I initially wanted to make an easy chicken pot pie. So, I started out using refrigerated pie dough, all frozen vegetables, and all dried herbs. That was easy, but it really needed some bright fresh flavors.
So, instead of making the easiest recipe, I decided to make the BEST chicken pot pie recipe.
Using fresh vegetables and some fresh herbs in the filling gives this pot pie so much flavor that its ok to take a short-cut with the crust and use a pre-made refrigerated pie crust.
Of course, if you have the time to make your own homemade pie crust, that would be amazing too.

This is the best Chicken Pot Pie recipe in the world! While that’s obviously a big, subjective statement, it’s truly the meal that epitomizes “home” and “comfort food” in my mind. This is the recipe that I grew up with, and it comes straight from the browned, stained index card on which my mom originally jotted down her favorite dish. I hope that you enjoy it as much as we do!
Ingredients in Pot Pie:
- Flour, salt and pepper
First, whisk together the chicken broth and half-and-half and set aside.
Next, prepare the filling by melting butter in a skillet and cooking the carrots, celery and onion for about 10 minutes. Add the flour, cook for one more minute, and then stir the chicken broth mixture into the pan. Continue cooking over medium heat until the sauce thickens — about 5-6 minutes.
Next, season with salt and pepper, and then add the chicken and frozen peas. Your pot pie filling is done!
At this point, you can either transfer the filling to a 2-quart baking dish or deep pie plate, or you can just add the crust to the top of your oven-safe skillet.
I make this easy chicken pot pie with a pie crust, using a prepared refrigerated crust. It’s the best shortcut! You literally just unroll the pastry and lay it flat over top of the dish. Don’t forget to crimp your edges or use a fork to press and seal and then cut slits in the top of the crust to allow the steam to escape.

Assembling A Double Crust Pie
When the dough is ready, youll roll out the bottom crust, lay it in the pie dish, and add your filling. Then, roll out the top pie crust and cover your pot pie with it, bring the bottom crust up and over the top, pinching the two together to enclose. For an extra golden crust and a special touch, brush the pie crust with egg wash and sprinkle with Kosher salt.
Once baked, it will be perfectly golden, flaky and buttery, and the perfect addition to the best chicken pot pie recipe.
What Kind Of Pie Crust Should Be Used
My homemade chicken pot pie recipe calls for a homemade or refrigerated pie crust because I find that they are easiest. Our preference is to have a top and bottom crust although I know some people just use a top crust.
You could also buy frozen pie crust but that is usually just a bottom crust. One of our local grocery stores carries a frozen dough puck which is basically a mound of pie crust in a little bag and available in the frozen section. To me they are like a happy medium between fresh and pre-formed frozen because all you do is thaw the dough, roll it out and place it in the pie pan.

In a pinch, this recipe will work with a store-bought double pie crust, but we highly recommend using a homemade all-butter Pie Crust. It is 5 ingredients and takes just minutes to make. You can also make it a couple of days ahead.
