This will help the bottom of your pie crust get crisper and prevent the top from getting too browned. Next, preheat your oven to 400°F . The initial high temperature will help ensure that you end up with a super flaky pie crust. Dont worry though, youll reduce the temperature after 20 minutes so your pie doesnt end up over baked!
I also recommend making the filling first so that it has time to sit for about 15 to 20 minutes while you roll out and prep your pie crust. This will allow the apples to release some of their juices so that it doesnt all end up in your pie.
To make the apple pie filling, simply combine your sliced apples and lemon juice in a large mixing bowl and toss the apples to coat them with the juice. In a separate mixing bowl, whisk together the brown sugar, granulated sugar, flour, and spices until theyre fully combined. - 1 recipe pastry for a 9 inch double crust pie
- ½ cup unsalted butter
- ½ cup packed brown sugar
- 8 Granny Smith apples – peeled, cored and sliced

Preheat oven to 425 degrees F . Melt the butter in a saucepan. Stir in flour to form a paste. Add water, white sugar and brown sugar, and bring to a boil. Reduce temperature and let simmer.

Place the bottom crust in your pan. Fill with apples, mounded slightly. Cover with a lattice work crust. Gently pour the sugar and butter liquid over the crust. Pour slowly so that it does not run off.

Bake 15 minutes in the preheated oven. Reduce the temperature to 350 degrees F . Continue baking for 35 to 45 minutes, until apples are soft.

Try to find a firm apple to use in this recipe. I like a mix between sweet and sour apples. You can use Granny Smith, Jonathan, Jonagold, Winesap, Golden Delicious, Honey Crisp, Gala, or Rome Beauty. I used a mix between Golden Delicious and some kind of tart firm apples from our trees for this pie, and it was great. Its very forgiving, so experiment!
