About a month ago I decided Id had enough and I got rid of the cereal and started making breakfast for the family. And a miraculous thing happened: my son stopped sobbing through his writing assignments and my daughter stopped having crazy tantrums. One day I let them have Trix for breakfast and blam! we were back to tantrums and mood swings.
Back to the cherries: weve been craving cherry pie, black forest cake, and cherry oatmeal. Not only do I detest using anything from a can anyways but I also noticed that there are food dyes in canned cherry pie filling which gave me an added excuse not to use it.
Making your own is really quite easy. The hardest part is pitting the cherries if you dont have a device that does it for you and really its not hard so much as time consuming and mind numbingly boring.

How Long Do You Bake Cherry Pie
For a 9 inch pie, the optimal baking time is 20 minutes at 390 ºF , followed by a further 30 minutes at 355 ºF . This ensures the pie is baked all the way through, with a perfectly golden pie crust.
If the top of the pie starts browning too quickly , you can cover it with a sheet of aluminium foil , and continue baking until done.
Tips & Tricks For Making A Lattice Crust
If this is your first time making a lattice crust, I highly recommend checking out my YouTube video for how to make a lattice crust, along with reading our Pie Crust Guide for all the tips and tricks.
But making a lattice crust is actually way simpler than it seems, and is quite fun. Its all about having the dough at the perfectly chill but moveable temperature. This is usually between 65-68F. Thats when I find the dough is easily rollable but still quite cold, so that we can handle the lattice strips without the dough breaking. Any warmer, and you risk your dough breaking. Any cooler, and your dough will crack while you roll it .
Another tip is rolling the dough to be an 1/8 thick. Get out your ruler for this part . Super thin dough will break, once again. Make sure youre rolling evenly, and to 1/8 thick.
Now its time to make the lattice strips. I roll my dough out to be about 12-14, and I use a pizza cutter to slice each lattice strip about 1 thick. I really like the look of a tightly weaved lattice crust, so thats why I slice it so thick. You can slice them thinner if you prefer!

How To Prevent A Soggy Gluten
Cooking the filling will help the pie crust stay crisp. But also making a lattice or heavily vented crust! The steam created in the oven needs to escape for the filling to thicken properly, and releasing that steam prevents the bottom crust from getting soggy.
A classic lattice crust provides plenty of ventilation, but you can also use a small cookie cutter to make circular, decorative vent holes, instead. Which is what I did!
To make the fun cut-outs for the top crust, I used a combination of regular sized cookie cutters, and these mini cutters.

Substitutions You Can Make To This Recipe:
- you can use frozen or tinned cherries if you like – they will require a slightly shorter cooking time and may require you to use extra cornflour depending on how much water they release
- you can substitute the cornflour with tapioca flour
- you can replace the gluten-free flour with rice flour
