Why Was My Gluten
For your bread machine, does it have a gluten free setting? This setting is important because it only does one mix cycle, not two mix cycles like you get with other settings.
If you don’t have the gluten free setting option, use a quick program that features one mixing cycle, rather than two, when making gluten free bread. Mixing it twice will always cause the bread to be denser.
Are you scooping your measuring cup into the flour? Or spooning the flours into the cups and then leveling? You should always spoon then level.
Otherwise, you’ll end up with more flour than you want which causes the bread to be dense.
Are you storing your flours in the freezer or refrigerator? If flours are stored that way they lose moisture and when they are mixed with other ingredients they tend to absorb more of the moisture and the bread is denser.

I know thats a mighty big call, but hand on my heart, this IS the best gluten free bread recipe I know of. I cook this recipe more than any other and could just about do it in my sleep.
Ive tried my fair share of gluten free bread recipes, thats for sure. Ive bought gluten free bread mixes that claim to be the bees knees but taste like what I imagine chewing on an old flip-flop would be like.
And before all my Aussie pals ask that would be like chewing on a pair of thongs and American folks NO, this is not a sexy pair of knickers that Im talking about but flip-flops which we Aussies call thongs
Back to this gorgeous gluten free bread its super-easy to make, but you do need to plan ahead a little.
You cannot skip the resting time the yeast needs this time to work its magic.
The easiest way I find to make this is to mix all the ingredients up whilst Im preparing dinner or doing some other cooking, pop it in the fridge overnight, and bake it when Im ready.

For best results, use a digital scale. It makes all the difference with bread baking.
Note: If you are using a different brand of gluten-free flour, you may not need all of the liquid. Because all gluten-free flours and mixes absorb water at a different rate, you may find your dough to be much more liquidy than mine this is due to the flour. This is what I suggest: add the liquid a little bit at the time, mixing with a spatula to combine. Reference the video to see what the dough should look like as far as texture goes.
Can I Under Or Over Proof The Loaf
You bet! Baking with yeast requires some patience and often just learning from your own mistakes. So how do you know when your loaf is properly proofed? First, dont pay so much attention to time. Proofing times given for any recipe are just guidelines and arent set in stone. Sometimes my house is colder and it will take a small loaf over an hour to rise. Other times, like in the summer months, 30 minutes is all a loaf needs. My rule of thumb is this: set a timer for 30 minutes and check the loaf. If it doesnt look visibly puffed and slightly larger, turn the oven on the warm function and then turn it off quickly. Let it rise in the warm oven for another 30 minutes before checking again.

What About Psyllium Husk Gluten Free Bread
Psyllium husk is a form of fiber that has become relatively popular in gluten free bread baking as a replacement for xanthan gum. Ive tried it, and I simply havent found a way to use it that produces a bread product that I like to eat.
Psyllium husk makes gluten free loaf bread that looks great, and is easy to handle. But I find it has a strange taste and a strange aftertaste. Since breads highest and best use is eating, those are deal-breakers for me.
When Americas Test Kitchen came out with their first gluten free bread recipes, they asked me to endorse them. I worked my way through some of their basics, which included a heavy reliance on psyllium husk.
It does behave similarly to xanthan gum, and is even more effective for breads because its even more hydrophilic . And yes, I used the brand of psyllium husk that they recommend.
I promise youll be the first to know if I change my opinion of baking bread with ground psyllium husk. I wonder if I might prefer it used in smaller amounts, and with whey protein isolate, which I use in my gluten free bread flour.

Tip : Bake In A Steam Oven
Even though you will be adding more liquid while you mix the batter, gluten-free breads often become dry while baking. To make steam in your oven, put an empty pan on the lower grate while it preheats.
Then, when you are ready to put the batter in the oven, place it on the middle rack, then toss ice cubs on the hot pan. This will create steam in your oven to keep the bread moist.
What Type Of Flour To Use For Gluten Free Bread
For this gluten free bread recipe Im using Artisan Baking Mixes 1:1 Gluten Free Baking Flour. It does contain milk products, so it isnt dairy free. If thats an issue for you, I can only suggest experimenting with other gluten free flour blends.
I think that you would probably get a similar result with this recipe if you use Cup4Cup flour , but I havent tried it.

How To Make Gluten Free Sandwich Bread
Can I Make This Recipe In A Bread Machine
Yes, you can! Even though I developed this gluten-free bread recipe to be an oven-baked recipe, I also tested it in my bread machine. Just swap out these ingredients for the ingredients in my gluten-free bread machine recipe and follow the recipes directions. I always recommend using a bread machine that has a gluten-free setting.

Once proofed and doubled in volume:
Bake the dough with steam at 480 ºF for 20 minutes, then remove the tray with water, reduce the oven temperature to 450 ºF and bake for a further 40 50 minutes.
What Bread Machines Are Best For Gluten Free Bread
There are several great brands of gluten free bread machines that have a gluten free setting. My friend, Jane, who wrote The Gluten Free Bread Machine Cookbook, likes to recommend the Cuisinart CBK-200 machine. I have an old Breadman Pro, but I do not think they even make it any longer. Many in my gluten free FB group like this Hamilton Beach model.

What Is In Gluten Free Bread
Every gluten free bread recipe is different, but youll find many of the same ingredients in a gluten free version as you will in a traditional one.
For example, my gluten free potato bread recipe uses all purpose gf flour, tapioca starch/flour, potatoes, milk, sugar, eggs, and yeast like most bread recipes.
The Loaf Is Too Dense
Sometimes a dense loaf of bread is great, but other times you want more of an airy loose texture. If your loaves are too dense then you might want to add a little more leavener to the mix.
Baking soda, baking powder, and gluten-free yeast are all good options. Yeast especially can add a little more flavor to your bread, too.

Important Note About Serving
Generally GF bread requires toasting or a buttered griddle to taste good, but not with the best gluten free bread recipe! Room temperature bread is soft, fluffy, and delicious tasting!
However, please note, if pulling from the freezer and serving at room temp, thoroughly defrost the bread first. If it is chilled slightly it will become more crumbly.
Best Gluten Free Flour For The Bread Machine
There are so many good gluten free flour blends and I have tried a few when I was developing my recipe. Most didn’t perform the way I wanted to I decided to create my own blend. I chose sorghum flour, brown rice flour, tapioca starch, potato starch, and ground flaxseed meal.
This combination of gluten free flours yielded the best results by far. This bread is a good gluten free sandwich bread. It holds up to peanut butter and jelly and a full lunchbox without breaking! The flavor and mouthfeel of the bread are light and fluffy.
NOTE: After two people reached out, I want to re-emphasize this recipe works with my custom flour blend or Cup4Cup, with a few modifications. See the FAQ for the modifications. Bob’s 1 to 1 and King Arthur Measure for Measure are not as good for yeast recipes.
Step 3: Open your bread machine and make sure the paddle is on the spinner. Pour in your mixed wet ingredients.
Step 4: Pour the whisked dry ingredients on top of the wet ingredients.
Step 5: Dump the yeast on top of the dry ingredients. Close the cover and press the button. My bread machine has a gluten free setting. If your bread machine has this setting, use it. After 5 minutes, take a soft rubber spatula and press the flour down from the sides. This tip will help prevent unmixed flour pockets on the side of your bread.
At this point, when the mixing has stopped, you can try to remove the paddle with the long tongs I linked below, or you can remove it when the bread is baked.

Baking Bread With Gluten Free Flour
Personally, I find that the best gluten free all purpose flour for most bread is Better Batter. Its such a versatile blend, and its always worked beautifully for any recipe thats called for an all purpose gf flour.
Better Batter is made with a blend of brown rice flour, white rice flour, tapioca starch, potato flour, potato starch, xanthan gum, and powdered pectin.
Curious about whether I know the exact ratio of these ingredients? It turns out I actually do, so if you cant find Better Batter locally or simply prefer to make your own, all you need to do is follow my recipe for Mock Better Batter.
My DIY gluten free flour blend works exactly like the original version, so you can use it anywhere that calls for Better Batter including most of my gluten free bread recipes.
Some of my bread recipes call for a very specialized gluten free bread flour blend that adds whey protein isolate and Expandex modified tapioca starch to Better Batter, but those recipes will call out the gluten free bread flour blend specifically.
Those breads that call for our gluten free bread flour blend will require fewer enrichments like eggs and butter, and the dough will be handled more like conventional yeast bread. But the recipe will be very specific about the requirement to use the bread flour, and that isnt most of the bread recipes here on the blog.
