  • Use the good cocoa, and if you can find it, use cocoa rouge – it is naturally a deep red color which means you can use less food coloring.
  • similarly, use the good extracts. All natural, highest quality.
  • And about that food coloring – I am not a fan of artificial anything, so I always use a natural food coloring especially in something like this where you are using quite a lot. This is totally up to you. This is the one I use: Watkins Natural Red Food Coloring
  • This recipe does require an ice cream maker. I have not tried it without one and I can’t recommend you try to make it without one.
  • Making the ice cream base the night before and letting it chill overnight before churning is the way to go. You want it completely chilled before churning.

How To Make Red Velvet Ice Cream

Cut the cream cheese into small pieces and place in a food processor fitted with the metal blade. Add the sour cream, half-and-half, sugar, salt and vanilla extract purée until smooth. Chill the mixture for at least 8 hours or until very cold .

Follow your ice cream maker manufacturers instructions for preparing the ice cream. You will add in cake crumbs at the end just before you add this to the freezer. Freeze at least 3 hours before serving.

How To Make Red Velvet Ice Cream From Scratch

Start the day before by making sure that the bowl for your ice cream maker has at least 24 hours to freeze solid.

  • In a large bowl, combine the heavy cream, whole milk, granulated sugar, cocoa powder, red food coloring, vanilla extract, and kosher salt.
  • Whisk for 2-3 minutes, until the sugar is dissolved into the mixture. You can rub a bit between your fingers to check that there’s no more grittiness left.
  • Churn the ice cream mixture in the bowl of your ice cream machine according to your manufacturer’s instructions , until it is thick and the consistency of soft-serve ice cream.
  • In the last two minutes of the churn, add the pieces of red velvet cake and churn until it’s evenly distributed. Don’t over churn the ice cream or the cake pieces will break up too much.

    Red velvet cake wouldnt be red without food coloring. I recommend gel food coloring because the color is concentrated, so you need less of it. For natural coloring, use beet powder. If you dont want to use food coloring, leave it out! The cake will have the same flavor and be a lovely shade of cocoa.

    As Salt & Straw explains Bananas Foster, Our twist on an extravagant old school tableside dessert. We cook banana purée, rum, molasses and warm spices down to a luscious caramel. This gets mixed into a banana-infused ice cream. I was a little afraid to try this one after experiencing Ben & Jerrys too-sweet take on the flavor that was a rare pint that sat unfinished in our freezer until we finally threw it out. So Delicious does a better job than Ben & Jerrys with Banana Foster, but Salt & Straw does better still. The huge dollops of caramel in the pint are flavorful and sweet, but not so sweet they hurt your teeth.

    Peanut Butter Brittle Fudge features one of my favorite combinations: chocolate and peanut butter. Yes, I know, Ive managed to hold onto the same level of taste sophistication since I was a toddler. Which is why a lot of peanut butter ice cream gets consumed in my household. S& S uses a base of coconut vanilla ice cream, adding semi-sweet caramel fudge swirl and shards of peanut brittle. This is quite good. I like the texture of the peanut brittle. If I was making it, Id add even more crispy shards.
