Here are a few hints when you make this cake:

  • Make sure the butter is soft, but not melted. Allow the butter to come to room temperature so it mixes in easily. But dont melt it!
  • Divide the eggs, cracking the yolks and whites into separate bowls. Whip the egg whites until they can hold stiff peaks. Youll need a high powered mixer to do this effectively. Place the egg whites in the refrigerator until you fold them in at the end.
  • Mix the dry ingredients alternately with the sour cream. Half the flour, half the cream, the rest of the flour, the rest of the cream. You get it, right?
  • The mixture at this point should be well blended and smooth.
  • The last step is folding in the egg whites. Whipping the egg whites helps the pound cake to have a light texture. Dont skip that step! Fold the egg whites in gently. Dont mix vigorously, but make sure the egg whites get fully incorporated.
  • Be sure to grease and flour your bundt cake pan. Greasing with shortening works the best. Youll want do do both steps so that the bundt cake does not stick.

It commemorates June 19th, 1865, when Major General Gordon Granger announced to citizens of Galveston, Texas that all formerly enslaved people were finally free — two and a half years after the Emancipation Proclamation.     Heres an overview of how to bake a sour cream bundt cake. More detailed instructions are in the recipe card.

  • Be you get started, make sure you allow the butter and sour cream to warm up to room temperature. Then, when youre ready to mix up the cake, preheat the oven to 325° F and spray your bundt pan with non-stick baking spray.
  • Add butter and sugar to the bowl of your stand mixer or use a large bowl with a handheld mixer. Mix them together for 3-4 minutes on high speed, until very pale yellow and fluffy.
  • Add the eggs, one at a time, combining well after each egg. Scrape down the sides of your bowl as needed with a spatula.
  • Turn your mixer down to its lowest speed, and slowly add flour into the batter in two increments. Then add the salt and baking soda. Be careful not to overbeat.
  • Last, add the sour cream and vanilla extract, scrape down the sides of the bowl, and mix until just combined, then turn off the mixer.
  • Pour the cake batter into the prepared bundt pan and bake in the oven for 1 hour and 15-25 minutes or until a toothpick inserted in the center of the cake comes out clean.
  • Cool the sour cream bundt cake in the pan on a wire rack for 10 minutes then invert the sour cream cake onto a serving plate for at least an hour or until the cake is cool to touch.

    Early pound cake recipes date all the way back to the 1700s in England, and two pound cake recipes are included in 1796’s American Cookery, the first cookbook published in the United States by an American author, Amelia Simmons. As the decades progressed, pound cake recipes grew in popularity, particularly in Southern states.

    In 1866, Malinda Russell, an African American woman born and raised in Tennessee, published A Domestic Cook Book: Containing a Careful Selection of Useful Receipts for the Kitchen, which is now recognized as the very first cookbook published by an African American chef. Mrs. Russell led a truly remarkable life, including working as a cook and a nurse, and owning a laundry, a boarding house, and a pastry shop. In A Domestic Cook Book, Mrs. Russell presents hundreds of recipes, mostly for sweets and baked goods.
