There is a place in Texas that makes a mean pecan pie. Not just everyday good, but so good that nut haters can be turned to pecan pie fans in a single bite. Dont believe me? Ask Hubby. He has always avoided nuts on anything. Other than peanut butter and jelly sandwiches, he avoided all nut products at all costs. Until the fateful day he tasted his first bite of a Goode Company Brazos Bottom Pecan Pie. He tasted it because I begged him to. For years my home-sick rants always included a longing for one more bite of this amazing pecan pie. There is something about this pie that was special. So special that pecan hatting Hubby should try it.

He gave in and now Ive spent the past few years trying my best to recreate the magic. Im pretty close I now make a mean pecan pie myself. Its not a duplicate, and Im okay with that because its my own pie not theirs. Its damn good. A few years of testing have taught me a few lessons too. Heres my six tips to get a perfect pecan pie:

  • Even though instincts are to load up on the rich dark flavors of brown sugar and molasses in a pecan pie, lighter syrups and sugars actually produce a better pie.
  • Bourbon is good, but overpowering in a sugary dessert like this. Unless all your guests are bourbon fans, serve it on the side not in the pie.
  • Chopped Pecans dont look as nice, but they do cut easier, and make for a better finished texture.

    Very expensive small pie pieces but pretty tasty. I had key lime that had a good “bite” of lime and very smooth. Hubby had bourbon pecan which was also good. Lived the to-go containers. Little wood boxes delicately wrapped with a wooden spoon on top.

    The pies I’ve had have ranged from good to extraordinary. I’m not sure that’s good enough considering the price of a slice. Maybe I just don’t have enough of an appreciation for really expensive homemade pie. I’ve loved some. Others were just fine. The people are friendly. The service is good. But it’s still a $6 slice of pie.

    It was my friends aunts mothers sisters cousins best friends grandmothers.

    Its been around for 100 years. When my friend gave it to me, she told me it was good. She told me that it wasnt too sweet and wasnt too runny and set-up perfectly after you let it cool. But she left off the melt-in-your mouth part. She left off the clean-your-plate-and-scrape-up-the-crumbs-with-your-finger part.

    How To Get Texas Pecan Pie

    • Mix flour and salt, cut in shortening until it looks crumbly. Thereafter, gradually add water and keep tossing it with a fork until balls start forming.
    • In the meantime, you hear the oven up to 350° F.
    • Now roll out the dough to a fit pie plate, ideally it should be a 9 plate. Shift crust the pie plate and trim the crust to 1/2 inside the plate. Sprinkle chopped pecan and set it aside.
    • In a bowl you can mix and beat the corn syrup, eggs, sugar, vanilla, and salt until a paste is ready.
    • Pour the mix over pecans and bake it for 50 minutes. Cool it on a wire rack.

    My son and I visited the spot while in Texas recently. The pecan pie is oh so good!! I had the two meat plate with green beans and pinto beans. The brisket was so tender and the bbq sauce has a sweet taste. I finished my plate! Then it was time for the pie. Yum yum and yum!! It was so rich and sweet. The pecans tasted like candied pecans. I bought a couple pralines and a slice of pie to go wanted to get a whole pie however, I knew that would be too much to try to bring back to Virginia since it comes in a keepsake wooden box.     Farmhouse Pecan Pie Recipe

    • 1cupof white sugar
    • 1/2cupdark Karo syrup
    • 1stick of butter or margarinesoftened
    • 1cuppecan halves
    • Beat eggs until light and fluffy.
    • Add sugar and beat again.
    • Add syrup, butter, pecans, salt and vanilla.
    • Mix ingredients together and pour into pie crust.
    • Cook on 350 for 10 minutes then reduce temperature to 325 for 30 minutes.
    • Temperature reduction is to keep crust from burning.
    • Ovens vary in performance and cook times should be adjusted accordingly .
    • Pie is done when center jiggles like jello when you shake the pie.
    • Make sure the pie cools completely before you cut it.
