the crust. So, the pie crust slumped a bit. Cooks Illustratednotes this pie weight works okay with doughs made from a mix of butter and shortening. However, in my mind, if it doesnt work with all types of crusts, its not a great pie weight. This pie weight also made impressions in the base of the pie crust. And because some parts of the weight were made from metal and others from silicone, the weight itself heated unevenly, causing the crust to bake unevenly, too.

Make sure your butter is cold and stays cold while youre making the dough. If your house is warm or even hot like my house in the summertime, then you will probably need to stick your butter back in the fridge or freezer after you cut it into small pieces. If you do this first, you can then weigh your flour, salt, and prepare your ice water while its chilling.
If your cold butter softens up too much while crumbling it into the flour mixture, its best to stick it back into the fridge/freezer for a few minutes before adding the ice water.
Another note on the ice water, you can also just stick some water in the freezer, but this requires a bit of planning so its cold enough when you go to make the crust. I often do this because I have only one ice tray and dont always have ice readyespecially in the summer. Sometimes an iced beverage takes preference over a crust, haha.

What Is Blind Baking
You may want to blind bake a pie crust when the filling cooks more quickly than the crust, meaning if you cooked them together, either the crust would turn out underdone or the filling overdone.
