How To Make Vegetable Pot Pie

This vegetable pot pie is not only quick and dead easy, but also cheap. You can use any vegetables you have, not just the ones I used. Its a great way to use up any veggies that have seen better days, and have been forgotten at the back of your fridge for way too long.

  • in a pan, heat up the oil, and sautee the onion
  • add the fresh and frozen vegetables, and cook for about 5 minutes or so until the veggies start to soften
  • sprinkle the flour and pour over the vegetable stock or broth, and leave to cook until the sauce thickens
  • leave to cook completely

Note!ALWAYS LEAVE THE FILLING TO COOL COMPLETELY before adding the pastry lid. And a good teaspooon of semolina sprinkled over the filling can work wonders, as it absorbs the moisture.

  • brush the pastry with egg, and use a sharp knife to make a few cuts in the pastry to allow the steam to escape during baking
  • bake in the oven until golden

Should I Eat Pie Hot Or Cold

Serving pie hot from the oven isn’t just a bad idea aestheticallyall that hot sugar is also dangerous. Allow your pie to cool for about an hour. The filling will set, and it will be cool enough to eat, yet still a little warm. Just don’t leave it on a windowsill because, you know, someone will steal it.

Perfect For The Holidays

Vegetable Pot Pies familiarity to many as a classic comfort food is why I recommend homemade Vegetable Pot Pie as the centerpiece for a vegetarian holiday dinner.

The savory flavor of Vegetable Pot Pie is kind of meaty too, so it is a good substitute for ham or turkey.

Having made this recipe a few times now, I can confidently tell you that pot pie is surprisingly easy to make.

Basically you sauté some vegetables, and add flour and liquid to make the sauce. Simmer a bit, and then transfer to a baking dish. Cover the stew-like mixture with pastry, bake, and you are set.

What you end up with is a warm, comforting bite of hearty root vegetables topped in flaky, buttery pastry.

Dare I say, Vegetable Pot Pie is a healthy decadence? Its perfect for a special occasion, or even a special Sunday dinner.

Vegetable Pot Pie With Biscuit Topping

Loaded with vegetables and flakey, gluten free biscuits, this vegetable pot pie with biscuit topping is a delicious comfort food classic redone.

Comfort food is one of my favorite things that comes along with the colder temperatures. It’s a nice consolation for all the times I have to shovel the snow off my deck, drive in less than optimal conditions to see my patients and recreate Bambi On Ice on an ice covered parking lot. I’m not kidding, parking lots can be quite dangerous a day or two after a snow storm. Typically I don’t fall but when I slip, I look around to make sure no one saw it unless is was a grandiose save, I want someone to witness that.

Enough about my adventures on ice, on to vegetable pot pie with biscuit topping. Oh my goodness. After eating this you will feel like you were wrapped in a warm blanket. One of those thick, plush, super soft blankets that you gently caress your face with because it is so soft. Wait, I got off track again. That’s what this recipe will to do you, make you forget all your worries and wrap you in comfort.

The flaky biscuit recipe used in the vegetable pot pie with biscuit topping was posted earlier this week and there’s also a recipe for vegetable broth on the blog. When you make everything from scratch it tastes as delicious as Mom used to make. I guess that depends on how your mom cooked. Mine was a whiz in the kitchen and I’m so grateful she shared her passion for cooking with me.

Most frozen pot pies including Amys Vegetable Pot Pie need about 15 to 24 minutes at 360 degrees F in the air fryer in order to be fully cooked and have that golden-brown crust color.

However, keep in mind that air fryer temperatures can vary depending on the brand you are using, so a great practice is to start out with less cook time, checking for doneness, and then adding more time as needed.

The Amy’s Vegetable Pot Pie we reviewed over ten years ago was pretty bland. As we said at the time, “Just a little pinch of herb, any herb, might help the sauce.” We do like to revisit things we’ve reviewed from time to time, especially if they weren’t very good – hope springs eternal here at Dr. Gourmet. The bad news is that the version we reviewed so long ago was described as having 30% less fat than their “regular” pot pie, and we couldn’t find that version to re-review today. We did, however, find the “regular” version.

The good news is that today’s version is better than the one we reviewed before. Much better.

After four minutes in the microwave the crust of this pot pie isn’t crisp, but it’s not mushy, either. It has a savory whole-wheat flavor with a touch of sweetness and a firm bite. Even the bottom crust is pretty good. Even better, the filling is redolent of rosemary and sage with a soft butteriness. The peas and carrots have a gentle crunch and the potatoes are cooked enough to be soft without becoming mushy. Your kids will easily mistake the small bits of tofu for chicken. Overall, this is a little bigger meal than I like to see for lunch at 430 calories, but its 590 milligrams of sodium is more than acceptable at a calorie to sodium ratio of 0.7. A whopping 6 grams of fiber makes this a good dinner – just add a side salad.
