Make sure to get the most enjoyable and best experience out of our pies by following the baking instructions and serving tips below. These instructions are specific to Lemon Meringue Pie. If you would like instructions for a different pie, please check that page.
The Lemon Meringue Pie should be refrigerated at all times. For best results, the pie should be consumed within 3 days of purchase. Before serving, please remove from fridge and leave at room temperature for 30 minutes. Ideally you do not want your cream pie to sit at room temperature for longer than 1 hour.
- While you can freeze a cream pie, it is not recommended. The whipped cream and the custard are both best consumed when fresh.
- To cut a perfect slice, try warming your knife blade with hot water and cleaning it between cuts.
- Never warm a cream pie, as the filling and whipped cream will not survive the heat.
Im very picky about pies. I usually bake my own, but have found that The Pie Hole does as well than my homemade efforts. This is NOT a super sweet, mealy crusted grocery store pie. They are absolutely delicious.

What makes up a Lemon Meringue Pie? Lemon curd, meringue and crust, right? Ok, now take my 2 Ingredient No Machine Ice Cream base and mix it all together. The result is Lemon Meringue Pie Ice Cream, a dessert mash up that is second to none.
My Master Recipe for 2 Ingredient No Machine Ice Cream is my go to recipe. For those of you who are not familiar it is simply Whipped Cream and Condensed Milk whipped up to yield you a creamy blank canvas which is your Ice Cream Base.
Each of my desserts are like my children, youre not supposed to have a favorite but you secretly do. This flavor is definitely my favorite child.

How To Make Lemon Meringue Pie Directions

Make your own pie crust from scratch, or to make the recipe super easy, just bake up a pre-made frozen pie crust.
Firstly, bake the crust and have it cooled and ready before beginning to make the pie filling.
Then break 4 eggs and separate the yolks from the whites into two separate bowls.
Zest two lemons, and then squeeze the juice to fill ½ cup.
To make the lemon pie filling:
In a saucepan, add the sugar, cornstarch, salt, and zest of two large lemons.
On medium heat, stir water into the saucepan and continue stirring the pan for 15-20 minutes, or until the mixture thickens and begins to bubble.
Slowly spoon 5-6 Tbsp of the heated, thickened mixture in with the eggs yolks, stirring constantly so as not to cook the eggs.
Then stir the egg yolk mixture into the saucepan with the rest of the heated filling.
Stir in the lemon juice and butter and continue stirring until the butter is melted and the mixture is smooth.
Pour the filling into the pre-baked pie shell and set it aside to cool.

How To Make The Meringue
In a small saucepan add 1 Tbsp of cornstarch, 2 Tbsp sugar, and ½ cup water.
Mix the three ingredients well and on the stovetop heat over medium heat, stirring until the mixture thickens and clears slightly.
Set saucepan aside to cool.
In a mixing bowl, beat the egg whites until frothy.
Add in vanilla and a pinch of salt and beat again to mix.
Gradually beat in 4 Tbsp of sugar, 1 Tbsp at a time.
Then beat in the cooled cornstarch mixture.
Continue beating until stiff peaks form.
