While you are making your mashed potatoes, you can co ahead and pour your drained canned corn on top of your cooked ground beef.
Layer on your mashed potatoes on top of the corn. Spread it on until it is a nice even layer!
Top generously with shredded cheese! Yes, load it up, I promise I will not judge you.
Now all you have to do it pop your pan into the oven. Cook uncovered for 25-30 minutes until the cheese is all melted and everything is hot throughout.

First, what is shepherds pie? Its a meat pie usually made with a topping of mashed potatoes. Sometimes you can also have a mashed potato crust on the bottom, though I find that more difficult to clean up. Shepherds pie comes from the British Isles but has been adopted worldwide, particularly because of the Irish diaspora.
Sometimes called a cottage pie, shepherds pie always contains meat, which is usually ground beef, but can sometimes be lamb or mutton. The other shepherds pie ingredients are hearty and nutritious vegetables like carrots, celery, turnips, parsnips, onions, peas, and sometimes cornor any combination thereof. Shepherds pie with beef is cooked in a kind of gravy. Shepherds pie gravy recipes vary wildly, but I like mine with a tomato base since it blends the best with the vegetables.

Shepherd’s pie is a dish that I didn’t know about until after I met my husband. Of course, his definition of it was “ground beef with corn and mashed potatoes on top.” So that’s what I did for the first few years of our marriage. Nothing else added. He ate it happily though.
Turns out this was one of the frugal dinners he grew up eating and it helped him relive a moment of nostalgia each time I made it. But, I knew there had to be more than meat, corn, and potatoes and as time went by I continued to modify the recipe.
While I normally use real mashed potatoes, I can’t deny how big of a time saver instant mashed potatoes can be! Even more fun is using the flavored instant potato packets for even more variety.

How Do I Thicken Shepherds Pie
Shepherds Pie is notorious for falling apart easily once you cut into it. However, theres an easy way to thicken it.
Simply mix one heaping tablespoon of cornstarch with two tablespoons of cold water. Stir this mixture into the ground beef and vegetable mixture. It will slowly thicken the sauce as you stir.
You may need to add a little more cornstarch depending on the amount of liquid in your pan.
