How To Make Bread Like San Luis Obispo Sourdough

San Francisco Sourdough Bread Series: Day 10 – What makes San Francisco Sourdough Bread special?

Hi! I am looking for the technique of how to make a soft chewy crust like San Luis Obispo sourdough. Thin crust. Lower tempurature, than I do my regular sourdoughs? . There is no dairy in their ingedients, so I know thats not they key. Any suggestions? Thanks!

The San Luis Bakery adds soy flour and soy lecithin to its sourdough. That may be a clue.

I’m sure steam in the oven has something to do with the soft crust.

I have the sourdough bag in front of me and there is NO mention of soy lecithin. It says:

Enriched wheat flour riboflavin, folic acid, water cracked wheat, sourdough starter, salt.

I always use some steam in my oven, and it makes beautiful hard crusts.

Here is the ingredient list I found on line for San Luis sourdough:

Ingredients: Enriched bleached flour , water, sourdough starter , salt, soy lecithin, soy flour. Contains: wheat and soy.

Here are the ingredients for their cracked wheat sourdough:

Enriched Flour , Water, Cracked Whole Wheat, Contains 2% or Less of Each of the Following: Salt, Soy Lecithin, Soy Flour.

Both list soy flour and soy lecithin.

Three Cheese Steak And Mushroom Panini

I never met a grilled cheese I didnt like. True story. The same is held true for a melt. Or a panini. They are all essentially different types of grilled cheese sandwiches with different types of filling. But bread and cheese with a buttery golden crust. YES. Oh, yes. Definitely. Sign me up!

Theres not much else I love more than a grilled cheese, or a variety of one. Want to know something else I love? Sauteed mushrooms. Mmmm, yes. They are so tasty, and delicious served atop a delicious steak.

So I decided, why not have it all? Grilled cheese? Check. Sauteed mushrooms? Check. Delicious steak? Check.

Its all here in this tasty and mouthwatering three cheese steak and mushroom panini.

The star of this sandwich, though, is the bread. I chose Sourdough sliced bread because it works so well with the panini press. A little bit of butter and its quickly golden and crispy. Its also strong enough to hold all of the cheese, steak and mushrooms inside without crumbling into a soggy mess. I decided to use the Garlic Sourdough Sliced Bread by San Luis Sourdough® breads because I felt the garlic would add another element to the sandwich. I was not disappointed!

Some people arent fans of sourdough bread but after trying this recipe, sourdough bread gets a whole new taste. The rib eye steak and fresh cut veggies like bell peppers and mushrooms make for one out-of-this-world panini. The salt and the pepper, the cheese and the butter all add flavor.

But the stars of this show will always be the rib eye steak and the sourdough bread.
