  • CONVENTIONAL OVEN: 400°F – 410°F
  • CONVECTION OVEN: 360°F – 365°F
  • RACK OVEN: 380°F – 390°F
  • Place unboxed, unwrapped frozen pies on a flat baking sheet. Do not use pan liners.
  • Bake pies for 55-65 minutes.
  • Remove pies from oven and cool to room temperature, approximately 4 hours.
  • Refrigerate after cooled.

    Caring And Storage Of Raspberries

    Raspberries should be stored in a single layer in a moisture proof container. Do not rinse berries until they are ready to be eaten. Fresh raspberries will store in the refrigerator for about 3 days.

    Raspberries may be frozen with great results. To freeze, rinse berries lightly and place on paper towel to soak up extra moisture. Arrange raspberries on baking sheet in single layer and place in freezer until frozen solid. Once frozen, remove berries and place in heavy duty freezer bag or use vacuum sealer. Frozen berries can be stored up to a year.

    Black Raspberry Pie

    This recipe calls for a classic double pastry crust. I like to use a recipe with a healthy amount of sugar in the dough. My favorites are Ina Gartens pie crust and the sweet pie crust recipe in this cookbook. But any classic recipe with flour, butter or shortening, salt, and sugar will work well. If you arent comfortable with making your own pie crust, a store bought one is fine.

    Either a lattice top or plain double crust will work. Make sure you cut adequate slits in the top crust because you want all the steam out of the filling while the pie bakes.

    THere are some berry pie recipes that use a graham cracker crust, but I dont think it would hold up well with the juicy berries. Stick with a pastry crust.
