Best Practices For Making Flaky Gluten Free Pie Crust

Always begin with cold ingredients. Dice chilled unsalted butter, and then place it back in the refrigerator to chill again. Begin with cold water, and then add ice to the water. Ice water is colder than cold water, and even colder than ice.

Do not chop up the butter into super small pieces or process them until theyre the size of small peas. That may be a common instruction in pie crust-making, but I am anti-small-peas in all pastry-making for one reason.

Very small pieces of butter not only melt too easily when they meet with the heat of your hands , but they melt right into the dough, so even rechilling the dough wont help once the butter in the raw dough has melted. Using butter in larger chunks, and then flattening them between your thumb and forefinger, solves all of those problems.

Handle the dough as little as possible when making the dough, but dont drive yourself crazy. Since we are working with larger pieces of butter than small peas, we can always re-chill the dough if it becomes too soft or difficult to handle.

If you are making a dairy-free gluten free pie crust by replacing the butter with Spectrum nonhydrogenated vegetable shortening, dont chill the chopped shortening for too long, or it will freeze and be difficult to flatten and roll out properly.

Structure notes: Of the 3 packages I bought, in each package one shell was cracked or broken in places right out of the package. Every blind baking test resulted in a pie where the rim cracked away from the rest of the pie.

I then lined my pie dish and chilled it for 20 minutes before pre-baking. Even with that, the pie crust slumped with pre-baking.

OKAY. I both prefer the Wholly Wholesome Pie Shell and the Trader Joeâs pie dough to this pie dough. Taste is good, but a little tough and not enough coverage for my pie pan.

Once your pie dough has chilled and feels firm but not hard to the touch, its time for the next step: lamination. The process is similar to that for making croissants or puff pastry, and the idea behind it is the same: by folding the dough several times, youre creating more butter-dough layers, which ultimately results in a flakier pie crust.

    Can You Freeze A Gluten And Dairy Free Pie Crust

    Yes! Whenever the holidays come around, I make a few gluten and dairy free pie crusts ahead of time to freeze. Use any type of metal, glass, or disposable piepan. Place your pie crust in the pre-oiled pan. Then, cover the top of the pie crust with wax paper or parchment paper. If you are freezing one pie crust by itself, then place it in an airtight ziplock bag. You may also want to wrap the pie crust in plastic wrap.

    If you are freezing multiple pie crusts in pie pans, then you can nest them together with layers of wax paper in-between them. Place an empty pie pan on top. Then, plastic wrap the whole stack to make it air-tight.

    If you need to save space in your freezer, then freeze the dough in balls rather than in pie pans. Start by dividing the dough in half. One recipe makes two pie crusts.
