Shepherd’s Pie Recipe Gluten And Dairy Free

Even though this crust is seriously easy, we are still baking. For a successful pie crust, it’s important to measure accurately and pay attention as you move through the steps.

For the easiest prep and most consistent results every time, I highly recommend using a kitchen scale. I use this affordable Escali digital scale. It’s currently $25 on Amazon, and there are plenty of other inexpensive options out there, too.

If you don’t have a scale, thankfully, measuring almond flour is different than measuring other flours. So it’s pretty easy to get an accurate amount even without a scale. Instead of whisking the flour and then spooning it into the measuring cup, like you would with all-purpose flour, measure almond flour like you would brown sugar. Scoop it up, and then lightly pack it into the measuring cup.

Heres What Youll Need To Make This Gluten

a gluten-free flour blend. I used Bobs Red Mill 1-for-1 baking flour and think its great.

white chia seeds .

vegan butter. I like Earth Balance for this crust.

coconut sugar. My sweetener of choice for this pie. If youd like to substitute for another, youre welcome to I just may not know how to guide you for substitutions.

coconut yogurt or anything thick and tangy.

sweet potatoes

spices, and dont skimp on the ground coriander and fresh grated nutmeg.

oat milk

pie weights and parchment paper

coconut cream for whipped cream if youd like.

Well start by making the gluten-free and dairy-free pie crust. Because its gluten-free, I work this crust a little differently than a gluten-full crust. Youll see.

This is a familiar sight but Im using vegan butter instead of cows butter. Ive tested this recipe with vegetable shortening and was not at all impressed by the flavor. Ive also tested this recipe with coconut oil and found it a little more difficult to work with.

You can absolutely choose your own adventure. My most successful adventure involves Earth Balance baking sticks.

I add ground white chia seeds to the crust dough. It helps to bind the dough together and adds an earthy, nutty flavor.

If you dont have white chia seeds, the black seeds will do too, theyll just leave specks through the dough. Ive also used ground flax seeds with similar success.

After working in the butter well create a well in the center of the dry ingredients.

How To Make Chocolate Peanut Butter Pie

Here are a few quick notes to ensure that your pie turns out perfectly!

  • Chilling. Do not chill the brownie before pouring the peanut butter filling on top. Leaving it at room temperature ensures that the two layers blend together nicely. DO chill the peanut butter filling before adding the ganache. The peanut butter layer needs to be hardened in order to support the ganache! Then the entire pie needs to chill for at least 2 hours, or overnight, before serving!
  • Ganache. Be extra careful and do not let the coconut cream come to a boil. It should just barely start bubbling before the chocolate chips and peanut butter are added to it! Then let it cool a touch before pouring it on top of the pie.
  • Serving. This Chocolate Peanut Butter Pie recipe is best served cold! I do enjoy letting it sit at room temperature for about 5 minutes before serving, because I think it makes the peanut butter flavor a bit more intense!

    What Is Coco Whip

If you used to use Cool Whip, then this is the perfect dairy-free replacement. It comes in a tub, just like Cool Whip, and is whipped coconut cream that is light and frothy and delicious and perfect for going inside recipes as well as garnishing them.

    Just like when using Cool Whip, youll need to thaw Coco Whip before using it, otherwise its too frozen to stir or do much with. Id set it in my fridge the day before to be just right.

    So, to those who have coconut allergies, Im sorry, but coco whip is made out of coconuts. I have yet to find another dairy-free creamer that yields similar results. Coco Whip is a fabulous replacement for vegans and those with dairy allergies or lactose intolerance.

    How To Make Chicken Gravy & Filling

    For the dairy-free gravy, we use a traditional gravy making method. Creating a roux, add the chicken stock, and whisking until there are no lumps.

    For the filling, heat ghee or your vegan butter in a large saucepan . Add in the tapioca flour and whisk vigorously until combined and there are no lumps, you will cook it for an additional 30 seconds.

    Slowly pour in the stock, whisking constantly. Cook for 1-2 minutes until thickened, whisking every few seconds. If using bone broth rather than shelf-stable chicken stock, warm it up to room temperature. You dont want it too cold or too hot, both can cause excess lumps .

    Stir in the vegetables and chicken, cook for 3-5 minutes until heated through. Add in the remaining spices for the filling and bring to a simmer. Season with additional salt and pepper, if needed.

    We finish the gravy with a small amount of dairy-free milk, preferably almond, just to give it a little extra body. This is optional, but a nice touch!

    Fresh veggies work too. I recommend sauteing chopped onions for 5 minutes to soften them before adding the pot pie filling. The peas and carrots can be added raw. with the chicken.

    Speaking of leftover chicken we used leftover poached chicken from our monthly Butcher Box. Good high-quality chicken has a stronger chicken-y flavor. Maybe because it is a healthier animal to start with? I am not sure but I have noticed that chickens that are allowed to forage for part of their food do tend to taste better.

    Storing And Freezing The Pie Dough And Crust

    You can keep the dough or shaped crust in the fridge for up to a week.

    • To freeze the dough, wrap it tightly in plastic wrap and then in a freezer bag. Store for up to 6 months. Thaw the dough out in the fridge overnight before using it.
    • To freeze a shaped pie crust, freeze the entire pie dish, covered tightly in foil or plastic wrap, and then in a freezer bag for up to 6 months. Thaw overnight in the fridge or you can place it right in the oven and extend your blind baking or full baking time.

    Remove the top parchment paper and then place your hand below the bottom piece of parchment to flip the dough onto your pie tin, then slowly peel off the remaining parchment paper as you press the dough into the tin. Note that the dough may break, but dont worry as you can easily press the dough back into place .
