Whole Wheat Bread Ingredients

The best recipes use simple ingredients! I love how short and sweet the list is. It makes it perfect for throwing together when you get a craving for fresh bread! If youre looking for exact measurements, they can all be found in the recipe card below.

  • Water: Used to activate yeast and add moisture to wheat bread mixture.
  • Milk: Milk enriches your bread and gives it that soft, tender quality.
  • Honey: For the perfect sweetness! You can swap this out for molasses or maple syrup, as well.
  • Active Dry Yeast: This needs to be activated in a water milk mixture before use.
  • Unsalted Butter: The fat content in butter helps to make your bread nice and soft.
  • Salt: A must for flavor! Skip the salt, and youll be left with bread that tastes like cardboard.
  • Whole Wheat Flour: The MVP of this recipe! Whole wheat flour is loaded with vitamins and fiber. It tastes great, too!

Old Family Recipe Now Lactose Free

THM Easy Sprouted Whole Grain Bread (in a Bread Machine!)

This banana bread is based on an old family favorite recipe. I had to adapt it a few years ago after cutting back on white flour and dairy. I wanted to keep that same great flavor that my family has enjoyed for so long, despite making some pretty dramatic substitutions. Using whole wheat flour, for example, with its strong and often overpowering flavor. There are some extremely picky eaters in our clan, so being able to taste the whole wheat flavor over the sweet banana was not an option for us. It definitely took a couple of adjustments to get that right.

Swapping out the butter for ghee, on the other hand, was incredibly easy as it provided even more flavor. Despite having a few more calories, it has become my new go-to for baking. The milk can easily be substituted for any version of lactose-free milk, but soy and almond milk have worked the best for me. Now my family enjoys this recipe just as much as the old one. I hope you and yours can enjoy this lactose-free whole wheat version of our family’s favorite banana bread!

How To Serve 100% Whole Wheat Bread

Besides just eating it warm from the oven, this homemade bread can be enjoyed in so many ways.

Its perfect for sandwiches, because of its soft, pillow-y texture.

And it toasts beautifully! I love to slather it with butter and give it a sprinkling of cinnamon sugar, or a swipe of jam. That plus a cup of hot, milky tea and Im in heaven.

You could also use it as a base for your avocado toast!

If you find your leftovers are starting to get a bit dry, use them for French toast or bread pudding, or whiz them up in the food processor to make bread crumbs.

100% whole wheat bread recipe with step by step photos and video. This foolproof recipe gives you a really good soft wheat bread with the ingredients you have at home.

This is a soft wholemeal bread with a light crumb. The recipe does not have the typical denseness and heaviness which is found in 100% whole wheat bread. There is a special & secret ingredient in the recipe that helps in the gluten development.

I embarked upon this ingredient one day when I was making naan. Typically the Indian Naan and Bhatura have one ingredient that helps in the leavening process and gives a soft texture, even when the naans are made without yeast. I thought why not try using this ingredient in a bread. And it worked like a charm.

Later while studying more about bread baking, I came to know that an acidic medium in limits, helps in gluten development. So no wonder that this ingredient worked. So before you ask me what is the secret Let me tell you its Curd or yogurt.

Well the bread has a slight taste of yogurt, but really it does not matter. Later I experimented with another two acidic ingredients Vinegar and lemon juice and these too worked very well. With vinegar the bread had a slight taste of vinegar, but we had no issues.

As a vegetarian, you can use dairy yogurt and as a vegan you can use cashew yogurt or vinegar or lemon juice.

How To Make Soft And Fluffy Whole Grain Bread

Organic Honey Whole Grain Bread Recipe
  • Use part all purpose flour and part whole wheat flour. Whole wheat flour has a lower gluten density than white flour which means bread made with all whole wheat flour doesnt rise as quickly or as high, and it can tend to be more dense. Using part all purpose flour helps the bread rise well and gives it a great texture.
  • Add some vital wheat gluten . Adding 1 tablespoon for about every 3 cups of whole wheat flour in the recipe will help the bread rise beautifully and make it nice and fluffy.
  • Soak your whole grains first. Soaking your whole grain mixture before you add it is a great way to soften the grains.
  • Use honey instead of sugar. Mixing in a few tablespoons of honey with the yeast and water can also help keep your whole grain bread nice and soft.
  • Replace the water with milk. Using milk instead of water makes the dough more tender and the crumb softer.
  • Let the dough rest for 15-20 minutes or so before kneading. This will give the gluten time to develop a bit and help with the rise.

    Note About The Egg Temperature

You’ll notice that this recipe calls for room-temperature eggs. It can be all too easy to skip this step, but it really makes a difference in the finished product. At room temperature, egg yolks break more easily, so they mix more evenly with egg whites and other ingredients. They also whip up to a greater volume, providing a lighter, fluffier texture to the bread. This can be a huge help when using whole wheat flour, which tends to produce dense loaves because it has less gluten than all-purpose flour.

Try to take the eggs out of the refrigerator for at least 30 minutes or up to two hours before baking. Just be sure they don’t sit out for longer than two hours. Or, if you want a quicker option, you can also choose to set them in warm water for 10 to 15 minutes while you prep the other ingredients. It will be worth it, I promise!

Tips For Making The Best Bread

The EASIEST Whole Grain Seeded Bread | Minimalist Baker Recipes

It can be tricky to make that perfect loaf of wheat bread. Here are a few of my favorite tips to get it on your first go!

    • Create a Proofing Drawer: If youre having trouble getting the dough to rise, or if you want it to rise faster, preheat the oven to 170°. Right before putting the covered dough in the oven to rise, turn it off and use a clean spray bottle to spray the bottom and sides of the oven well with water. This will create a warm, moist environment to help the dough rise. This also helps if your kitchen tends to be on the cooler side or you live in a very dry climate.
    • Using Buttermilk: If you want your bread to have a tangier flavor, you can swap out milk for buttermilk. The acid in buttermilk also gives your bread a more tender crumb. If you dont have any on hand, its super easy to make at home. Find my buttermilk recipe here!
    • Dont Overmix: Only mix and work your dough as needed. If you knead your dough too much, gluten may develop- leaving your loaf hard and rubbery. Dont let your hard work go to waste!
    • Adding Texture: I love adding nuts to my wheat bread. It gives it a boost of flavor and texture! Pistachios, pecans, walnuts, hazelnuts, you name it! Fold them gently into your dough for a pop of nutty goodness.
    • Use For: Wheat bread works great for avocado toast, dipping in soup, and sandwiches! Youre going to love how homemade bread upgrades all of your favorite recipes.

    Can I Use All

I tested this recipe with whole wheat flour, white whole wheat flour, all-purpose flour and bread flour. The homemade bread was delicious when made with each of these flours.

If you use white flour, either all-purpose or bread flour, you will need to use a little more flour to get a dough that is only slightly sticky. In my tests of this recipe, 3 1/2 cups was the perfect amount for all-purpose flour and bread flour, while 3 to 3 1/4 cups was the perfect amount for whole wheat flour. I recommend starting with 3 cups of whichever flour you choose, and then adding more flour, a little at a time, as needed.
