Set your oven to 350 degrees Fahrenheit and let it heat up. Line the pan with some parchment paper, spray it with a bit of oil and set aside.


In a large bowl, stir together the pumpkin, egg whites, maple syrup, and vanilla extract. In a medium bowl, stir together the truvia, protein powder, and pumpkin pie spice. Add in the quick oats and add the wet ingredients to the dry. Mix it all together until well combined.
