I love how easy it is to make gluten free whoopie pies! While its a unique handheld treat, it couldnt be easier to make:

  • Prep the oven. Preheat the oven to 350°F. Line two large baking sheets with parchment paper.
  • Mix the batter. In a medium bowl, whisk together the flour, tapioca flour, cocoa powder, baking soda, and salt. Set aside. In a separate bowl, beat together the ghee and coconut sugar. Add the egg and beat until combined. Pour in the maple syrup, vanilla, and coconut milk and mix until combined. Add the dry ingredients to the mixing bowl and mix on low until the batter is smooth and thick.
  • Bake the cookies. Using a spring-loaded 2 tablespoon cookie scoop, scoop out the batter and drop onto the prepared baking sheet, spacing the cookies about two inches apart. Bake the cookies for 10-12 minutes. Transfer the cookies to a wire rack to cool.
  • Make the filling. In a large pourable measuring cup, combine the coconut milk and powdered sugar and mix until smooth. Using a stand mixer or hand mixer fitted with the paddle attachment, beat the palm shortening for 1-2 minutes until smooth. Add vanilla extract and mix until incorporated. Slowly add the milk and powdered sugar mixture and continue to whip until the filling becomes light and fluffy and no clumps remain, about 2-3 minutes.
  • How To Make Gluten Free Chocolate Whoopie Cookie Dough

The dough for the Gluten Free Chocolate Whoopie Pies is very straightforward. Chilling the dough for at least 2hrs is mandatory. Skipping chilling will result in very thin and spread-out cookies.

This dough can be mixed by hand or a stand mixer.

    • In a medium-sized bowl sift together gluten free flour, cornstarch, cocoa powder, baking soda, baking powder, espresso powder and salt. Sifting the dry ingredients together ensures the leaving agents are evenly distributed in the dry ingredients.
    • In the bowl of your stand mixer, fitted with the paddle attachment, mix together both sugars, vanilla, and oil. This mixture wont turn light and fluffy you just want to mix it for 1-2 minutes until fully incoperated.
    • Add in the egg and room temperature milk, and mix to combine. Turn off the mixer and scrape down the sides of your mixing bowl. Make sure to get the bottom of the bowl too.
    • With the mixer running on low, add the dry ingredients to the wet ingredients and mix until combined.
    • Mix in the warm water. You batter should be smooth and quiet wet almonst like a cake batter. Turn off the mixer and with a flexible spatula give the gluten free chocolate whoopie pie dough a good stir, making sure everything is well incorperated.

The dough will look kinda greasy and almost too thin to scoop. Transfer the dough to an airtight container and refrigerate for at least 2hrs .

Scoop up the cookie cake batter using a cookie scoop, or the equivalent of 2 tablespoons, and drop onto the prepared baking sheets spacing each cookie 2 inches apart. By using the cookie scoop, the finished product will be more uniform, Beahm said. Bake two trays at a time, switching the position of the sheets halfway through baking until the cakes spring back when touched or a toothpick inserted into the center comes out clean, which takes approximately eight minutes. Let the cookies cool on the baking sheets for five minutes, then transfer to a wire rack to cool completely before filling.

Below I share the whoopie pie filling reminiscent of the traditional Amish treat. I love this soft, airy filling so much it is also featured in two other old school dessert recipes Ding Dong Cake and Oatmeal Creme Pie Cake.

If you prefer a buttercream filling, replace the shortening in the filling recipe with butter or follow this fluffy buttercream recipe. For double chocolate whoopie pies use fluffy chocolate buttercream.

  • In a heatproof medium-sized bowl whisk together egg white with ½ cup of powdered sugar. Place the bowl over a pot of barely simmering water. Whisk the egg white and powdered sugar continually about 3 minutes, until egg whites are hot to touch or 140°F. Remove from heat and cool slightly.
  • Add the vanilla extract and remaining powdered sugar to mixing bowl. Beat until smooth.
  • If using a stand mixer, switch to a paddle attachment. Add the shortening and mix on high speed for 4 minutes, until very light and fluffy.
  • Lay half the cooled cookies, with bottom side up, on the baking sheets. Use the medium cookie scoop to portion out the filling on top of the cookies. Top with another cookie and push down slightly so the filling spreads to edges.

    What Are Whoopie Pies

You may be wondering, what are whoopie pies? I wondered that myself when I made these carrot cake whoopie pies. Besides being delicious cookie sandwiches that are irresistibly tempting, what else are they?

To start with, whoopie pies can go by a variety of names, including black moons, gobs, or a BFO . It is also debated on whether or not they are a cookie, cake, pie, or sandwich. Either way, a whoopie pie has historically been documented as consisting of two round shapes made from a cake like batter with a creamy filling in-between.

Whoopie pies actually have a somewhat pioneerish beginning. They are thought to have originated in Amish communities where Amish families would pass down cherished recipes from generation to generation. Amish wives would make the sandwiches out of leftover cake batter and leftover cake frosting. Then, when the Amish husbands would find them in their lunch boxes, they would exclaim Whoopie!.

While many states lay claim to being the originators of the whoopie pie, Maine has gone the farthest with its claims.

    • Whoopie pies are Maines official state treat.
    • Maine celebrates Whoopie Pie Day and has an annual whoopie pie festival.
    • It is also home to the largest whoopie pie, which weighed over 1,000 pounds!

    Wicked Beginnings

Make a living baking whoopie pies?! It sounds crazy now, because no one else has done such a thing. But at the time, over twenty one years ago, I couldnt imagine doing anything else. Yet with two young kids, I certainly needed to earn an income. I loved to bake My whoopie pies were legendary within my circle of friends and family: everyone called them WICKED. It seemed to be my calling: baking and selling Wicked Whoopie Pies from my home in Gardiner, Maine.

    Makin Whoopies

At the sluggish pace of one dozen whoopie pies per hour, initial production was slow-going. In one week alone, I burned out the motors of four mixers. I had no business experience, but I was determined. My goal was and still is to share my Wicked Whoopies with everyone on the Planet!

    Making Smiles

Four times a week, with baby Isabella under my arm and a basket of Whoopies in the other, I set off to make deliveries. Customers knew my schedule and often met me at the door, eagerly awaiting a freshly baked Wicked Whoopie Pie. Watching people respond to the first bite is awesome. Making people smile is still the most rewarding aspect of the business. I like to say there are at least 10 smiles in each Wicked Whoopie Pie.

How To Bake Soft Cake Like Chocolate Cookies

    • When ready to bake, preheat the oven to 350F. Line sheet trays with parchment paper.
    • With a medium-sized cookie scoop, portion out the cookies . Dont be surprised if the dough looks like blobs. It does spread when baking but I was able to fit 10 cookies on my sheet trays. This recipe should give you around 22-24 cookies.
    • If your scooped cookies look very rough, you can lightly moisten your hands and smooth out the top of the cookies.
    • Bake the cookies, one tray at a time, at 350F for 10-11 minutes. The cookies are done when the edges are set and the middle still looks a bit underbaked.
    • Remove the cookies from the oven and allow them to cool completely. If you want to move them to a cooling rack after 5-10 minutes I recommend using an offset knife or butter knife to remove them from the parchment. The cookies can stick to the parchment paper.
