Cooling And Storing Apple Pie
The hardest part of pie baking is waiting for the pie to cool completely before slicing. The cooler your pie is, the cleaner your slices will be. Warm apple pie with ice cream is amazing, though, so if thats your goal, you still might want to give this pie at least an hour to cool . Leftover apple pie keeps well in the fridge for up to three days.
Start With Quality Pie Crust
You need a sturdy crust to sandwich all those apples. Whether youre a pie crust beginner or pro, I encourage you to read through my pie crust recipe. There is nothing quite like homemade pie crust and my grandmothers recipe has consistently proven its authority over the past several decades. Its our familys favorite and Ive been using it ever since I could lift a rolling pin.
This recipe uses a mixture of butter and shortening to provide a quality combination of sturdy, flaky, and buttery. I also have an all butter pie crust if youre interested. But for best taste and texture, swear by using both shortening and butter. You can taste the difference.

How To Make The Apple Pie
Peel, core and cut the apples, and sprinkle them with a little lemon juice or apple cider vinegar to keep from browning. Toss them with a little flour, sugar, cinnamon, allspice, nutmeg, and vanilla, and let the filling sit while you roll out the pie crusts.
Remove the dough disks from the refrigerator and let them sit for 10 to 15 minutes before rolling one of the disks out to 12-inch circles, about 1/8″-inch thick.
Line the bottom of a 9-inch pie plate and line with the rolled out dough. Trim the edges to a half-inch from the sides of the pie pan. Scoop the apples into the pie plate and create a mound in the center. Don’t worry if the apples are high in the pan, they’ll shrink as they cook.
Roll out the second pie dough disk. If you want to make a lattice pie, see our directions for making a lattice pie here. Otherwise, place the second round of rolled out pie dough over the apples, and tuck the edges of the top pie crust over and under the bottom pie crust edges. Crimp with your fingers to seal.
Score the top in several places to create vents for steam to escape .
Why Do You Put Butter In Apple Pie
Some say that scattering small bits of butter over a fruit filling keeps the juices from bubbling over in the same way that adding a bit of fat to simmering jam keeps it from foaming up in the preserving pan. The theory is that the fat disrupts the formation of bubbles on the surface of the viscous fruit mixture.

Can I Rebake My Apple Pie
There are a couple of strategies for recooking an undercooked pie. The easiest is to cover the pie with aluminum foil, place it back in the oven and bake it at 425 to 450 F for around 12 minutes. Once the bottom crust cooks all the way through, reinsert the filling and place the top crust back on the pie as a crumble.

How To Tell When The Pie Is Done
Here are three simple methods for telling when apple pie is ready to come out of the oven:
Visual cue: Apple pie is done when the juices are bubbling through the vents of the top crust or lattice. If you do not see bubbles, the pie needs more time.
Internal temperature: The pie is done when an internal thermometer inserted into the middle of the pie reads 195 degrees Fahrenheit .
Texture of the apples: Piercing the pie is a good indication of how soft the apples are. If they feel too crunchy, the pie needs more time.
Tips From The Pillsbury Kitchens
- tip 1 The flour tossed with the fresh apples turns their juices into a thickened, spiced sauce during baking. Mix it with the sugar and spices before tossing the mixture with the apples.
- tip 2 Two cans of more fruit apple pie filling can be used if youre short on time.
- tip 3 Let your apple pie cool for at least 2 hours before cutting into it. The filling will thicken as it cools, making it easier to slice.
- tip 4 To make Caramel-Pecan Apple Pie: right after removing the pie from the oven, drizzle with 1/3 cup caramel ice cream topping. Sprinkle with 2 to 4 tablespoons chopped pecans.
- tip 5 To freeze Baked Pie: Assemble and bake pie as directed in recipe. Cool completely. Wrap pie tightly with plastic wrap. Place pie in a 2-gallon freezer storage bag seal. Freeze up to 4 months. To reheat, thaw pie in refrigerator overnight. Remove bag and plastic wrap. Cover with foil, bake at 350°F for 25 to 30 minutes or until warm.

The Perfect Pie Crust
A great apple pie starts with an amazing pie crust. We love to use either this all-butter pie crust or our sourdough pie crust. Each of these pie crust use butter and just a little bit of vinegar to produce a tender, flaky pie crust that just can’t be beat!
The crust can be made a few days in advance and kept in the fridge or frozen until ready to assemble your apple pie.

How Long To Bake Apple Pie
To bake, place the pie on a baking sheet in a 375°F oven and bake for 20 minutes, or until the top starts to lightly brown, then lower the temp to 350°F and bake anywhere from 45 minutes to an hour or more longer.
The way you know that the apple pie is done is that the juices are noticeably bubbling. If you have an instant read thermometer, you can insert it into the center of the pie. A reading of 200°F is done.
At any point during the baking the top of the pie begins to brown too much, just tent it with aluminum foil. I usually tent the pie about halfway through the baking with foil.
Let the pie cool for an hour before cutting into it, and serve it plain or with whipped cream or vanilla ice cream!
