Ingredients For Vegan Key Lime Pie

Healthy 10 Minute Key Lime Pie (Gluten Free, Dairy Free)
  • Gluten-Free Graham Cracker Crust: My semi-homemade bakers, you can use the delightful allergy-free Mi-Del Graham Style Pie Crust that is already ready to go or you can bake up a batch of homemade gluten-free graham crackers and crush them up with some vegan butter as shown in this no-bake s’mores pie recipe!
  • Full-Fat Unsweetened Coconut Milk: You want a can of full-fat coconut milk for the filling. This helps the filling remain thick and creamy without the need for eggs or dairy.
  • Sweetened Condensed Coconut Milk: You can use a store-bought can of condensed coconut milk or make a sugar-free version yourself with a can of unsweetened coconut cream and granulated erythritol , cooked down on the stove until thick.
  • Key Lime Juice: If you have access to real, fresh key limes, by all means, use them! If not, the next best option is the OG authentic Nellie & Joe’s Key Lime Juice you can buy by the bottle at most grocery stores! And if that’s not feasible, you can use normal limes, but may need to add extra sweetener. I did use normal limes for the zest you’ll see on top of the finished pie!
  • Starch: Since this is an eggless key lime pie, the starch helps thicken and hold the creamy lime filling together! Either use arrowroot or cornstarch to thicken the filling to a perfect pudding pie texture.

Can I Use Regular Limes Instead Of Key Limes

But guess what? This particular cheesecake doesnt have key limes in it, just regular limes. I didnt have access to key limes at the time I made this, so I used regular limes for it.

So its perfectly fine to use regular limes instead of actual key limes!

I called this a key lime cheesecake instead of a regular lime cheesecake because that just sounds a bit weird, doesnt it? People are so used to hearing the words key lime for pies and cheesecakes, so I chose that name.

Key limes apparently have a more aromatic and less tart juice than regular store limes , so if you do use real key lime juice in this recipe, it might not be as tart.

If you want this cheesecake on the tart side, use regular limes. Youd likely have to use more key lime juice to get the same tartness and it likely wont set up properly if you add more lime juice than it calls for.

What Do We Mean By Healthy

How To Make Vegan Key Lime Pie

For our vegan version we used a vegan condensed milk, whipped coconut cream and lime juice and zest.

The crust can either be made with vegan graham crackers or vegan digestive biscuits, it depends where you are in the world as to what would be easier to get. And if you cant get either of those then use any vegan cookie you like.

I baked the crust, just for 10 minutes at 350°F. I wanted to make the crust very firm and baking it is a good way to ensure that it is! You dont have to bake it though, if youre happy with a slightly more crumbly texture to the crust then you can skip that step.

The main trick to getting this vegan key lime pie perfect is to make sure your whipped coconut cream is very very firm when whipped. If it is not, then add in ¼ ½ tsp of xantham gum to get it nice and firm.

You also want to let your vegan condensed milk cool in the fridge after making it so that it gets nice and thick. If youre using a store-bought variety of vegan condensed milk then this wont apply, but if youre making your own, let it cool and thicken in the fridge first.

And then you have to make sure that the pie has enough time to set properly before you slice and enjoy!

  • Preheat oven to 325°F
  • Combine eggs and sugar. Beat with a mixer until pale yellow and smooth .
  • Add lime juice, zest, vanilla and salt and mix to blend. Add LACTAID® Reduced Fat 2% Milk to the egg mixture, beating until well blended.
  • Por mixture into crust and bake 40-50 minutes or until the edges are set, but the center is still giggly. The center will firm after cooling.
  • Cool pie on wire rack then cover loosely and chill completely in refrigerator, about 4 hours.
  • Spread whipped topping evenly over pie.

    I think basically everything about this Paleo key lime pie tested my sanity last week when I decided to dive in head first and experiment. From deciding what type of crust to make, to the filling, to whether the darn pie would actually use key limes, or key lime juice, or regular limes. So much to consider.

    Do I attempt to make it raw and vegan or do a custard and use eggs? Do I just do a lime version of my lemon bars and call it a day? Do I put whipped cream on it? Honey or maple? How much zest? And then back around to the beginning where I freak out about the crust. I was particularly indecisive last Friday and there was so much drama surrounding this pie that Im sort of surprised we came out alive on the other end. With, luckily, a really flipping awesome Paleo key lime pie to make again and again!

    What wound up happening with this recipe was a whole lot of compromising! With me, myself, and the pie. To start, this pie wanted to be more than just a spinoff of its older-by-a-week sibling so the crust had to be something totally different.

    Key limes are found more commonly in tropical areas of the world but can be sourced in North America at many grocery stores or specialty grocery stores. While they are a little harder to find in my city I actually found them at our local Italian market!

    If you are unable to hunt down key limes for this dessert you can definitely swap in regular limes and lime juice. Key limes have a slightly more floral and tart flavour, but regular limes will still create a delicious citrusy flavour in this pie.

    The Vegan Key Lime Pie Filling

    Once the crust is made, its time to make the key lime pie filling.

    The difference between this vegan key lime pie and others is that were using sweetened condensed coconut milk. Its actually closer to the original classic key lime pie, which uses dairy condensed milk.

    There is only one brand that Im aware of that sells this, and its Natures Charm. However, they ARE an international company and should be available at almost every grocery store. The sweetened condensed coconut milk not only reduces the amount of ingredients we need , but it also provides even more thickness to the filling.

    If you cant find sweetened condensed coconut milk: you can use more coconut milk and maple syrup. Ive given the measurements for that in the notes section of the recipe card below.

    To make the filling, youll simply whisk together the coconut milks, lime juice and zest, and vanilla. Then add in the arrowroot starch and vigorously whisk. It will feel much like an arm workout here, but this is crucial, as we dont want the arrowroot starch to clump. Then continue whisking until the mixture thickens . Pour the filling into the crust and chill until set .

    A note about the arrowroot starch: if you dont have arrowroot on hand, you can use cornstarch in its place. Also note that arrowroot starch is also sometimes called arrowroot powder. The two are the same .

    What Is The Difference Between Limes And Key Limes

    To make key lime pie, its always best to use key limes, instead of just limes. However, key limes are not available everywhere . Key limes are typically more aromatic and have more seeds than regular limes.

    You can use regular limes for a key lime pie if you cant find key limes. This no bake key lime pie will still be delicious!
