What Kind Of Condensed Soup Is Best

Cans of condensed soup dont just make great paintings ala Andy Warhol, nor are they only for quick lunches = they also make for some really easy, instant flavor additions for dinner.

The most savory cans of condensed soup tend to be either cream of mushroom or cream of chicken, and honestly, either one will work here. Feel free to use whatever your preference is, though keep in mind that the can of condensed mushroom will definitely add that subtle hint of intense mushroom flavor, which not everyone is a big fan of.

Can You Freeze This

Oh yeah, baby! If youve already baked your pot pie, let it cool completely before preparing it for the freezer.

I try to put mine in disposable aluminum pans if I know Im going to freeze it. It goes straight from the freezer to the oven on 375 for about 30 minutes.

You can also prepare and freeze unbaked, but youll have to add about 25 minutes to the baking time.

The Most Polarizing Ingredient: Hard Boiled Eggs

Do hard boiled eggs belong in a chicken pot pie? If you ask me, the answer is most definitely YES. This seems to be the ingredient that throws so many people off though. I guess hard boiled eggs aren’t typically seen in casserole-type dinners, but I grew up thinking hard-boiled eggs were a must in chicken pot pie, so here we are.

The good news is that if you don’t like hard boiled eggs in your chicken pot pie, leave them out. No problem.

May you have many warm and cozy meals on your table this winter!

How To Make An Easy Chicken Pot Pie

Whats the first step to making chicken pot pie? The chicken of course! You have a few options here you can cook your own chicken or buy a rotisserie chicken. I simply cooked one pound of chicken breast in boiling water for this recipe. After the chicken is cooked and diced it gets combined with the frozen vegetables, mushroom soup, chicken broth and green onions. For the veggies, I use a mixture of carrots, corn, green beans and peas, but you could also add other vegetables like celery and onion if you prefer.

Next, make a simple bisquick dough for the top layer. In a small bowl, mix the bisquick with milk and an egg. Spread the bisquick layer on top of the pie, using a spatula to cover the entire thing.

The whole thing goes into the oven until the crust is golden brown . Allow the pie to cool for 10 minutes before serving. Dinner perfection!

Bisquick Chicken Pot Pie Casserole

The yellow box of Bisquick baking mix always reminds me of my childhood. Some of my favorite treats came from that box, like strawberry shortcake and coffee cake. As a preteen, those were some of the first recipes I made on my own.

Betty Crocker recently released a new cookbook, Bisquick: Quick to the Table: Easy Recipes for Food You Want to Eat, filled with recipes old and new. With fresh carrots, celery, onion and broccoli waiting to be used, I chose to make the Easy Chicken Pot Pie recipe.

As per Betty Crockers suggestion, I took the advice of her kitchen secrets: instead of cream of chicken soup, I had a can of cream of celery soup on hand and used that. And instead of the thawed, frozen veggies, I used leftover cooked vegetables. The chicken pot pie filling was delicious, and the topping, in biscuit form, was a twist on the standard pie crust topping.

Ingredients:

  • 1 2/3 cups frozen mixed vegetables, thawed
  • 1 cup cut-up cooked chicken
  • 1 can condensed cream of chicken soup
  • 1 cup Original Bisquick mix
  • 1/2 cup milk

How To Store It

If youve made the filling ahead of time, store the leftovers in the refrigerator for up to two days. Otherwise, you can store them for up to four days.

How Do I Thicken My Pot Pie Filling

Were using flour as the thickener for the pot pie filling in the recipe. Since the filling is assembled on the stove for this dish, it already simmers and thickens before going in the oven.

That means that if you think its not as thick as youd like, you can always mix a bit more flour and water together, then whisk it into the filling, and let it simmer to thicken until you reach your desired consistency.

If you like a really thick filling, you may want to wait 20 30 minutes after it comes out of the oven to serve it. Letting the pot pie cool for a bit will help the filling set.

To keep a chicken pot pie from being runny, its also important to thaw your vegetables before using them. So, if you decide to use frozen mixed vegetables instead of fresh vegetables, its important to make sure theyre thawed first.
