I rarely eat frozen dinners. They just donât appeal to me, I am skeptical of where the meat came from , and they are usually just plain icky. On the other side of that coin is the fact that I work long hours sometimes and I donât always have time to fix food for myself. Sometimes I am ravenous and ready to chew the insides of my cheeks off, you know? Thereâs no time for cooking and you know what happens when you just start grabbing at sustenance. It ainât pretty.

Anyway, I got a coupon for $1 off Atkins frozen dinners and I decided to try them out. The only one I thought was gaggingly disgusting was the Italian Sausage. The chili was not my favorite but itâs edible. And, surprise, surprise, everything else was pretty darn good!

You can eat the Atkins frozen meals at any stage of your diet?? even in induction. Be careful though, different people respond differently to ingredients and if you have them often you may stall your weight loss. I went through hell week last week with deadlines and I admit to grabbing too many meal bars, frozen dinners, and shakes. Guess what happened?

Yep. Stall.

Anyway, while I was warming up this meal I thought that it might be helpful to also review it so that you knew what I liked and didnât. Keep in mind that my pickiness knows no bounds?? food is what I do for a living.

Atkins Crustless Chicken Pot Pie Copycat Recipe

I recently tried the Crustless Chicken Pot Pie from Atkins. It was so good. But with most frozen food options, there is a huge amount of sodium in them.

I’ve been keeping an eye on my sodium intake also.

I’m okay with occasionally eating a frozen meal that is high in sodium but I try not to make a habit of it.

I fell in love with the Atkins Crustless Chicken Pot Pie.

So much that I decided I was going to make my own Copy Cat version of the Atkins meal so I could control the amount of sodium in my diet and still enjoy the flavors of the Crustless Chicken Pot Pie whenever I craved it.

It is pretty easy to control your sodium intake when you make a recipe at home with real ingredients.

This Crock Pot Crustless Chicken Pot Pie recipe has all the delicious flavors of the frozen one but takes so much better because it is homemade.

How To Thicken The Filling

In traditional recipes, the filling of the pot pie is thickened using flour or cornstarch. Both of which, have carbs.

I like to use xanthan gum. It doesnt require much. Take 1/4 teaspoon of xanthan gum and add it a small bowl, along with 2 tablespoons of the sauce mixture from the skillet. Stir until you remove the clumps and the sauce thickens.

Add the mixture back to the skillet and stir. The sauce will thicken.

Xanthan Gum helps hold ingredients together and is great to use as a thickening agent. You only need about a half a teaspoon for most recipes. Be sure to look for gluten-free xanthan gum as it will not contain wheat.

Xanthan Gum is made by fermentation, it does not itself ferment. Many things are made by fermentation. In the case of Xanthan Gum, sugars are digested by bacteria, and they excrete Xanthan Gum.

Keto Low Carb Chicken Pot Pie Recipe

Yesterday was a dreary day around here. It was rainy and all I wanted for dinner was some kind of comfort food. I had attempted a Keto Chicken Pot Pie a couple of weeks ago, but the crust just didnt turn out as I had hoped. I had spread it out like you would a normal chicken pot pie, but coconut flour is extremely absorbent so it dried out the filling. As a blogger sometimes we create recipes multiple times to get it just right. So, last night was Keto Chicken Pot Pie take two.

Instead of spreading out the crust I carefully dolloped it on top by spoonfuls so that it wouldnt absorb too much of the filling. I only included a half of a cup of mixed veggies so that it would feel like chicken pot pie however, you could substitute with green beans or asparagus to further reduce the carb content. Nevertheless, we think it turned out yummy!

Update: Copycat Atkin’s Crustless Chicken Pot Pie

Atkins Crustless Chicken Pot Pie

A few days ago, I posted requesting help with replicating the Atkin’s frozen chicken pot pie meal, and thanks to help from /u/ms_smooth and /u/MILeft I’ve come up with something that I really liked:

Ingredients

1 lb boneless skinless chicken breasts

3 Tbsp butter, separated

1/2 small yellow onion, minced

1 1/2 C chicken stock

1/2 C cooking sherry

1 bay leaf

1/2 tsp parsley

1/4 tsp each: sage, rosemary, thyme

1 1/2 C heavy whipping cream

1 tsp lemon juice

8 oz cauliflower

8 oz spinach

Directions

Saute chicken in olive oil.

While chicken is cooking, combine stock, sherry and gelatin.

Remove chicken from pan and place in large bowl.

Melt 1 Tbsp butter in pan and add garlic, onion. Cook until onion is translucent.

Add stock/sherry/gelatin mixture and bay leaf to pan and let reduce.

While sauce is reducing, cook frozen veggies according to directions. Add to bowl with chicken.

Whisk in remaining 2 Tbsp butter and the HWC. Allow to reduce again.

Once at desired thickness, remove bay leaf, stir in herbs and finish with squeeze of lemon juice.

Pour sauce over bowl of chicken and veggies and stir.

I enjoyed this as-is, but next time I think I’ll make a few changes:

  • 2 lbs chicken breast instead of 1

  • Cut down on the sherry to 1/4 cup and up the chicken stock to 1 3/4 cup.

  • Cut HWC to 1 cup.

    This meal is described as white meat chicken breast, broccoli, cauliflower, spinach, and julienned carrots in a sherry and herb cream sauce. Believe it or not, that is exactly what you get! The chicken is tender and not rubbery, the vegetables are done beautifully, and the sauce is delicious, once you add a little salt. ?It was a nice portion and did fill me up but I donât eat a lot, either. There is 22 grams of protein, 330 calories, and just 5 grams of net carbs.

    Add a big salad an you should be good to go!

    I took a good look at the ingredients list and there were only three things you would probably not add to this recipe if you were making it at home

    • modified food starch
    • xanthan gum

    It passed my flavor and my nutrition tests with flying colors.

    Is this crustless chicken pot pie better, or even as good as what I make at home? Hell, no. I can do way better than this. The thing is, sometimes I donât have time. This fills the gap, giving me a nutritious, low carb meal that tastes good, without my having to work for it.

    Itâs really all I ask of frozen food.

    The dinners can be pricey â ?I think that I ?paid 3.99 and that was with the coupon. It may be more or less at your store. Give them a try but listen to me. Stay away from that Italian sausage one. It is horrible.

    I’ve mentioned a few times that I have been on a low carb diet for a while now.

Scratch the pie and still gobble up the goodness of your favorite ultimate comfort food.

    Im sure many of you havent tried your favorite chicken pot pie without the pie. Some might balk at the idea of eating it without their beloved crust or biscuits. I get it, I love it like that too. But this one is for those lazy and easy days, my friends. Give it a try, youll like it.

  • Add olive oil to the cast iron skillet along with the chicken cubes and onions.
  • Cook for 3-4 minutes until the chicken is cooked through and no longer pink.
  • Add in the vegetables and saute until soft.
  • Add in the broth, heavy cream, and seasoning. Stir.

    If you have time to cook chicken in the slow cooker, you could use a rotisserie chicken from the grocery store. I personally love finishing off this Keto Chicken Pot Pie in a cast iron skillet. I dont know if its just because Im a southern girl but I think cast iron makes it so much more flavorful. My entire family thought it was delish! My two year old loved her chicken and biscuits and kept asking for more green balls .

    Additional Ideas For Vegetables

    A traditional pot pie is made with mixed vegetables like carrots, peas, and sometimes Ive seen potatoes too. These vegetables are higher in sugar and potatoes have starch. I chose to omit these veggies and substituted using green beans and cauliflower instead. Feel free to use whatever you wish, such as:

    • Broccoli
    • Green Peppers

    How To Make The Low Carb Chicken Pot Pie

    Ive included several pictures below as a step by step tutorial that might be helpful. Be sure to scroll below the pics for the printable version of the recipe.

    I love using my slow cooker or Instant Pot for making the chicken in advance. You can always grab a rotisserie chicken if you prefer. Both are great options for this recipe.

    Since I use such a small amount of mixed vegetables in this recipe, the carb count is minimal when spread out over portions. You could always sub in other lower carb vegetables if you prefer.

    The rich sauce is what brings the most flavor, and this is super easy to make when loaded with butter and spices.

    Forming the crust worked best when I just dropped it onto the top of the other ingredients rather than rolling it out like a more traditional pie crust.

    The shredded cheese in this crust adds great flavor, but also allows for that perfect browning you want on the top of your crust.

    How To Make Crock Pot Crustless Chicken Pot Pie Recipe

    EASY CRUSTLESS CHICKEN POT PIE | What’s Cooking Wednesday?

    Ingredients

    • 2 cups cauliflower florets, chopped finely
    • 2 cups broccoli florets, chopped finely
    • 1 carrot cut into 2 inch long strips
    • ¼ cup cooking sherry
    • 2 tablespoons butter
    • ½ teaspoon black pepper
    • ¼ teaspoon salt
    • a handful of spinach leaves, torn or chopped

    Directions

  • Place the chicken in a 4-quart crock pot and season with seasoned salt and pepper.
  • Add the next 8 ingredients to the crock pot and stir well.
  • Cook on high for 2 hours.
  • In a saucepan on the stove melt the butter. Add the salt and pepper and whisk.
  • Add the flour and whisk well for about 1 minute to allow the butter and flour to brown slightly.
  • Whisk the milk into the pot.
  • On medium-high whisking continually bring to a boil.
  • Boil while whisking until the sauce is the consistency of cooked pudding.
  • Remove the saucepan from the heat.
  • Pour into the crock pot with the other ingredients and stir well.
  • Place a triple layer of paper towels over the crock pot and place the lid over the paper towels.
  • Continue cooking on high for 2 more hours.
  • Right before serving add the spinach and cook for a few minutes to heat and wilt.
