The whipped cream can be applied and refrigerated and it will look just as good two days later. I show you how to do that in this video. You can also freeze the pie or small tarts before applying whipped cream. Take out 20 minutes prior to serving. They will taste just as good.

When people say authentic key lime pie, some will want the best-frozen key lime pie while other may want a tradition baked version. This gluten free key lime pie has been a family favorite for as long as I can remember and this gluten free pie filling is the ideal balance of sweet and tangy.

If you dont want to prepare your own gluten-free graham cracker crust, this gluten-free key lime pie recipe will just take you five minutes to make. Using a gluten-free pie crust ready-made makes it quick and easy.

How To Make The Gluten Free Graham Cracker Crust:

This gluten free graham cracker crust is so simple to make and you can use this crust for any other pie recipe you want.

In a food processor, pulse the graham crackers until they are crushed into small crumbs. You will need 1 ¾ cups of graham cracker crumbs for this pie crust. If you have a scale, it is easier to weigh out the graham crackers before crushing them so you know exactly how many crackers to crush. .

Mix in the melted butter and granulated sugar until you have a crumbly, slightly wet mixture. Spread this mixture evenly into a 9 pie dish and pack it down tightly using the flat bottom of a measuring cup or a glass cup. Press the crust up the sides of the pie dish as well.

For this recipe, you need to blind bake the crust. To do this, bake the empty pie crust at 375F for 8-10 minutes until slightly brown. Remove the crust from the oven and let it cool slightly, for about 10 minutes. It is ok to add the pie filling while the crust is still warm. If you want to use this crust for a no bake recipe, dont blind bake the crust. Instead, chill it in the fridge for 1 hour before you add the filling.

How To Make Gluten

Gluten Free Key Lime Pie

Chex Crust

  • Preheat the oven to 350°F.
  • Crush the Gluten-Free Cinnamon Chex cereal in a food processor until you have 1 ½ cups. It takes 3 cups of cereal to make 1 ½ cups.
  • Add the Gluten-free Bisquick and chopped, unsalted butter to the food processor.
  • Process until the consistency of thick sand.
  • Pour the Chex mixture into a medium-sized bowl. Add the ice water and mix with your hands until the dough starts to stick together.
  • Spray a 9-inch pie dish with gluten-free cooking spray. I like gluten-free coconut oil spray.
  • Press the Chex crust mixture into the bottom of a greased 9-inch pie pan and slightly up the sides.
  • Press down in the pan to make sure it is tight and compact. I use the bottom of a flat measuring cup to help press the mixture down.
  • Bake the pie crust on the middle rack for 8 minutes. Allow the crust to cool.

Key Lime Filling

  • In a large bowl, whisk the egg yolks together until fully combined.
  • Add the pure vanilla extract and the two cans of sweetened condensed milk to the whisked egg yolks. Mix until fully combined and creamy.
  • Stir in the key lime juice and mix until fully combined and creamy.
  • Pour the key lime filling into the cooled crust. Smooth the top of the pie with a spatula.
  • Using the middle rack, bake for 20 minutes.
  • Let the pie cool at room temperature for 30 minutes and place in the refrigerator to chill thoroughly about 3 hours.
  • Serve topped with whipped cream. Enjoy!
  • Cover the leftover pie with plastic wrap and refrigerate.

One More Note About This Gluten Free Key Lime Pie:

I did not use key limes. I used big, fat, full-sized limes! Before the key lime pie police who live in Key West, Florida come and arrest me, just hear me out. You cant always find key limes in the summer, which is when we most want key lime pie, right? Also, key limes are so tiny that it takes you forever and a day to squeeze enough juice from them. So lets make life easier and just use regular limes, agreed? I did test one of the recipes with the real key limes and guess what? I didnt notice one difference between the two! Shocker, I know! If you can get your hands on those cute little key limes and you want to be all legit and rock, go ahead, but if youre in a hurry I give you permission to use regular limes. Trust me, I have had key lime pie in Key West, so I know what key lime pie should taste like.

How Do I Make This Gluten Free Key Lime Pie

Again, there’s a full method in the recipe card below, but here’s a bit of a step-by-step guide with photos to walk you through the process.

First of all you need to make the biscuit base by mixing together crushed biscuits and melted butter.

It’s really that simple – and once it’s mixed up, you’ll want to press it firmly down into the base and sides of a loose-base tart tin.

I find using a cup measurer like this really helps to pack the mixture in firmly and push it into the sides of the tin.

Once you’ve made and baked the base, it’s time to create the filling. This is the zesty, fun part!

The filling is made by mixing together egg yolks, condensed milk, and the juice and zest of four limes.

This makes a filling which is creamy, sweet and tangy all at once, yet not sickly at all.

You want to whip it all together and then pour it into the case, before baking it all again so the mixture firms.

Once the baked pie has completely cooled and firmed up, it’s time to decorate it with your whipped cream.

You make this by simple whipping the double cream and icing sugar together until it forms soft peaks.

This means the mixture is still smooth and spreadable, but not too firm. Over-whisking this will cause the cream to become too thick.

When the whipped cream is ready, it should look like this :

Spread this onto the key lime pie and then finish the whole thing off with some extra lime zest.

This will add a lovely pop of both colour and flavour to your finished pie.

My Goals For Making A Gluten Free Key Lime Pie:

  • The crust had to be gluten free
  • For the filling I wanted to ditch the sweetened condensed milk I try to avoid refined sugars as much as possible and prefer to be in control of the level of sweetness.
  • It needed to be simple to make I dont want to spend an entire day baking a pie while on vacation.
  • The first goal wasnt too difficult there are so many gluten free crusts out there, but I wanted it to taste like a traditional graham cracker crust. I slightly adapted Minimalist Bakers recipe for Almond Oat Crust. Its simple to make, is gluten free, and tastes very similar to a traditional graham cracker crust. Its perfect with the key lime pie!     The second goal was a little more challenging. A traditional key lime pie filling is made with sweetened condensed milk, egg yolks, and heavy cream. There really isnt a one-for-one substitute for sweetened condensed milk. This is when I decided it might be just as easy to make the filling dairy free/vegan. It took me a few tries 4th time is the charm but I finally got it right. The filling is a combo of coconut cream from canned coconut milk, coconut oil, agave nectar for sweetness, lime juice and zest, and arrowroot starch for a little extra thickness.

    Mission accomplished!

    I have always loved key lime pie! Its one of those desserts that is so unassuming, but every time it was on a menu Id order it. Of course, that was in my BC days. I dont think Ive ever seen a gluten free key lime pie offered anywhere.

    Sometimes I really wonder why in the world people cant make some of their stuff gluten free, dont you? Im not even a pastry chef and if I can make tasty gf food, why cant someone make a pie that is as easy to make as this one?!?! Or, for instance, why cant sushi restaurants just switch to gluten free tamari instead of soy sauce. Then wed ALL be able to enjoy fresh sushi everywhere!!

    I have to look at the glass half full side of things, though, and say to myself that at least I can make these incredible renditions of my former favorites. I dont have to miss out on things anymore, and because of this, neither do you! As long as I dont give up you will always have access to my successes. When it comes to baking, I NEVER give up!!

    Press Crust Into Pans

    Press the dough into each of your mini tart pans. Use your thump to press it into the corners of the pan and up the sides. You want the curst to be slightly thick. This doesn’t have to be perfect!

    Poke a few holes into the bottom of the crust with a toothpick before baking them in the oven. This allows any air bubbles to escape when baking. Let the crusts cool completely before pouring in the key lime pie filling.

    How To Make A No Bake Key Lime Pie

  • Add your coconut milk, condensed coconut milk, and key lime juice to a pot. Sift in the starch slowly, adding more if needed.
  • Whisk it vigorously to your pudding filling isn’t lumpy from the starch. It will thicken up in 5 to 10 minutes
  • Pour the filling into your prepared gluten-free crust and smooth out the filling.
  • Chill the pie in the fridge for at least 5-6 hours, overnight is best!
  • Add your fresh lime zest and slices to the pie.
  • Finish with whipped cream if your pie-loving heart desires!

    When you think of pie you probably think of a nice round pie cut into wedges. At least I did so that is how I made my first Key Lime Pie. With an easy press-in graham cracker crumb crust it worked well. The pie was delicious but the crust broke into pieces when we served it and it didnt quite have the look I was going for.

    To take a nice photo I decided to make it in jars the second time around. Aside from being trendy I love jam jars. The half cup size jars are perfect for this dessert.

    In the jars you dont need to cook the crumb base so that was a bonus. The uncooked base was easier to stick a fork into and for that reason I think this recipe would also make perfect Key Lime Pie Shooters served in shooter glasses with little spoons.
