The diner was not only a place our parents took us, it was also a late night hang out back in high school. After dances and football games, if you could manage to score a ride there, it was the place to be seen.

My babysitting money wasnt stretching too far in the mid-1980s. As a result, I always felt as though I was restricted to side items from the menuand the desserts. Nothing wrong about a cup of hot coffee and a big slice of pie. My friends and I would squirrel ourselves away in a booth, gossiping and eating our pie.

How To Make Chocolate Pie Crust

I use cocoa powder to add chocolate flavor in my homemade chocolate pie crust. You can use either natural cocoa powder or dutch processed cocoa powder, but note that dutch processed will give a deeper chocolate flavor. Mix or sift the cocoa powder together with flour, sugar and salt before adding butter.

How To Make Homemade Meringue

When making meringue, make sure the bowl is good and dry and that the beaters are dry, as well.

If you have any water or a touch of egg yolk in the bowl, the meringue wont fluff up like its supposed to.

The first step is to take the egg whites that you set aside earlier and add one more egg whiteto the bowl.

Sprinkle the cream of tartar into the bowl and beat egg whites on high speed with an electric mixer until stiff peaks form.

Cream of tartar is not required, but it will help to get a little more oomph out of your meringue.

Once you get stiff peaks, add the sugar and beat again until the meringue is shiny.

Spread the meringue on the top and bake pie in a 325 degree oven for 10-to 15 minutes or until it is golden brown.

Allow the pie to set up for at least one hour before serving.

Be sure to refrigerate the pie in an airtight container.

I would not cover it with plastic wrap because it will ruin the meringue. I use a pie carrier and that way the pie wont get squished in the fridge.

Dont be too intimidated by the meringue. As kids, our first attempt at meringue turned out like styrofoam! But, if you follow the steps outlined, you should be just fine.

This Old Fashioned Chocolate Pie recipe has been passed down through my family for three generations. Its the first pie my mother learned to make and it was one of the first desserts learned to make from her.

Of course! When it comes to playing with this recipe, go right ahead and experiment with different kinds of chocolate chip flavors to create a variety of easy chocolate pie fillings. You cant go wrong with a decadent dark chocolate pie, or even a sweeter milk chocolate pie! But my favorite is this combination of chocolate layers.

When playing with flavors you could even swap the vanilla for mint or peppermint extract for a chocolate peppermint or grasshopper pie!.

However, do you know what the best part about making this chocolate pie filling from scratch? It is the freedom to experiment with all kinds of flavor combinations. A flavor tweak wont hurt your pie.

  • Preheat oven to 350°. Lightly grease a 9-inch deep-dish pie plate with cooking spray.
  • Pulse wafer cookie crumbs, toasted walnuts and sugar in a food processor 4 to 5 times. Transfer crumb mixture to a medium bowl and stir in 1/2 cup melted butter. Press on bottom, up sides of the pie plate. Use a measure cup with a flat bottom and straight sides to get the crust even across the bottom and around all sides.
  • Bake 10 minutes. Cool on a wire rack.

  • Gradually whisk the remaining egg mixture into sugar mixture and cook, whisking constantly, 6 to 8 minutes or just until mixture begins to boil. Cook, whisking constantly, 1 more minute remove from heat. Mixture should now be consistency of pudding.
  • Whisk in semisweet chocolate and next 3 ingredients. Place plastic wrap directly on warm filling to prevent a skin from forming. Let stand on the counter for 30 minutes. After 30 minutes, spread filling in cooled crust place plastic wrap again directly on filling to prevent a skin from forming, and chill 30 minutes.

How To Store Homemade Chocolate Pie

This pie is made with a pudding base and will need to be stored in the refrigerator. Cover with plastic wrap and store in the refrigerator for 2-3 days. This is a great pie to prepare ahead of time. This allows the pie to chill and firm up before serving. Due to the pudding in the pie I do not recommend freezing this pie.

Troubleshooting Tip: My Pudding Didnt Set

I have received several comments or emails from people who have made this recipe and their pudding did not set, even after chilling overnight. If cooked properly, following the specified ingredients, this should not have an issue.

Its important that the pudding is thickened at two stages, once when the dry ingredients are incorporated into the milk and again after the chocolate is added. Each time the mixture should be bubbling and thick. Youll also notice in the first stage that the mixture is starting to coat the outside of your saucepan.

Your friends will be seriously impressed with your dessert, even if you have an ugly pie crust like mine. Pie crust is my arch-nemesis.

Forming The Pie Crust Or Shapes

How To Make the Easiest No

When youre ready to make the pie crust, take the dough out of the fridge and roll it into a circle about 2 larger than your pie dish. Use flour or a mixture of flour and cocoa powder to keep the dough from sticking to the counter when rolling.

Place the pie dough into the pie dish and trim off the excess, but be sure to leave a bit of dough hanging over the side so you can form a decorative rim by fluting the edges. Once you form the pie crust in the dish, you can freeze it quickly before baking or store it in the freezer until you are ready to use it.

Alternately, you can roll the dough out between to ¼ and cut it into shape to make hand pies, pop tarts, stuffed pie cookies and so many other delicious treats. Stay tune for next week recipe, Ill turn this chocolate pie crust into some delicious chocolate strawberry hand pies.

You can keep premade pie dough in the fridge for up to a week, or freeze for several months. When freezing pie dough, make sure to double wrap and put it in a zip loc bag as well to prevent the dough from absorbing funky freezer odor. You will need to thaw the dough before rolling.
