I made this for my grandparent’s 61st wedding anniversary recently. They lived in Florida in their youth, and loved Joe’s Stone, and have lamented on occasion that they will never be able to go back . The family rallied ’round and ordered the crab claws directly from Joe’s, got a Joe’s Stone Crab Cookbook, and prepared the rest of the meal directly from it. What a fantastic surprise it was… and this was a very sweet end to the night. NOTE: I was only able to find about 8 key limes, which wasn’t enough juice. I supplemented with Nellie & Joe’s Key Lime juice without a problem. Also, I thought the pie was so rich it didn’t even need any whipped cream.

1/3 lb graham cracker
5 tablespoons melted unsalted butter
1/3 cup sugar
1 1/2 teaspoons grated key lime zest
1 can sweetened condensed milk
2/3 cup freshly squeezed key lime juice
1 cup heavy whipping cream, chilled
3 tablespoons confectioners’ sugar

One evening I watched a couple pay their check after dinner and depart a four-top table. The very second they were out of range and eyeshot of the table, four well-dressed attendants instantly appeared and quietly bussed the table with the efficiency and urgency of a Formula One race car pit crew and the precision of Swiss watchmakers. In less than 30 seconds the white linen tablecloth and used dishes, glasses and silverware were swept away and replaced with a sparkling arrangement on a newly reset table ready for the next diners, fresh from patiently waiting their turn, to be seated.

People line up. We open the doors at Joes Stone Crab and its like coming home, said Johnson.

Back in the day it would have been mobster Al Capone, aerial adventurer Amelia Earhart, performer Jackie Gleason, radio host Larry King, or Dolphins football coach Don Shula.

These delicate, sweet crustaceans are only available from that date through May, the reason that lines in high season form to get into the restaurant known and named for them, Joes Stone Crab. But for those who want their stone crabs delivered, either in the Miami area or elsewhere in the U.S. and guaranteed fresh, never frozen, a new company, simply and descriptively named Fresh Stone Crabs, is springing into action.

    This company is new but the concept is actually a reincarnation of owner Shelly Abramowitzs previous operation shipping stone crabs in 1989. We set it up in my garage, got a blurb in New York Magazine and within a year, it was a million bucks, shipping all over the country, says Abramowitz who in his previous life was a New York restauranteur with the social scene restaurants Canastels and Café Society earlier in that decade. Then someone talked me into doing a 60 seat restaurant on Lincoln Road. Gloria and Emilio Estefan were there, I got a fabulous crowd, mixed in some steaks.     Recipe Joes Stone Crab Key Lime Pie
    1/3 of a 1-pound box graham crackers
    5 tablespoons melted unsalted butter
    1/3 cup sugar
    1 can sweetened condensed milk
    2/3 cup freshly squeezed Key lime juice, or store bought
    1 cup heavy or whipping cream chilled
    2 tablespoons confectioners’ sugar

    Steps:

    • For the graham cracker crust: Preheat the oven to 350 degrees F.
    • Break up the graham crackers place in a food processor and process to crumbs. If you don’t have a food processor, place the crackers in a large plastic bag seal and then crush the crackers with a rolling pin. Add the melted butter and sugar and pulse or stir until combined. Press the mixture into the bottom and side of a pie pan, forming a neat border around the edge. Bake the crust until set and golden, 8 minutes. Set aside on a wire rack leave the oven on.
    • For the filling: Meanwhile, in an electric mixer with the wire whisk attachment, beat the egg yolks and lime zest at high speed until very fluffy, about 5 minutes. Gradually add the condensed milk and continue to beat until thick, 3 or 4 minutes longer. Lower the mixer speed and slowly add the lime juice, mixing just until combined, no longer. Pour the mixture into the crust. Bake for 10 minutes, or until the filling has just set. Cool on a wire rack, then refrigerate. Freeze for 15 to 20 minutes before serving.
    • For the topping: Whip the cream and the confectioners’ sugar until nearly stiff. Cut the pie into wedges and serve very cold, topping each wedge with a large dollop of whipped cream.

Longtime General Manager Brian Johnson speculates as to why there is such a demand for a table at Joes by devoted local regulars, returning snow birds, and tourists making bucket list pilgrimages.

    Its a combination of the food and the level of service in the dining room by our staff there year after year, Johnson told me.
