For most Americans, the word pie brings up images of apples encased in pastry and baked, cut into wedges and served for dessert, sometimes with a scoop of ice cream or a bit of whipped cream.

But in Britain and throughout the Commonwealth, dessert pies are more often called tarts, and its meat pies that are legion. There are pork pies baked in pastry and served cold, and pies made with beef in gravy, served warm. There are individual hand pies, like Cornish pasties and diminutive football pies, sold at sporting events. Chicken pies and potpies and game pies, the list is long and varied.

Still another type of pie has no pastry at all, but rather is covered with mashed potatoes. Shepherds pie, for example, is traditionally made with minced lamb and vegetables and baked with a mashed potato topping. If made with beef, however, it is referred to as cottage pie. Filled with seafood, it becomes fish pie. Leek pie is another, though the leeks are likely to be combined with ham or chicken, or both.

So it should follow that an all-vegetable variation might be named gardeners pie, or at least I like to think so.

This meatless pie emerges from the oven fragrant, bubbling and golden. It is guaranteed to please vegetarians and carnivores alike.

Vegan Shepherds Pie Recipe With Beyond Meat

1Make the buerre manié: In a small bowl, stir the butter and flour together until blended and set aside.

2Cook the vegetables: In a large pot, bring the stock and wine to a simmer. Add the carrots, mushrooms, celery, bay leaf, salt, and pepper. Cook at a low boil for 15 minutes. Add the green beans to the pot and cook for 5 minutes longer, or until the vegetables are tender.

3 Assemble the filling: With a slotted spoon, transfer the celery, carrots, green beans, and mushrooms to the baking dish, blotting each spoonful on a folded paper towel to drain excess liquid. Leave the broth in the pan.

Distribute the frozen onions and frozen peas over the vegetables in the baking dish. Remove the bay leaf.

4 Make the sauce. Bring the reserved broth in the pot to a boil over medium heat. Stir in the beurre manié. Simmer the sauce, whisking often, until it has thickened. The beurre manié will look clumpy at first but will quickly smooth out as the butter melts into the sauce.

If you would like a richer sauce, stir in the optional milk or cream. Taste and add more salt and pepper, if you like.

5 Combine the sauce and vegetables: Pour the sauce over the vegetables in the baking dish. Stir gently to coat and set aside while you finish the topping.

6 Heat the oven: Adjust the oven rack to the middle position and preheat the oven to 400°F.

11Bake: Bake for 30 minutes, or until the filling bubbles and the potatoes are golden. Let rest for 10 minutes and serve.

In the last surge of winter, when hearty braised meats simmer away in the kitchen, as they have for months, and the springs bounty still seems weeks away, fresh, seasonal vegetables and time in the garden can seem like a distant memory. But they dont have to be.

Its a point the chef, educator and food activist Darina Allen, who has been called the Julia Child of Ireland, makes in her new cookbook, Grow Cook Nourish: A Kitchen Garden Companion in 500 Recipes. All of Ms. Allens cookbooks are full of detailed culinary, historic and agricultural information, and her latest, an impressively weighty treasure, is no exception.

She is the proprietor, along with her brother the chef Rory OConnell, of Ballymaloe Cookery School, on an organic farm in Shanagarry, County Cork, Ireland. Its centerpiece is a giant greenhouse, and, on the first day of class, students plant a seed. So basic is this lesson that it takes place before students ever set foot in the kitchen. The first recipe they are given is one for compost.

In keeping with that approach, the cookbooks premise is that we can all grow something herbs in pots on the balcony, a tomato plant in a bucket and that doing so will teach us to become better cooks, more in tune with natures ways.

Ingredients for shepherds pie for two: olive oil: Regular olive oil is fine, not extra virgin, since were using it to sauté the beef. ground beef: Use ground lamb to make this authentic shepherds pie, or ground beef for cottage pie. Also, I tested this recipe with plant-based ground meat , and it worked great!

1. In a large skillet over medium-high heat, brown the ground beef with the chopped onion and garlic. 2. Stir in the dried thyme and flavour with salt and pepper. 3. S tir in the flour. Mix well. 4. Add the beef stock, Worcestershire sauce and frozen vegetables.

Instructions. Preheat the oven to 375F . Heat the 6 cups of cooked potatoes and put them in a large mixing bowl. Or, melt the butter and add to cold potatoes. Add the 3 tbsp of vegan butter and a ½ cup of plant milk to the potatoes and whip them until theyre light and fluffy. Add more milk if needed.

Cook for 34 minutes or until spinach is wilted. Season with salt and fresh ground black pepper. Remove Beyond Meat burgers from the package and knead or roll it into a log or large sausage. Set aside. Lightly flour a clean surface. Roll the vegan puffed pastry into a large square roughly 6×6. Cut in half.

This recipe gives a classic comfort food a plant-based makeover. Shepherd’s pie is a hearty meat-and-potatoes casserole, for which a thick layer of creamy mashed potatoes are baked over a filling of ground lamb or beef, carrots, and peas in a tomato-tinged sauce.
