Inspiration For Picture By Picture Directions

During my journey through sudden vision loss and recovery, I was surprised by how many daily tasks suddenly became more difficult. It was so strange to depend on another to read my recipes. Later, I read a post from someone recovering from a concussion. She shared how difficult it was to follow a recipe. I understood. Then, I had a light bulb moment! I could create recipes online that are visually friendly.

Please share with others who need delicious dairy and gluten free recipes. Especially those experiencing vision that blurs recovering from a concussion or brain injury or who struggles to read.

Best Practices For Making Flaky Gluten Free Pie Crust

Always begin with cold ingredients. Dice chilled unsalted butter, and then place it back in the refrigerator to chill again. Begin with cold water, and then add ice to the water. Ice water is colder than cold water, and even colder than ice.

Do not chop up the butter into super small pieces or process them until theyre the size of small peas. That may be a common instruction in pie crust-making, but I am anti-small-peas in all pastry-making for one reason.

Very small pieces of butter not only melt too easily when they meet with the heat of your hands , but they melt right into the dough, so even rechilling the dough wont help once the butter in the raw dough has melted. Using butter in larger chunks, and then flattening them between your thumb and forefinger, solves all of those problems.

Handle the dough as little as possible when making the dough, but dont drive yourself crazy. Since we are working with larger pieces of butter than small peas, we can always re-chill the dough if it becomes too soft or difficult to handle.

If you are making a dairy-free gluten free pie crust by replacing the butter with Spectrum nonhydrogenated vegetable shortening, dont chill the chopped shortening for too long, or it will freeze and be difficult to flatten and roll out properly.

If you dont have to be dairy free and youre looking for extra layers, try our recipe for extra flaky gluten free pie crust. The added sour cream and rebalanced liquids bring it to the next level.

Best Puff Pastry Shells: Pepperidge Farm Frozen Shells Pastry Dough

Best Gluten

These classic puff pastry shells are ready to bake and fill, saving an enormous amount of time, whether its for a special occasion or everyday baking. Sweet or savory fillings work well in these elegant square shells, which are best baked from frozen. They are vegan and come with six to a package.

Marie Callenders Pastry Pie Shell

  • 8 ounces each
  • $4.79 for a package of 2
  • Frozen in aluminum pie tin
  • Enriched wheat flour, soybean oil, water, hydrogenated soybean oil, dextrose, salt, sodium metabisulfite

Tasting notes: Completely inedible. I spit it out as soon as I took a bite. I taste tested pie shells from 3 different packages from different stores and they were all terrible.

Structure notes: Of the 3 packages I bought, in each package one shell was cracked or broken in places right out of the package. Every blind baking test resulted in a pie where the rim cracked away from the rest of the pie.

AVOID. By far the worst tasting of all the pie crusts I tested.

Wholly Wholesome Organic Pie Dough

  • $6.49 for a package of 2
  • Comes rolled and frozen, have to defrost completely then microwave 10 sec to unroll
  • Flour, palm oil, water, cane syrup, sea salt, cane sugar, guar gum

Tasting notes: Edible, taste is fine, but the crust itself is a little tough

Structure notes: Out of the box the crust dough circle was not large enough to properly cover my pie dish. I placed a piece of plastic wrap over it , and used my hands to press the dough out a bit. I then lined my pie dish and chilled it for 20 minutes before pre-baking. Even with that, the pie crust slumped with pre-baking.

OKAY. I both prefer the Wholly Wholesome Pie Shell and the Trader Joeâs pie dough to this pie dough. Taste is good, but a little tough and not enough coverage for my pie pan.

Laminating The Pie Dough For Extra Flakiness

Once your pie dough has chilled and feels firm but not hard to the touch, its time for the next step: lamination. The process is similar to that for making croissants or puff pastry, and the idea behind it is the same: by folding the dough several times, youre creating more butter-dough layers, which ultimately results in a flakier pie crust.

The laminating step also has the additional benefit of making the pie dough smoother and easier to handle, so its a win-win!

To laminate the gluten free pie dough:

  • Tap on the pie dough rectangle with a rolling pin to make it more pliable.
  • Roll it out into an approximately 6×18 inch rectangle , and make sure that it doesnt stick to the surface.
  • Make a letter fold: fold the upper third of the dough towards the middle,
  • brush off any excess flour,
  • and fold the lower third of the dough over it. This is a simple letter fold.
  • Then, rotate the dough by 90 degrees so that the open ends are closest and farthest from you and repeat the letter fold.
  • Tap the pie dough rectangle with a rolling pin,
  • roll it out into a long rectangle,
  • sliding your hands underneath the dough every now and then to make sure that it doesnt stick.
  • Fold the top third towards the middle,
  • the lower third over it,
  • and thats another letter fold done!

Can You Freeze A Gluten And Dairy Free Pie Crust

Yes! Whenever the holidays come around, I make a few gluten and dairy free pie crusts ahead of time to freeze. Use any type of metal, glass, or disposable piepan. Place your pie crust in the pre-oiled pan. Then, cover the top of the pie crust with wax paper or parchment paper. If you are freezing one pie crust by itself, then place it in an airtight ziplock bag. You may also want to wrap the pie crust in plastic wrap.

If you are freezing multiple pie crusts in pie pans, then you can nest them together with layers of wax paper in-between them. Place an empty pie pan on top. Then, plastic wrap the whole stack to make it air-tight.

If you need to save space in your freezer, then freeze the dough in balls rather than in pie pans. Start by dividing the dough in half. One recipe makes two pie crusts. Then, shape the dough into balls, wrap them tightly in plastic wrap, and store them in an airtight ziplock bag in the freezer.

Can You Make The Pie Dough In Advance And Keep It In The Fridge Or Freezer

Easy Gluten Free Pie Crust Recipe

Yes! You can make the pie dough ahead of time and then wrap it tightly in cling film and keep in the the fridge or freezer until needed.

It keeps in the fridge for about 1 week and in the freezer for about 2-3 weeks. When you want to use it, allow it to thaw at room temperature before using. If you press down on it with a finger, it should leave an indentation but it should feel firm, not too soft to the touch.

And there you have it, friends! That covers pretty much everything you need to know to make the flakiest gluten free pie crust. Ive used it in numerous recipes and it always amazes me just how flaky, buttery, crisp and delicious it is.

Its wonderful both in sweet and savoury recipes, so there are really endless possibilities of how you can use it in fruit pies and savoury quiches, in galettes and hand pies honestly, Im drooling just thinking about it.

I really hope youll love it as much as I do.

    Happy baking!

Once in a while, tears in the gluten-free pastry dough will happen. Its just a fact of pie making. If its a small tear or just a piece that stuck to your rolling pin, go ahead and patch it up. But if its a large tear or a complete demolition, dont be afraid to re-roll the dough. One or two re-rolls shouldnt affect the flakiness too much. If youre concerned, you can refrigerate the dough for 15 minutes to keep the fat in the dough cool before re-rolling.
