I love my Dutch oven.I was a bit confused when i bought this two years before. But so far,I am so impressed by its performance and efficiency.

My main objective about having a Dutch oven was to make beautiful crusty no knead bread .This Dutch oven has enough height for the bread to rise and the lid works in such a way to create high steam inside the pot to make crusty breads. The knob on the lid is oven safe.

What To Make With The Stale Bread

If you forget about the bread and leave it out at room temperature for more than a couple days, it may go stale. I hardly ever have this happen, as my family and I inhale the entire loaf in one sitting usually. But there are a few things you can do with the leftover stale bread!

Parchment Paper: Parchment Stuck Don’t Have Parchment Paper

If your parchment paper stuck its from using an inferior brand. Reynolds brand will never stick. If you can not get Reynolds brand you need something to lift the dough and place it in the Dutch oven. You can try using a well floured kitchen towel to transfer the dough, letting the dough roll off the towel into the hot pot. Do not leave the towel in the pot, only use it as a means of lifting the dough. Do NOT use wax paper in a hot oven. It will melt onto the bread and it will be ruined. I dont use a towel because my dough always sticks to the towel. Parchment paper makes the job super easy but inferior papers can stick. I always use Reynolds brand it never sticks.

How To Make The Crusty No

All you need is hot water, Salt, Flour and Yeast then mix everything together dont knead just mix till the dough absorbs all the water. Thats all for the dough. Cover up the dough and leave to rest for two hours get yourself a good movie to watch at this time. For me, being a busy mom. What I do is either clean up, run a quick grocery trip or do some laundry.

After two hours, open up the dough, at this time you will have a kind of jiggly dough. Sprinkle a bit of flour on the surface of the dough, just for easier handling. Then, punch it down to remove the trapped air.

The dough is a very soft one but try to gather the dough together in a ball, lift it from the bowl, and transfer it to parchment paper laid on a flat table surface. Cover it up with a kitchen towel and leave it to rise again for another 1 hour.

Meanwhile, preheat your oven to 450°F and place the Dutch Pot inside the Oven. This will help to start cooking the dough as soon as it touches the pot.

After one hour, you can now score the bread with a sharp knife or a blade. However, Scoring is entirely optional. The bread will still rise and tear open by itself in the Oven. But I like to score the Bread just for aesthetics!

At this point, you can now bring out the Dutch Pot from the Oven and carefully transfer the dough inside the pot Be careful its very hot! Cover up the pot immediately and take it back to the preheated oven.

Why Do We Need To Score The Bread

Easy Homemade Bread | Rustic Dutch Oven Bread | No Knead Bread

The purpose of scoring is primarly to control the direction in which the bread will expand during oven spring

By scoring a bread,we are intentionally creating a weak spot on the surface of the loaf preventing the loaf from bursting at any other weak spots created during shaping.

Thus scoring the bread dough will help the bread to expand beautifully and helps the bread to not to crack open at undesirable spots.

I actually love the rustic look of those unscored breads too

Why Dutch Oven Breads Have That Crispy Crackly Crust

Dutch oven breads have crispy crackly crust because of the steam entrapped with in the high heat cast iron pot.

The preferred trick to getting the perfect crust at home is to bake your bread in a Dutch oven.

A closed Dutch oven will trap the water that evaporates from the dough and convert it to steam under the lid.

The steam keeps the crust soft longer, so it can continue to expand during the early stages of baking. The result is a lofty loaf that looks like it came from the bakery down the street!

Steam also helps produce a really crisp crust. When the surface of the dough reaches 180°F, the starches in the slowly forming crust start absorbing moisture. They eventually become so saturated that they burst and liquefy.

As the bread continues to cook, this starch gel turns into a brittle and glossy shell. The more moisture there is on the surface of the dough, the more abundant the starch gel, and the crisper and more crackly the eventual crust.

    Is It Artisan Bread

Well, that all depends are you an artist? All kidding aside, there is no true definition of an artisan bread. Though in general, this term refers to the simplicity of the ingredients going into the bread as well as the bakers experience in making rustic loaves. And artisan loaf can be any shape, size, use any type of flour, fermentation like in sourdough, etc. The one factor that all can agree on is that an artisan loaf is best enjoyed fresh and without preservatives.

Whats Yeast Got To Do With It

  • To keep your yeast fresh and longer lasting, unopened yeast packages or jars should be stored in a cool or dry place such as your cupboard.
  • However, you can also store your yeast in the fridge or freezer. If you do store it in the freezer and need to use yeast for your baking, make sure you take out the amount you need and let it sit at room temperature for at least half hour before using.

Make this famous Irish Soda Bread instead, or this incredible No Yeast Sandwich bread based on the traditional Australian Damper!

    • Yeast my base recipe uses Rapid Rise or Instant Yeast which does not need to be dissolved in water. But it works just as well with normal yeast you just need to change the order of the steps and dissolve the yeast in water first. The bread comes out exactly the same!

    • Best flour for homemade bread use bread flour if you can. Bread flour has more protein in it than normal flour which means more gluten, and this makes the dough more elastic and yields a more fluffy yet chewy texture inside the bread, as well as creating the big holes you see in the photos, like sourdough bread. However, this bread is still spectacular made with normal flour too!

So What Is It With Hot Water

Dutch oven recipes require long proofing of up to 8 to 48 hours but this method is a fast bread recipe that is why hot water is required to activate a quick rise in the dough. You dont need to boil the water if you use the hot water from your tap. The recommended water temperature should be about 125-130° F. That is what I always use whenever I make this recipe. Dont worry the yeast will be okay as long as the recipe is followed.

If youd like to use the original overnight method, simply switch to warm water and let the dough rest in a warm place overnight for 8 to 24 hours

Often time, when I bake Dutch Oven bread especially when its still fresh. I just tear off a chunk and eat it as is. However, you can dip this bread in Olive Oil, Sauce and its also a great accompaniment to a hot bowl of soup.

When the dough is fully rested, remove the Dutch oven from the oven and either transfer the dough alone directly to the Dutch oven, or place it in the Dutch oven with the parchment paper underneath. If the bottom of your Dutch oven isnt enamel-coated, its best to use the parchment paper. Mine is enamel-coated, but I find it easier to keep the round shape of the dough if I just place it in the Dutch oven with the parchment paper. Whatever works fer ya!

Cover the Dutch oven and return it to the oven . Bake the dough 45 minutes covered, then another 10 to 15 minutes uncovered until the top of the bread is a lovely golden brown. Can you believe it? YOU BAKED THAT. And you barely had to do anything.

Let the bread cool for just a few minutes basically until you can handle it without burning your fingerprints off and then slice away. Suggestions on how to eat it: As grilled cheese, dipped in soup, as garlic bread, spread with peanut butter , cut up into croutons, ripped apart and shoved right into face, etc. etc. I have done/will do all of the above.
