Whats Wrong With Costco Pumpkin Pie

Vegan at Wegmans + Food Haul (Holiday Version)

Costco has this unfortunate problem in common with a famous brand of canned pumpkin. The pumpkins used in Costcos pumpkin pies are a variety called Dickinson. Folks obviously assume Costco pies are being made from Libbys canned pumpkin, which isnt exactly the case they merely use the same variety of pumpkin.

Marie Callenders Pastry Pie Shell

  • 8 ounces each
  • $4.79 for a package of 2
  • Frozen in aluminum pie tin
  • Enriched wheat flour, soybean oil, water, hydrogenated soybean oil, dextrose, salt, sodium metabisulfite

Tasting notes: Completely inedible. I spit it out as soon as I took a bite. I taste tested pie shells from 3 different packages from different stores and they were all terrible.

Structure notes: Of the 3 packages I bought, in each package one shell was cracked or broken in places right out of the package. Every blind baking test resulted in a pie where the rim cracked away from the rest of the pie.

AVOID. By far the worst tasting of all the pie crusts I tested.

The Best Flour And Starch For Gluten

Although there are a bevy of gluten-free premixed flour blends and pie crust mixes on the market, I recommend using a blend of millet flour and tapioca starch. Gluten-free flour blends and mixes vary greatly from brand to brand. When you mix your own flour, you get the same results time after time. Plus, you can customize the mix to fit your needs.

Wholly Gluten Free Pie Shell

Gillian
  • $5.99 to $6.99 for a package of 2
  • Frozen in aluminum pie tin
  • Brown rice flour, water, organic palm oil, organic cane sugar, tapioca starch, potato starch, sea salt, baking powder, baking soda, monocalcium phosphate, guar gum

Tasting notes: Buttery in flavor, flaky, delicious, hard to believe that it is gluten-free.

Structure notes: A little bit of shrinkage with pre-baking, as expected, crust held pumpkin pie perfectly well.

RECOMMEND. When I first reviewed the Wholly Wholesome Gluten-free crust in 2017, I gave it a very poor rating it tasted bad and fell apart. Since then, the company has reworked their recipe and now I can wholeheartedly recommend this crust if you are looking for a gluten-free option. The crust is delicious and you would be hard pressed to tell the difference between it and a regular flour crust.

Let Your Gluten Free Pecan Pie Cool Completely Before Slicing

Whether your pie is set fully, or set softer, you must wait for it to cool completely before serving. Otherwise, the filling will cave in on itself when you try to slice it.

In fact, I prefer to let it cool completely and then chill in the refrigerator for at least 2 hours before slicing. Its easier to slice, even if youve made a softer filling pie.

Working In A Mixing Bowl

Delicious Keto Pecan Pie Bars with a Brown Butter Crust!

After cutting the fat into the flour, transfer the dough to a large mixing bowl before adding the water. This extra step is important. Its easy to add too much water to gluten-free pie dough when using a food processor. Gluten-free dough doesnt gather the same way wheat dough does. By the time it forms a ball, youve usually added too much water, and too much water makes for a heavy, tough pie crust. Stir in the water with a wooden spoon or rubber spatula.

Gluten Free Pizza Crust

Talking with folks that I know with Celiac disease it seems that one ofthe most missed foods is pizza. While there are some pizza placesthat make a gluten free crust, thats rare.

So the alternatives are to make your own, go without or purchase a frozencrust. Interestingly, frozen crusts are pretty easy to find, and you dont have to just look at specialty stores like Whole Foods.

I found a pizza crust in the Organic / Natural Food section of Winn Dixie.Yep, thats right: Winn Dixie. You cant get any more basic thanthat. And a pizza crust on the shelf. Not the freezer shelf, mindyou. The company Schär makes this product. Theyre a huge companyin Europe and I have seen their products during my travels. I will admitthat I was pretty negative about this choice. First of all, its on the shelfand not frozen, and second, it just looked funny. Like a cross between aFrisbee and a muffin top.

That said, this was pretty good. After cooking the middle of the pizzahad some bite and the edge was crispy. The flavor was yeasty, like a pizza should be. Not perfect, but as good as any frozenpizza dough weve ever tested. The drawback? They list 1/3 of a pie as 130 calories. Thats a lot, because in truth 1/2 of a pie is about a slice, so that putsit at almost 200 calories for the crust alone .

Until the Naked Pizza folks come your way so that you can order pizza again, you do have some alternatives for a quick and easy pizza.

Chill The Gluten Free Pie Crust Before Rolling

All pastry dough must be cold at all times other than when its in the oven. Pie crust is no exception.

Pie crust and other pastry dough become crispy and flaky in the oven when there are cold pieces of butter, or another solid fat, that expand in the oven heat. If theyre warm when they go into the oven, theyll just melt without expanding.

    The Best Fat For Gluten

Keto Pumpkin Pie with Cheesecake Bottom and Coconut Flour Crust

From butter to solid vegetable shortening to lard, bakers are passionate about what fat works best in pie crust. Heres the thing: Theres no right answer. The best fat to use depends on what type of pie crust you prefer.

    • Butter makes a flavorful crust with a flaky-crispy texture.
    • Shortening makes the flakiest pie crust and is easy to roll since shortening, unlike butter, doesnt get brittle when cold. On the other hand, shortening crusts tend to lack flavor. This isnt always a bad thing. If you want the flavor of your filling to take center stage, go with a shortening-based crust.
    • Lard will also produce a flaky crust. Its an excellent choice for bakers who need to avoid both dairy and soy. Be sure to use leaf lard for the best results and flavor.
    • Shortening-butter blend is the combination that gives you a crust with a great flavor and flaky texture.

Are Graham Cracker Pie Crusts Vegan

Out of eight graham cracker pie crusts checked, six were vegan, while the other two contained honey. There was no lard or dairy products in any of the eight graham cracker crusts.

Overall, this means that graham cracker crusts had a 75% chance to be vegan, which was better than the overall 58% when looking at pie crusts as a whole.

Indeed, I found that multiple brands that use lard or dairy in some of their crusts still offer a fully vegan graham cracker crust, as well. This was the case with Great Value, Kroger, and Wegmans.

Can You Make This Gluten Free Pecan Pie Without Eggs

    Mi

There are 3 eggs in this pie crust, and I dont know if it can be made without them. If you have a really trusty egg-replacer that works for custard, then try using it if youre feeling brave!

Can you replace the superfine rice flour with something else?

Yes! Our basic gum-free gluten free flour blend works, too. So does sweet white rice flour .

Do not use cornstarch, as it creates a custard that tends to leak liquid as it cools.
