Basically, that is my way of saying that yes, you need to use the full-fat milk, cream, and sweetened condensed milk in this recipe.

I find that making ice cream with low-fat dairy results in an icy ice cream. And we want a nice creamy ice cream.

Just consider this ice cream to be a special treat. YOLOright?

Five Minutes To Make The Base

No Churn Key Lime Pie Ice Cream

Yes, thats right! Just mix the sweetened condensed milk with cream and the plain yoghurt . Then add the zest of half of the lime fruits and the juice of all: Finished and ready for churning!

While you wait for the ice cream base to firm up/finish churning, you can calmly crush the Digestive biscuits for later use.

Lime fruits, cream, sweetened condensed milk and a little yoghurt for a tangy touch: the only things going into the base. The crumbled biscuits will be added later. While using lime fruits from the Florida Keys obviously would be optimally authentic, other limes should work just fine too.

The churned lime ice cream base if you only desire lime ice cream, you can start enjoying the result of your labour right away now!

To simulate the pie crust, we will simply add the crumbled biscuits to the finished lime ice cream base. I used Digestive biscuits , but you could also go with Graham crackers.

How would you like to handle the biscuit crumbles?

Exactly how you add the crumbles is up to you: You could pour all of them on top of the ice cream and then simply scoop from there. Or you could mix some, most, or all of the crumbles into the ice cream, perhaps saving some for sprinkling at the time of serving . The mixing-in can easily be done either towards the end of the churning or right after the churning has finished.

  • Key Lime Juice key limes offer juice with a higher acidity and a distinct sweetness. By using fresh squeezes of distinctive lime flavor we perfectly imitate a key lime pie.

Ive actually contemplated purchasing an indoor fruit tree, but considering I completely lack a green thumb, I figure that it would survive about a week tops. Trust me, I cant even keep parsley alive, which is pretty pathetic.

Gardening woes aside, this ice cream is loaded with all of the familiar flavors of your favorite key lime pie recipe, even the crunchy graham cracker crust and its incredibly simple to make.

Custard Based Ice Cream

A custard ice cream is made with cream, sugar and egg yolks. There are four yolks in this recipe and all that fat makes for a thick, creamy ice cream.

My vanilla ice cream has two whole eggs in, so its not a true custard. The eggs in this base are fully tempered and then cooled before being churned in an ice cream maker.

I feel like we need to take a short detour and chat about the difference between lime varieties. This recipe calls specifically for Key Limes which arent the typical Persian variety you find in the store.

They are quite a bit smaller and less tart which makes them perfect for desserts! While you can use regular lime juice in a pinch I highly recommend you search the store for the smaller variety. Sometimes you can even find just the juice next to the canned fruit aisle of the store.

How to Make Fresh! Key Lime Ice Cream Pie

The fresh flavor of Key limes and toasted buttery graham crackers combined to make this tart and sweet homemade Key Lime Pie Ice Cream.

This recipe for Key Lime Pie Ice Cream makes me extremely happy. Seriously. Its probably one of the best flavors of ice cream Ive ever had.

As some of you may know Im not a huge ice cream fan, but certain flavors certainly grab my attention and Key lime is one of them. Key lime pie is one of my favorite desserts.

I guess its because the light, citrusy flavor reminds me of Summer. Mainly because I usually indulge in a slice of pie whenever we vacation on the Gulf Coast of Florida.

When I saw a recipe for No Churn Key Lime Pie Ice Cream on Pinterest last month created by Like Mother, Like Daughter, I couldnt wait to try it for myself.

In their recipe they used sweetened condensed milk along with the heavy cream to make a no churn version. However, since I have an ice cream maker I adapted their version to use with my machine.

Making your own ice cream at home is super easy and I like knowing what ingredients go into it.

Can I Make Key Lime Ice Cream Without An Ice Cream Maker

You definitely can, but the recipe is slightly different. The reason this particular ice cream recipe is so good is that it tastes EXACTLY like Key lime pie!

To make this homemade ice cream without an ice cream maker. You will:

  • Eliminate the eggs and increase the cream to 2 cups
  • Whip the cream until stiff peaks form. Set aside in the fridge
  • Combine the sweetened condensed milk with the lime juice. Gently fold and heavy cream into the condensed milk mixture until completely combined
  • Sprinkle in the graham crackers, add the mixture to the pan and freeze until firm.

How To Make Key Lime Pie Ice Cream

Begin by making the crust. In a medium bowl, combine the graham cracker crumbs, melted butter, brown sugar, and salt. Using a spoon first and then your fingers, mix until evenly combined, making sure to break up any lumps of brown sugar.

Press the crust into an even 1/4-inch layer on the prepared baking sheet.

Bake until golden around the edges, 7 to 8 minutes.

Let cool, then use a spoon to break into chunks.

Set the crust aside while you make the filling. To start, zest and juice the limes.

In the bowl of an electric mixer, beat the cream cheese until light and creamy, about 1 minute.

Add the sweetened condensed milk and beat until completely smooth, 1 to 2 minutes.

Add the heavy cream, lime zest, lime juice and salt.

And beat until evenly combined, about 30 seconds.

Arrange half of the crust evenly over the bottom of an 8-by-4-inch loaf pan.

Pour the ice cream mixture over top.

Then cover with the remaining crust crumbles. Cover with plastic wrap and freeze until completely firm, at least 8 hours or overnight.
