Frozen Peanut Butter Pie

One of my most favorite treats Ive ever made was frozen peanut butter cups. I decided to step it up a notch and make frozen peanut butter pie. Boy am I glad I did!

Ive really come to love the PB2 powdered peanut butter. In this recipe, you cant even tell its not real peanut butter.

To keep the points low for this pie I cut back on the butter in the pie crust. Also, I only put the crust on the bottom of the pie pan. I think this pie is delicious!!!

I find PB2 at the grocery store in the peanut butter isle. You can also buy it through Amazon:

Some other recipes I have made using PB2 powder include PB2 Pancakes, Peanut Butter Fruit Dip, Thai Chicken Wraps and Apple Nachos.

I really like the PB2 because it has a lot less fat than regular peanut butter, but it still tastes good.

I don’t know about you but I LOVE cheesecake and this Weight Watchers Chocolate Peanut Butter Cheesecake Recipe for only 1 point on the WW Blue Plan tastes like the real deal without all of the guilt! I honestly can’t believe each slice is JUST one point and I can’t wait to make this for my family at our next holiday party!

Peanut Butter Chocolate Pie Directions

Make a ½ batch of 2 ingredient dough .

Pro tip: Add in cinnamon and vanilla to hide the Greek yogurt flavor.

Divide dough into 6 pieces and flatten into circles for pie pans. Bake dough at 350*F for 6-10 minutes. The time varies greatly between batches unless you get them all the exact thickness which I didnt do, so check them at 6 minutes.

Mix sugar-free chocolate pudding with 1 1/2 cups unsweetened almond milk. It won’t thicken as much as with traditional milk, so you will want to use less.

Mix PB2 2 tablespoons PB2 and some water .

Add pudding mixture to each pie crust, then top with PB2. Swirl together. Refrigerate for at least an hour. Serve chilled. Add sugar-free whipped topping if youd like!

Makes 6 personal pies, 2 points each
