What’s The Best Flour For Gluten Free Sandwich Bread

Homemade Gluten Free Bread Recipe Made EASY! (in Bread Machine)

My top recommendation for gluten free baking is Better Batter. It’s what I used in this recipe and what I use in most of my creations.

You can try a different flour blend if you’d like, but I can’t promise results.

And, trying to make your own gluten free flour blend by adding brown rice flour or coconut flour to differing amounts of potato starch or tapioca starch is a recipe for disaster unless you really know what you’re doing.

Remember, every potential ingredient for gluten free flour blends behave differently and have differing properties.

Gluten Free Bread Machine Recipe

This gluten free recipe was created and then reworked over the years. While it isnt exactly like bread that contains gluten, its a great substitute with a good texture and taste to make up for having to eliminate regular bread. One reason why this recipe works so well is the flour blend. Flour is not always wheat-based and this recipe uses a blend containing white rice flour, tapioca flour, and potato starch.

Because this is a gluten free bread machine recipe, it needs to be made according to the specific instructions for your bread machine. Its also much different than a standard recipe you would bake in a regular oven Simply transferring the oven recipe to the bread machine wont work. T To make gluten free bread, you need a machine with a gluten free setting.

Which Bread Maker To Choose

The bread machine I use is the CBK-110C by Cuisinart. Its small enough to fit into one of my kitchen cupboards , but bakes up a loaf thats large enough for our familys needs. Its moderately priced and well worth it!

The CBK-110C comes with a gluten free bread program, which I use every single time.

What Breadmaker Do You Use To Make Your Gluten

As I said earlier, Ive worked with Panasonic to promote their breadmakers for years, but this is not a sponsored post.

However, that does mean that of course, I use a Panasonic breadmaker! More specifically, the Panasonic 2540 breadmaker.

Before they kindly gifted me with the fancier, newer model , I used the Panasonic 2522 breadmaker.

I can vouch for both being perfect for this recipe because Ive tested in both plus, they both have a gluten-free setting, which I use for this recipe.

Pro Tip For Measuring Flour

The best way to measure gluten-free flour is the spoon & level method. Using a spoon, scoop the flour into the measuring cup. After youve spooned the flour into the measuring cup, use the back of a knife to level off the top of the measuring cup. Friends, please do not scoop the flour out of the bag with your measuring cup.

What Are The Main Features Of A Bread Maker

Using a bread maker means all the hard work is done for you. But there are a few differences to conventional baking. Bread makers have a non-stick pan with a handle to lift it out of the machine. The usual shape produces a shorter, wider loaf than shop-bought.

1. Loaf size

Most machines will make three sizes of loaf, with compact models often offering two. These are usually labelled as a general size, eg medium, large or extra large. Loaves may also be measured in pounds, eg 1lb, 1.5lb and 2lb, or in grams, ie 680g, 900g, 1kg.

2. Dough paddle

One thing that bread maker-baked loaves have that homemade bread doesnt is a hole in the bottom. This is down to how the bread is produced the dough is mixed and kneaded by a paddle that stays in place. Some paddles can be easily removed while others have a tendency to stick. Although, there may also be a tool to help you free it from the loaf.

Alternatively, look for a model with a paddle that collapses before baking. Bread makers can be bulky, so balance the size of the machine with how much you plan to bake.

Larger machines will make bigger loaves but require more space. Its a good idea to make your bread maker a permanent worktop resident. This is simply because storing it away means youre less likely to use it regularly.

How To Store Fresh Baked Bread

This fresh-baked bread stays soft for 2-3 days after it’s been baked. You’ll want to let it cool to room temperature before you slice it. We like to store it whole, in a sealed container, or wrap it tightly with cling wrap, and slice it as we need it.

After a day or two, we will freeze any bread that’s left.

The Bread Maker Taste Test

Gluten Free Vegan Bread Machine Loaf

Finally, what we have been waiting for 3.5 hours: the taste test! We baked each bread almost simultaneously, which allowed us to make a side-by-side test of the bread after leaving the oven and after a few hours of rest.

Taste: we used identical recipes to determine whether the above criteria and price made any difference. The texture, crunchiness and balance of flavors complement the factors in this category.

Overall Look: visual appeal always plays a role in taste and the same will be true in our tasting test. The appearance of a bread always indicates the success of a baking. Size also plays a role.

Crumbliness: otherwise known as hole structure, it is a useful visual indication of the process a bread has undergone. Larger and more varied holes allow the dough to be well knotted and aerated, and thus better inflated for a delicate bread.

Crust: the color of the crust can be adjusted on our finalists models, allowing you to choose between light, medium or dark roast. We selected the medium for testing and examined each one to verify color uniformity and relative darkness.

Paddle print in the bread: one of the main complaints of the use of bread machines is the unsightly impression left by the paddles of the bread machine. It also compresses the bottom areas near the pallets, making them slightly denser than usual. We noticed that some machines made more than one mark while others always slipped clean.

What If My Bread Machine Does Not Have A Gluten

If your bread machine does not have a gluten-free setting, you will want the setting that only has one mixing cycle . Gluten-free bread does not need a second rise.

If you dont have a feature with only one mixing cycle, try to see if you can override the pre-programmed settings for a 20-minute mix cycle, 1-hour rise cycle, and 1 hour-bake cycle.

You can also check out your bread machines manufacturer website to see if they have a gluten-free setting suggestion for their bread machine. Some bread machine makers have instructions for a gluten-free bread setting for their older models.

The Path To My Gluten Free Bread Maker Recipe

I am truly proud of this Gluten Free Bread Maker Recipe. Why? Because it makes the best gluten free sandwich I have EVER eaten. It also makes incredible toast. And it is the loaf that has seriously pushed the boundaries of gluten free breadmaking at GFHQ to a whole new level of simplicity and most importantly, to normality. THIS bread looks, tastes and feels like REAL bread. And it also stays fresh and soft for several days. Does your usual gluten free loaf do all that?

I have worked on two brown bread machine recipes to support my readers. The oat-based version and a version free from oats and corn for those who are intolerant. Both are amazing. And the fact that they can be made in a bread maker makes them even better!

Can I Make Your Gluten

How To Bake Gluten-Free Bread in a Breadmaker

You can try, but I cannot then advise you on timings whatsoever, unfortunately. I just whack on the gluten-free setting and hit start! I have no idea how long it mixes for or proves for as it does both in one straight session.

In the same way, I also couldnt advise you on baking timings because the size of the breadmaker tin is very different to a regular tin. Also, breadmakers dont have a clear timer, so I cant easily say when it starts baking and how long for.

So the answer is: you can try, but youd need be somewhat experienced to know how long to mix for , when the dough is sufficiently proved and when the bread is done baking in the oven. Sounds like a bit of an experiment to me!

The best idea if you want to make non-breadmaker bread is to just use the crusty white loaf in my first book.

Our Favorite Gluten Free Bread Machine Recipe

Going gluten free is not always just a lifestyle choice. It is often a medical necessity. Gluten is a protein found in grains like barley, wheat, rye, and triticale. For many, it triggers a response in their immune system that damages the small intestine and can cause many painful and often serious medical issues. Living a gluten free lifestyle means cutting out a large number of foods with both visible and hidden gluten. Finding replacement products helps maintain this way of eating.

A gluten free diet means there is no gluten in the foods being eaten – nothing from grains or from items that may have been in contact with grains. Even contact between foods can cause contamination and be harmful to someone that cannot tolerate gluten. Depending on the product, this might even include some items that themselves are gluten free but were processed in a facility that also processed grain products. There can be transference between machines and different foods if items are not properly cleaned. Its important to be aware of this if you are gluten intolerant. It takes a lot of patience and caution but once you have discovered the safe products, you are set to go in your quest to make great gluten free recipes.

Why Is My Gluten Free Bread Not Rising In The Bread Maker

If your bread isnt rising in the bread maker, it could be a few reasons:

  • Too little xanthan gum, baking powder, or both. Xanthan gum and baking powder are the leaveners and binders that give gluten free bread its texture. If either one of these ingredients is off, or not in the recipe, it will lead to flat, dense bread.
  • Not enough moisture. Baking powder is activated in moisture, so if there isnt enough, it wont do its job. Moisture also creates air pockets and steam during baking, so if your recipe is too dry, your loaf of bread will turn out dense and dry.
  • The yeast is dead. Yeast is activated in moisture, so if youre using instant yeast that wasnt proofed prior to baking – you might have a bad batch on your hands. To remedy this, use active dry yeast and proof in a bit of warm water and sugar prior to using.
