How to Frozen Key Lime Pie on a Stick New Recipe

You Havent Lived Until Youve Had a Swingle, the brainchild of Steves Authentic Key Lime Pies in Red Hook.

I walked through the outdoor Smith Street Market in Brooklyn Heights on Sunday and came upon a small stall selling only two things: Mini Key Lime Pies and Swingles. There is nothing like walking around an outdoor market, on a nice day, munching on the most filling and delectable popsicle of your life, aka the Swingle. If the Swingle is a mystery to you then prepare to be enlightened.

The Swingle: A frozen, mini key lime pie, dipped in dark chocolate, on a stick. While the name is bizarre and the creation quite inventive, the end product is something out of your wildest food fantasies. Strangely and aesthetically pleasing, the Swingle is straight from a post on one of those foodie instagrams that you live vicariously through while eating a pb& j alone at work. And it could all be yours for six American dollars!

Best Key Lime Pie In Key West & Beyond

Kermits Key West Key Lime Pie Shoppe

Kermits is a great spot for coffee or breakfast before heading out on a boat excursion. However, in addition to the cafe they also have a key lime pie shop featuring traditional, mango, strawberry, and my favorite, the chocolate-dipped key lime pie on a stick.

You will see frozen, chocolate covered key lime pie all throughout the Keys, but Kermits is one of the best. Their key lime pie is creamy and the chocolate is not too thick, making it easy to eat before it melts. By the way, the mango key lime pie isnt too shabby either!

Old Town Bakery, Key West

Located in Old Town, a little off-the-beaten path for those wandering Duval Street, you will find the cute, local Old Town Bakery. They offer coffee, pastries, breads, and a unique flavor to their key lime pie. Instead of the traditional graham cracker crust, they use a crushed gingersnap crust. The pie itself is nicely limey and tart, and it is also quite creamy.

If key lime pie isnt your thing, they also have a delicious brownie with a chocolate ganache center. Just be forewarned that it is big enough to share.

Burdines, Marathon

There are two places in Marathon famous for their fried key lime pie Burdines and Island Fish Company. I ate at Island Fish Company on my prior trip to the Florida Keys, so this time I tried Burdines.

Frozen Key Lime Pie on a Stick Recipe

Many years ago , Bryan and I liked to watch a Food Network show, Road Tasted. It doesnt exist any more. Back then, it was hosted by Jamie and Bobby Deen. They went around the country and tried many well-known food. The best part was that all of those food can be shipped to your home. I was crazy enough and ordered some kringles and deep dish pizzas. Both were fantastic and it was well worth it!

When the Deen brothers were in Key West, Florida, they went to Blond Giraffe for chocolate dipped frozen key lime pie on a stick. The pies looked absolutely delicious, especially with the dripping chocolate. I was totally drooling while watching. Unfortunately, the shipping cost was pricey. I didnt order any, but I swear that I would hunt down these pies when I visit Key West. Sadly, I still havent been to Florida to this day. One day

Where Can I Find The Swingle

How do you get one of these beauties into your stomach? Head to Red Hook or find one of their retail locations throughout the City. Steves Authentic Key Lime Pies originated in a tiny hole in the wall on the industrial Pier 41 in Red Hook. For better or for worse, its still there. While their headquarters may be a bit out of the way for some folks, if you frequent block parties, outdoor markets, or certain retail locations in Manhattan and Brooklyn, you might be lucky enough to come across these famous treats. The Swingle, however, is maddeningly inaccessible, although I believe this could be part of its magic.

The Key Lime Pies are tart and crisp and never soggy. The crust is crushed graham cracker which perfectly counter-balances the spicy tartness of the filling. These hand-held delights are prefect for an afternoon snack or to finish off a meal.

The Swingle is just one of these pies but frozen and dipped in chocolate. When frozen, these babies do not lose their crunchiness or their freshness, and the bittersweet dark chocolate coating is decadent and not too overwhelming.

On a hot day a Swingle will be sure to cool you down and satisfy your sweet tooth all in one!

Can I Use Bottled Key Lime Juice

Yes. You will find it in the fruit juice aisle next to the lemon juice or sometimes in the canned fruit section of your grocery store. Since key limes are not available all year round, this is a good option when you are craving key lime pie in the winter.

If you can’t find bottled key lime juice, reconstituted lime juice will work in a pinch.

Everything You Need In Life: Frozen Key Lime Pie On A Stick

Im from Minnesota, so food on a stick is not new to me. You can find basically anything on a stick at the Minnesota State Fair from a standard corn dog to more truly bizarre options. This frozen Key lime pie on a stick, however, is something Ive never seen before. It makes total sense its like a pie, in popsicle form, covered in chocolate.

It might not be warm enough in New York to eat this right now, but Im saving this recipe for the first day its acceptable to wear shorts. I love the sweet, sour, salty, cold thing going on in this dessert so much that I cant even stand it.

Bonus My Favorite Key Lime Pie

Blond Giraffe Key Lime Pie (Road Tasted)

I cant bring these unique key lime pies to an end without mentioning my very favorite. My pie has been repinned thousands of times and remains in my top 10 page views. I first tasted this pie at Joes Stone Crabs in Miami. As soon as I returned home, I created a copy-cat version and its my son-in-laws favorite dessert ever.

Rachael Ray Loves Frozen Key Lime Pie On A Stick

Kristie and Bob Thomas always knew their frozen Key lime pie on a stick was good. But good enough to be featured in the current issue of “Every Day with Rachael Ray”?

A few months ago, the Thomases, owners of Key Largo Chocolates, received an email from editors of Ray’s magazine asking if they’d send a few of the dark chocolate dipped treats to their New York offices. It seems someone had suggested them for an upcoming feature.

Kristie Thomas didn’t think twice about getting the national exposure. But not before she upgraded her recipe.

Frozen Key lime pie on a stick was among the first things the Thomases made when they opened for business five years ago at Mile Marker 100.5 in Key Largo. But chocolatier Kristie got too busy making everything from truffles to frozen yogurt that they contracted with a DeLand pie maker. Once the Ray people came calling, she stepped back from chocolate making to polish her original recipe. The new treats feature her signature Key lime pie that is coated in dark chocolate from Barry Callebaut chocolate in Chicago.

The $6 chocolate dipped pie slices are included in a story that features the best mail order treats from each of the 50 states. The pie leans more tart than sweet. The dark chocolate isn’t too thin or too thick. They’re definitely worthy of Rachael Ray.

“Other people have done them,” says Kristie. “But my pie and everything is hands down better. It’s very labor intensive and we can’t make enough of these.”

Frozen Key Lime Pie On A Stick

While I was growing up, my dad always believed in taking our family on vacations somewhere to culture us kids. We certainly were hard to please. My brother slept at the symphony, while I ate it up. Most of us couldn’t get enough of New York , but my brother detests crowds. One place we can all agree on is Key West, Florida. My dad, ever the adventurous one, tried out wind surfing while my mom and I graciously accepted cool towels during sun bathing on the beach. We all met up for Key lime pie every night. On a particularly muggy day in Florida, frozen Key lime pie is the way to go. But dipped in chocolate and put on a stick? Well, that’s great for any day.

  • To Make the Crust: Preheat the oven to 350 degrees F, and have a 6-inch pie pan ready.
  • In a small bowl, combine the graham cracker crumbs, sugar, and melted butter. Stir until evenly moist. Press the crumbs into the pie pan, taking care to pack it tightly and up the sides of the pan. Bake on a sheet pan for 10 minutes, then let cool.
  • To Make the Lime Curd Filling: In a medium-size bowl, using an electric mixer on medium speed, beat the egg yolks and condensed milk until light and airy, about 3 minutes. The mixture will be pale in color, and slightly foamy. Next, add the lime zest and Key lime juice and beat until combined. Pour into the piecrust, and freeze overnight.

I squeezed all 22 of the little key limes but feel free to use it’s larger cousin, the Persian/Tahitian limes which are the most common in the grocery store. It takes fewer limes to use these larger ones and they are available all year. They also cost less.

    Let’s Start With The Pie

So for chocolate dipped key lime pie you need to start with a delicious key lime pie. I highly recommend this one. It’s super simple, and freezes wonderfully. The filling is sweet, creamy & tart essential for a traditional key lime pie. The graham cracker crust is thick and gives great texture to compliment the filling and goes well with chocolate.

The one thing about this recipe is that you have to wait between chilling the pie after it’s baked and then, freezing the slices. You definitely want to make sure the pie has had the right amount of time to chill and then you really want to slices to be frozen. The last thing you want is for the key lime pie slices to be falling apart when you dip them in chocolate. It’s worth the wait but it’s the one thing I wanted to mention before you get started.
