Emeril’s 3.5-lb Banana Cream Pie Cheesecake by Junior’s on QVC

Yield: 8-10 servings

1 1/2 cups whole milk

1 1/2 cups plus 2 teaspoons sugar

1 vanilla bean, split in half lengthwise and seeds scraped

1/2 teaspoon pure vanilla extract

Graham cracker crust

Caramel and chocolate sauces , shaved chocolate and confectioners’ sugar for garnish

1. Stir 2 cups cream, milk, 1/2 cup sugar, bean and seeds on medium. At gentle boil, whisk to dissolve sugar. Set aside.

2. Whisk yolks, eggs, cornstarch, 1 cup sugar until pale yellow. Whisk 1 cup of hot cream mix into yolks. Gradually whisk egg mix into hot cream. Simmer, stirring with wooden spoon 5 minutes. Strain cover with plastic, pressing against surface to prevent skin from forming. Chill 4 hours.

3. Spread 1/2 cup custard on crust. Arrange not quite 1/3 of bananas in tight pattern on custard, pressing to pack. Repeat using 3/4 cup custard and enough bananas to cover. For third layer, spread 3/4 cup custard on bananas. Top with remaining bananas, starting 1-inch from edge. Top bananas with 1 cup of custard. Cover chill 4-24 hours.

4. Whip remaining cream to soft peaks. Add remaining sugar and vanilla and whip to stiff peaks. Cut pie into 10 equal slices. Transfer to plates. Fill pastry bag with whipped cream and pipe onto each slice. Drizzle slices with caramel and chocolate sauces. Add garnishes.

As you can imagine, the resulting pie is not only decadent it’s also huge and unwieldy.

We took the original recipe and adjusted the quantities to match eight 4-inch mini tart pans. The resulting mini tarts are as tasty and luxurious as the original recipe, but also a lot more refined. This is now a dessert you could serve to someone you’re really trying to impress!

I Cannot Believe He Came To Our Table At Emeril’s New Orleans

I am continuing my Southern states road trip. The next stop was to the Big Easy New Orleans. I was so excited to stop at my next restaurant, Emeril’s New Orleans.

The weather was raining like crazy. I still was determined to try one of my bucket list restaurants Emerils New Orleans. The restaurant was on the corner of a street in a pretty empty neighborhood. I did not notice many other restaurants around Emerils New Orleans. I had a reservation and I was lucky to snag one. I think I was able to actually get one because of the torrential rain.

The streets were now flooding, but luckily I made it to the restaurant, very wet, but in one piece. I was told as soon as I walked in, before I could even take a breath, to remove my hat. I thought it was funny seeing as it was pouring out and the manager did not even let me step in the front door.

The restaurant was fairly empty again because of the weather. I looked over the menu and there was so much I wanted to order. I started with the calamari. For my entree, I ordered chicken and waffles and my wife ordered Emeril’s Who Dat burger.

The calamari had a delicious creole sauce on top that was so good and added so much flavor without being too spicy. The calamari also was perfectly crispy.

I absolutely loved Emeril’s New Orleans. I would eat here daily if I could. This restaurant is a bucket list restaurant you must go to in your lifetime.

I give Emerils New Orleans a rare rating of 10 out of 10.

Emeril’s Banana Cream Pie With Caramel Drizzles And Chocolate Sauce

Like many restaurant recipes, this most famous dessert of Emeril Lagasse’s has changed over the years. When the recipe was first published in his 1993 “New New Orleans Cooking,” the banana cream pie had a banana crust as well as bananas in the filling. For at least 15 years, though, the restaurant version of this pie has had a straightforward graham cracker crust instead, which is reflected in this recipe.

The old recipe from “Emeril’s New New Orleans Cooking” had a problem with the filling. It didn’t set up. This is the corrected recipe from the Homebase kitchen, and the custard will work just fine.

This pie must be made ahead and chilled at least four hours or overnight, plus the custard needs to chill before assembly. The chocolate and caramel sauces can be made several days ahead (and, of course, used in other recipes as well.

The recipe for the original Banana Graham Cracker Crust is at the end of this post, if you wish to try it. It no longer appears on the Emeril’s website.
