Soft apples are a must for us in apple pie. Because of this, we like to soften our apples first in a saucepan on the stovetop. Combine the apples, flour , sugar, cinnamon and lemon juice. Cook these over medium low heat until the apples start to soften which will be about 10-15 minutes. Stir the apples often so that the sugar doesnt burn on the bottom of the pan. This will create a nice, syrupy apple mixture that you can pour into your pie shell.

*A note on the sugar. You can try lowering the sugar if youd like. Weve gone down to 1/2 a cup of sugar at different times. Its really a matter of tasteand even what apples you choose. If your apples are more tart, then you might want the full 3/4 cup sugar. If they are sweeter apples, try lowering the sugar.*

This isn’t a very complicated task. Essentially, apples are peeled and sliced, then mixed together with a few ingredients on the stove. They’re cooked until softened, and then a cornstarch slurry is added to thicken them up! Overall you’ll find this recipe very simple, but there are a few tricks you should follow to ensure you get the best flavor in your filling.

The first is that the recipe calls to macerate the apples for about 15 minutes. This helps bring out some of the natural juices in the apples, so the apples are a bit more firm.

Secondly, there is apple cider added into the mixture. This not only adds a boost of apple flavor to the filling, but it also adds in extra sauce around the apples. I just love that apple sauce that surrounds the apple slices, and this ensures it’s plentiful.

And finally, the cornstarch is added later in the cooking process. I prefer to cook the apples to the correct consistency first, and then add the cornstarch to thicken it up. If the cornstarch is added in at the beginning, it can become a little thick or gloopy and possibly even burn, so I like to add it in right at the end, once the apples have fully cooked.

At the very end of the cooking process, some butter and vanilla are folded into the hot mixture. The butter adds a delicious richness, and the vanilla adds a depth of flavor that complements the apples very nicely.

With a crisp, flaky crust and thick, cider-flavored apple filling, this is my idea of the perfect apple pie.

  • 2-3/4 cupsall-purpose flour, spooned into measuring cup and leveled with a knife
  • 3 tablespoons sugar
  • 14 tablespoonscold unsalted butter, sliced into 1-inch pieces
  • ¼ cupcold vegetable shortening, in 4 pieces
  • 7 tablespoonsice cold water

For the Filling

  • 3½ poundsbaking apples , peeled, cored, sliced ¼-inch thick
  • 1 teaspoonlemon zest and 1 tablespoon lemon juice, from 1 lemon
  • ½ cupgranulated sugar
  • 6 tablespoonspacked dark brown sugar
  • Heaping ¼ teaspoonsalt
  • A beaten egg, cream, or milk, for brushing over crust
  • 2 tablespoonsgranulated sugar, for topping the pie

How To Make Apple Pie

Begin by making the crust. Its easiest to use a food processor but you can also make it by hand if need be. Combine the flour, sugar, salt and baking powder in the bowl of a food processor fitted with the metal blade. Pulse a few times to combine.

Add the pieces of butter and shortening.

Pulse until you have coarse crumbs with lots of pea and chickpea-size clumps of butter and shortening within.

Add the water and pulse until the mixture is evenly moistened and very crumbly.

Dump the crumbly dough out onto a clean work surface and divide into two piles, with one pile about 15% bigger than the other.

Make two balls of dough and pat each one into a 5-inch disc. Wrap the discs in plastic and refrigerate for at least 45 minutes.

Take the larger disc of dough out of the refrigerator. Dust your work surface lightly with flour and place the dough on top sprinkle a little flour more over the dough. Use your hands to quickly knead the dough into a soft and malleable disc .

Roll the dough, adding more flour as necessary under and on top of the dough so it doesnt stick, into a 13-inch circle.

Remove the pie crust from the refrigerator and cover with a piece of parchment paper. Fill the crust with dried beans or pie weights.

Bake for 20 minutes, then remove the parchment paper and beans/pie weights and tent the edges with a few strips of aluminum foil. Bake for another 15 to 20 minutes, until the dough is dry and golden. Increase the oven temperature to 425°F.

  • Toss sliced apples with lemon juice in a large bowl. Then sprinkle in brown sugar, salt, cinnamon, ginger, cardamom, and nutmeg. Toss to combine. Let sit for at least a half hour so the apples can release their juices.
  • Roll out a pie crust and fit to a 9-inch pie pan. Toss the apple slices with the cornstarch or tapioca starch. Pile the apples into the bottom crust of the pie plate.
