What You Need To Make This Recipe

Bananas overripe bananas are a must for this recipe because underripe bananas are too firm which will cause a lumpy batter. Theyre also not as sweet which will affect the taste. If you need to ripen your bananas quickly check out my tip below!

Chocolate chips I like to use semi-sweet chocolate chips but you can use any kind you like whether its milk, dark or white chocolate.

Butter I use unsalted butter so I can control the amount of salt thats added. If you use salted butter omit the additional salt in the recipe.

Salt even although this is a sweet recipe salt is essential for adding and enhancing the flavors.

Why Is It Taking Longer Than Described To Bake

Over time, the thermostat on ovens gets a little off, causing some ovens to run hot and others to run cool.

This is why recipes tend to say things like 10 to 15 minutes or until golden brown.

So, if it takes you longer than expected, thats fine, dont worry about it. Just keep baking until ready.

I recently picked up the new cookbook, Magnolia Table and its filled with beautiful recipes that had my mouth watering. Our favorite so far has been Joanna Gaines Banana Bread Recipe.

I have made a few tweaks to the original recipe. And I cant wait to share you my version of her After-School Banana Bread!

    Dry Vs Liquid Measuring Cup

Ever wonder why measuring spoons often come with a set of measuring cups? I used to. I didnt see why we needed a set when we could have one large measuring cup.

After a quick search, I had my answer. I discovered that the large measuring cup is used for liquids, whereas the set is used for dry ingredients.

As it turns out, if you try to measure dry ingredients with a liquid cup, the measurements get messed up.

First, you pour the flour or cocoa in, next you shake it around to get it level, and then you add more.

    Chocolate Chip Muffin Variations

There are so many different ways to add new flavors to these muffins! Here are a few of my favorite ideas:

    • Chocolate. Feel free to add different types of chocolate to these muffins from white chocolate to dark chocolate. You can even use different flavored baking chips butterscotch or peanut butter would be great options.
    • Fruit. You can add about 1/2 cup diced strawberries or blueberries into the batter for incredible fruity flavor.
    • Add-ins. Customize these muffins by stirring in other ingredients such as chopped pecans, walnuts, toasted coconut, dried fruit, coconut extract or almond extract.
    • Streusel topping. Try a delicious streusel topping for your muffins by mixing together 1/2 cup all purpose flour, 1/4 cup brown sugar, 1/4 teaspoon cinnamon and 1/4 cup melted butter. Sprinkle the streusel over the top of your muffins, then bake as directed.
    • Chocolate chip banana bread. This recipe works as bread too! Will fill two 8-in x 3 3/4-in x 2 3/4-in loaf pans. Bake at 350ºF for about 45 minutes. Here are a couple of other banana bread recipes to check out Chocolate Chip Banana Bread and Healthy Banana Bread.
    • Mini muffins. To make these muffins into mini muffins, use a mini muffin pan and bake 12-14 total minutes at 350°F.

This chocolate chip banana muffin recipe makes moist, sweet and satisfying muffins that bake up perfectly every time! They are SO good you will want them not just for breakfast, but for snack and dessert too!

    Magnolia Table Banana Bread

    Chocolate Chip Banana Bread Muffins

In the beginning of Joanna Gaines new cookbook, Magnolia Table she writes:

A huge part of cooking is owning and enjoying the experience. Similar to my design philosophy about making your space uniquely yours, I want you to feel inspired to personalize these recipes and adjust them for your familys tastes. In fact, I encourage you to switch it up more often than not.

So, in the spirit of that, a group of bloggers and I are sharing our versions of some favorite Magnolia Table recipes.

And while these 6 recipes are just a glimpse inside the beautiful cookbook, I hope it gives you a feel for the rustic and easy recipes that are contained within Joanna Gaines new cookbook!

Recommended Tools For Baking Chocolate Chip Banana Muffins

Heres a few of my muffin-baking essentials:

    • Mixing bowls Any mixing bowls will do the trick. I love this stainless steel, nonslip mixing bowl set from Target.
    • Nonstick muffin pan This is where quality matters! I was given this muffin pan from Williams Sonoma and LOVE it. I dont have to use paper liners and my muffins always come out so easily. As an added plus, theres never cooked muffin left stuck to the pan, so its super easy to clean.
    • Cooling rack I wouldnt say a cooling rack is completely necessary, but its definitely nice to have one available. These allow for airflow and even cooling of your baked goods.

Chocolate Chip Banana Bread Or Muffins

I have literally been testing and tweaking recipes for months to find my favorite banana bread recipe. And this is it! We LOVE this yummy treat! It can be used to make two small loaf pans or 18 muffins.

Confession: I do not own a loaf pan to bake these in but I find that the disposable, aluminum loaf pans always serve me quite well for this recipe! They come in the correct size, and bonus- it makes it easy to give away!

    Vanilla Extract Vs Vanilla Sugar

In my recipes, I dont specify what kind of vanilla to use.

The reason for this is that in the States, vanilla extract is exclusively used.

Meanwhile in Israel, along with many European countries, vanilla sugar is common.

In most, if not all recipes, both vanilla extract and vanilla sugar can be used.

In recipes where vanilla sugar can be used instead of extract, you can replace them 1:1.

Why Sift Flour And Other Powder Ingredients

Chocolate Chip Banana Bread Protein Jumbo Muffins! 21g Protein!

There are a number of benefits to sifting flour and other ingredients like cocoa ingredients:

It removes any unwanted debris and you can get a more accurate measurement than when packed tightly in a bag.

It also removes any lumps that can get into the batter and be hard to break up later, or be missed altogether before baking.

If you sift the powdered ingredients together, it helps combine them and mix more evenly with other dry ingredients like sugar.

    Replacing Sugar With Honey

If youd prefer to use honey instead of sugar, you can do so with pretty good results.

Honey can be two or even three times as sweet depending on the honey, so for every 1 cup of sugar, you can use 1/2 to 2/3 cup honey.

Since honey adds liquid, you need to remove some to balance it out. For every cup of honey remove a 1/4 cup of liquid.

Also, it burns faster than granulated sugar, so you want to lower the baking temperature by 25 F or 4 C. In addition, check it early and often to avoid burning or overbaking.

    Joanna Gaines Banana Bread

One of my favorite things to make for my family are muffins. They are perfect for busy school mornings when it seems like we are always short on time! Another morning staple in our house are my Pumpkin Chai Muffins.

When I saw Joanna Gaines recipe for After-school Banana Bread, I knew this would be a perfect recipe to tweak. And its the perfect weekday breakfast solution! Plus, the addition of chocolate chips is a definite winner in my kids eyes!

The ingredients in this Magnolia Table banana bread recipe are simple, and thats my favorite part. I love being able to bake using pantry staples and not having to run to the store for last minute ingredients.

I added some nutmeg and cinnamon to the batter because my family loves those spices. It gives the recipe an extra layer of flavor that really compliments the banana.

The best part about this Magnolia Table banana bread is the tip that Joanna Gaines gives in her book. A generous sprinkling of sugar on the tops of each muffin give them a sweet crunchy texture that is so delicious! Definitely do not skip this step!

How To Store And Reheat The Muffins:

Store. Allow the muffins to cool completely and then place in an airtight container. They can stay at room temperature for up to three days. Then, place in the fridge.

Freeze. Muffins are best if theyre wrapped individually with parchment paper or foil and then in a ziploc bag, Store in the freezer for up to 3 months.

Reheat. Allow to defrost in the fridge overnight and them warm in the microwave for 30 seconds or oven until the muffins reach your desired temperature.

How To Make Easy Chocolate Chip Banana Muffins

  • Prep Preheat oven to 425 degrees F. Line muffin pan with muffin liners or spay with non-stick spray. Set aside.
  • Mix wet ingredients In a large mixing combine mashed bananas, sugar and egg until mixed. Stir in melted butter until combined.
  • Mix dry ingredients In a separate bowl combine dry ingredients.
  • Mix Slowly add dry ingredients to the wet ingredients and stir until just combined. Gently fold in chocolate chips.
  • Bake Using a 1/4 c. measuring cup divide batter into prepared muffin pan. Bake in preheated oven at 425 degrees F for 5 minutes then reduce heat to 350 degrees and bake an additional 15-18 minutes or until toothpick inserted into the middle of the muffin comes out clean.
  • Baking at a high temperature for 5 minutes then reducing the temperature to a lower temperature after that gives you that high, perfect dome on your muffins!

Use A Combination Of Oil And Butter

This is the second best bet. Use some oil for the sensation of moisture on the palate. This happens because oil is liquid at room temperature. Its also my preference to use some melted butter so you get that beautiful distinct taste that only butter provides. This way, you get moistness and flavor!

Does an overnight rest of the batter work for this recipe?

I wouldnt particularly recommend an overnight batter rest for this recipe.

If youve followed me for a little while, you may have seen my overnight muffin batter fridge trick. Basically, for muffin recipes that use baking powder, if you cover the batter and allow it to rest overnight in the fridge, then the muffins will bake up extra tall and tender the next day. Check out my full article on How to Bake Tall Bakery Style Muffins here.

However, this banana nut muffin recipe is a little different. It uses both baking powder and baking soda. Baking powder is double acting so it activates upon being mixed with liquid and when it hits the heat of the oven. Baking soda only acts upon being mixed with something acidic . The baking soda in the batter will lose strength the longer it sits before being baked.

You can chill this batter in the fridge if youd like to get a jump start on breakfast or brunch the night before. Youll likely lose a little browning on the muffins while they bake. If youre curious about learning more about baking soda vs. baking powder, click here!
