This nightshade free gluten free flour mix has become my go-to flour for gluten free baking. It works wonderfully in cakes, muffins, and quick breads.
This nightshade free gluten free flour mix is a blend of flours that I have been working with for many months now. Over the summer, I discovered that potatoes and I are not really very good friends. In fact, they pretty much hate me. Since potato starch was one of the main flours I was using in my flour mixes, I had to make a switch.
However, potato starch is in almost every ready-made gluten free flour mixes on store shelves. Bad news for me but luckily, I have a bit of experience with gluten free flours so I wasnt too upset. I had to make my own blend, but whatevs. No biggie.
Also, in case youre highly confused about why Im posting a potato recipe in a few days, I can eat a few tiny bites before all hell breaks loose. I just can saturate my life with potatoes, unfortunately. And when potato starch is in basically EVERYTHING, it was happening on an almost daily basis. Oops.

Pro tip: Remove the bread from the oven like usual. Place it on a wire rack to cool in the pan for about 10 minutes. Now, heres the cooling tip when you remove it from the pan, dont just sit it down and walk away to finish cooling. Lay the bread on its side to cool for 15 minutes. Then flip it over and cool for another 15 minutes.
This way the bread is balanced on all side for forming that nice tall crown. Remember, gluten free breads need that cool down period. Its like a second bake time. And its crucial for the formation of the loaf.

My Love For Homemade Bread
I have an undeniable love for homemade bread.

Its true that sweet potatoes have plenty of health benefits and are quite nutritious. BUT, would you believe that white potatoes are equally wonderful?!
For starters, ALL potatoes are naturally gluten free and easy to digest .
This is great for those with digestive issues. Also, potatoes are a great workout recovery food because they replenish glycogen storage in the muscles. Especially when paired with a healthy fat, like coconut oil or real butter.

Which Loaf Pan To Use
There are two reasons why its good to consider or reconsider your loaf pan: the first is the size of the pan, and the second is what material the pan is made of. I get this question a lot: What pan did you use to bake that loaf of bread?
Tip: Choose to use a slightly smaller loaf pan when making sandwich-style bread loaves, if you want your loaf to be tall.
While I could just make a bigger recipe to fit a bigger pan, I dont increase the ingredients because I need the bread to cook through to the center without the exterior getting too dark.
For this reason, I dont bake with a traditional 9×5 inch loaf pan. I choose an 8-1/2 by 4-1/2 by 2-3/4 loaf pan. Be sure to use this smaller pan size if you want your loaf to rise higher instead of being lower and broader.
Aluminized steel works well for bakers because aluminum conducts heat really well. And aluminum is perfectly safe to bake with as long as youre not using acidic foods like lemon juice or tomatoes . Heres a good aluminized steel loaf pan.
Ceramic is a good option, too, used for millennia and a pleasure to use. Heres a good ceramic loaf pan.
If you dont want to invest in a new pan, no problem. Just be aware that when this bread is baked in a larger pan, it wont rise as high.
How To Steam Potatoes For Making This Bread
You can steam your potatoes in an instant pot, if you have one, or in a regular pot on the stove. In both methods, you need a simple, heat-safe steamer basket .
Begin by washing and piercing your potatoes. If youre making them in an instant pot, I like making large russet or Yukon gold potatoes. In a regular pot on the stovetop, mini potatoes work best.

How Long To Bake Gluten
This gluten-free bread recipe works best when baked for 60-65 minutes in the oven or on the gluten-free setting in a bread machine.

Remember to cover your gluten-free bread with foil half-way through baking so it doesn’t over-brown.
You might read that a loaf is done baking once it hits around 200 degrees F. Please bake this loaf 60-65 minutes even if your thermometer says otherwise.
How Do You Activate Dry Yeast
I use Bobs Red Mill active dry yeast for this recipe. This bread recipe has been developed to use an active dry yeast, as opposed to instant yeast. You could try using instant yeast in this recipe, but I have not tried it, so experiment at your own risk!
To activate active dry yeast, youll mix it with warm water and some sugar. For this recipe, I used maple syrup. Youll do a quick stir to combine, and then let it sit for 10 to 15 minutes. In that time, you should see it start to bubble, and then it will get nice and foamy on top. If this doesnt happen, retry with new yeast and water. If the yeast doesnt get foamy and bubbly, it means it isnt active and it wont help your bread rise.
Whats the difference between active dry yeast and instant yeast? Active dry yeast must be activated by warm water before use, usually along with some kind of sugar to help feed the yeast and get it nice and bubbly. Instant yeast is mixed directly into the dry ingredients and is activated when the dough is mixed together. I find it easier to troubleshoot with active dry yeast because if your instant yeast doesnt activate, you need to restart the whole recipe.

Can I use different flours in this recipe?
I would not recommend it – the flours have been tested and retested and this combination works best!
Can I substitute the egg whites?
Yes – aquafaba is an acceptable substitute.
How do I store this bread?
The best to store this loaf is by slicing the bread and place pieces of wax paper in between each slice, then freeze the entire loaf. Unfortunately, gluten free bread goes stale much faster than other breads.
My batter is really thin – is this correct?
Yes! Resist the urge to add more flour or starch, the batter is supposed to be thin.

How Long Does This Gluten
One of my favorite things about this recipe is that it can be done in about three and a half hours, start to finish!! That is way quicker than sourdough, so this is a perfect last-minute bread recipe when you want some bread to eat that day! And of that three and a half hours, probably only about 30ish minutes is active time. The rest of it is rising and baking time!

Does This Loaf Need To Rise Before Baking
Nope! This bread is as easy to make as a loaf of banana bread! Theres no yeast in this recipe, no need to wait for it to rise.
The baking soda creates a slight rise while the loaf bakes.
However, if you want to make this loaf extra gentle to digest or want the sour flavor, you can make this loaf into Sourdough Gluten-free Rice Bread. In this case, see the Recipe Notes below, where I walk you through the extra step. In my experience, most people do not need to ferment white rice its already pretty gentle. But some people do! If thats you, enjoy the sourdough version of this recipe.
Grease Your Loaf Pan Effectively To Forestall Sticking

Using Active Dry Yeast Instead Of Instant Yeast
If you only have active dry yeast, youll need to use 25% more of it and dissolve it in some milk from the recipe to prove it before using it in the bread dough. In this recipe, that means youd need 125% of 6 grams of instant yeast, or 7.5 grams. Do your best to approximate that specific amount, since your scale likely wont measure half grams.
How Do I Know When Its Risen Enough
Once you pour the batter into the pan, it will be about ¾ of the way full. Place the pan into a draft-free spot to rise for an hour. After an hour it will have risen to just over the top of the pan. Keep in mind, the moisture content is higher in this bread, so it may not rise as much as other breads like this cinnamon raisin bread machine bread.

Using Starch In Gluten
Starch is a carbohydrate produced by plants to store energy. It’s the most common carbohydrate in our diet, as it’s naturally contained in the foods we eat, including wheat, rice, corn, and potatoes. According to Wikipedia, the word starch derives from an German word, meaning strong or stiff. Starch isn’t water soluble in cold water, but it becomes soluble as water is heated. During cooking, starch cells swell and burst, losing their structure to form a gelatin that holds water and increases the mixture’s viscosity. During the cooling process, starch begins to regain some of its original structure. Later, as baked starches age, it thickens and expel the water it absorbed, a process that leads to breads becoming hard and stale.
In gluten-free baking, processed starches are used to the replace the starch naturally present in wheat flour’s endosperm. Added starches absorb water, bringing lightness, texture and moistness to bread. Though too much starch in a recipe can make your bread gummy. Balancing each recipe’s flour, starch and texture agents is one of the most important parts of gluten-free baking.
Gluten Free Dairy Free Pizza
This gluten-free pizza recipe is already dairy-free. It uses olive oil. You can top this gluten free dairy free pizza crust with your favorite dairy-free cheese to make a gluten free dairy free pizza.
Another options is to leave the cheese off all together and brush on some dairy-free butter and sprinkle it with garlic salt, after its cooked.
