How To Bake Chicken Pot Pie

All of the ingredients inside the pot pie are already cooked, so the only thing we are concerned with at this point is the pie crust.

The crust should be fully baked with 45-50 minutes. If the top crust should start to look golden brown before the time is up, simply cover the edges with either a pie shield or with aluminum foil and continue cooking for the allotted amount of time.

There is nothing like a made-from-scratch chicken pot pie. Especially one enveloped in a buttery, flaky, homemade pie crust, decked out with perfectly cooked chicken and vegetables, all smothered in a to-die-for chicken gravy. Please, enjoy!

The Best Classic Chicken Pot Pie

The Best Classic Chicken Pot Pie Recipe Homemade chicken pot pie with flaky pie crust and creamy chicken pot pie filling. Classic comfort food!

This chicken pot pie recipe is loaded with flavor. Its got flaky pie crust and a buttery creamy chicken pot pie filling with chicken breast, a mix of fresh and frozen vegetables, and a mix of dried and fresh herbs.

I initially wanted to make an easy chicken pot pie. So, I started out using refrigerated pie dough, all frozen vegetables, and all dried herbs. That was easy, but it really needed some bright fresh flavors.

So, instead of making the easiest recipe, I decided to make the BEST chicken pot pie recipe.

Using fresh vegetables and some fresh herbs in the filling gives this pot pie so much flavor that its ok to take a short-cut with the crust and use a pre-made refrigerated pie crust.

Of course, if you have the time to make your own homemade pie crust, that would be amazing too.

How To Make Easy Chicken Pot Pie:

    Easy Individual Chicken Pot Pie

This is the best Chicken Pot Pie recipe in the world! While that’s obviously a big, subjective statement, it’s truly the meal that epitomizes “home” and “comfort food” in my mind. This is the recipe that I grew up with, and it comes straight from the browned, stained index card on which my mom originally jotted down her favorite dish. I hope that you enjoy it as much as we do!

    Ingredients in Pot Pie:

    • Flour, salt and pepper

First, whisk together the chicken broth and half-and-half and set aside.

Next, prepare the filling by melting butter in a skillet and cooking the carrots, celery and onion for about 10 minutes. Add the flour, cook for one more minute, and then stir the chicken broth mixture into the pan. Continue cooking over medium heat until the sauce thickens — about 5-6 minutes.

Next, season with salt and pepper, and then add the chicken and frozen peas. Your pot pie filling is done!

At this point, you can either transfer the filling to a 2-quart baking dish or deep pie plate, or you can just add the crust to the top of your oven-safe skillet.

I make this easy chicken pot pie with a pie crust, using a prepared refrigerated crust. It’s the best shortcut! You literally just unroll the pastry and lay it flat over top of the dish. Don’t forget to crimp your edges or use a fork to press and seal and then cut slits in the top of the crust to allow the steam to escape.

    Assembling A Double Crust Pie

When the dough is ready, youll roll out the bottom crust, lay it in the pie dish, and add your filling. Then, roll out the top pie crust and cover your pot pie with it, bring the bottom crust up and over the top, pinching the two together to enclose. For an extra golden crust and a special touch, brush the pie crust with egg wash and sprinkle with Kosher salt.

Once baked, it will be perfectly golden, flaky and buttery, and the perfect addition to the best chicken pot pie recipe.

What Kind Of Pie Crust Should Be Used

My homemade chicken pot pie recipe calls for a homemade or refrigerated pie crust because I find that they are easiest. Our preference is to have a top and bottom crust although I know some people just use a top crust.

You could also buy frozen pie crust but that is usually just a bottom crust. One of our local grocery stores carries a frozen dough puck which is basically a mound of pie crust in a little bag and available in the frozen section. To me they are like a happy medium between fresh and pre-formed frozen because all you do is thaw the dough, roll it out and place it in the pie pan.

The Best Crust For Chicken Pot Pie:

In a pinch, this recipe will work with a store-bought double pie crust, but we highly recommend using a homemade all-butter Pie Crust. It is 5 ingredients and takes just minutes to make. You can also make it a couple of days ahead.

Our homemade crust rolls out easily and it never gets soggy when baked. The bottom stays crisp without needing to pre-bake. We use this same pie crust for savory and sweet pies like Apple Pie, our juicy Cherry Pie and Blueberry Pie.

    Why We Love This Recipe

How to bake Chicken Pot Pies

When I was younger, I used to LOVE a frozen pot pie. You know, the kind that comes in a little red box in the frozen food section? Loved them.

But as I got older, I realized they were full of extra calories and fat! Yikes! And some preservatives I didnt really want either.

So, years ago I went searching for a frozen chicken pot pie recipe that I could make at home. I found this one in the 30 Day Gourmet Big Book of Freezer Cooking cookbook and I knew it would be a winner since everything Id ever made from that book we always loved. I tweaked the original recipe to make it my own and it has been a regular part of our menu rotation ever since.

This chicken pot pie recipe is so versatile and can be made ahead in a variety of ways!

First, making the chicken before prepping the recipe is a big time saver. I like to grill a big batch of chicken and chop or shred it to use in all kind of recipes, including this one. Batch cooking chicken is great and Ive also baked, boiled or used my Instant Pot over the years to make it.

Next, the filling can be made and stored in an airtight container in the refrigerator for up to two days until you are ready to prep the pies. You can also freeze just the filling itself .

The whole pie can be assembled, wrapped in foil or plastic wrap, and stored in the refrigerator for up to a day in advance. Keep in mind that sometimes this will make the crust a little soggier so you may need to bake it longer.

Is The Chicken Pot Pie At Costco Good

    Chicken Pot Pie with Biscuits

The chicken pot pie is classic Costco hard-core comfort food at a ridiculously large size and an affordable price. YouTube food reviewers Chef Dawg and The Johnsons liked Costcos chicken pot pie well enough. But if anyone has a complaint about the dish, its that its too salty.

    Are Chicken Pot Pies Precooked

In 2007, food maker ConAgra recalled its Banquet-brand chicken pot pies in a Salmonella outbreak that sickened 272 people who werent able to heat the frozen pies evenly to 165 degrees Fahrenheit. The chicken cubes in the pot pies were pre-cooked, but the vegetables and dough were not.

Increase The Temperature To 375 F

To get that beautiful crispy finish, you need to increase the temperature a bit. Now, set the oven to 375 degrees F and let the pie bake for an additional 10 minutes.

During these 10 minutes, keep an eye on the pie so that the crust does not accidentally start to burn.

If you notice that the fine brown gold color has appeared earlier, take the pie out of the oven even before the 10 minutes have elapsed. Now your pie is fully heated and ready to be served.

Do You Cook Chicken Pot Pie Before Freezing

This is such a great questions because yall know I LOVE freezer meals! You can actually do it either way: baked or unbaked. If you freeze an unbaked pot pie, make sure its assembled in a pie plate or dish and cover it well with freezer-safe plastic wrap before placing in the freezer for up to 3 months. You can pop it right in the 375 degree F. oven frozen, and just add about 10 minutes of cook time.

If you freeze an already baked pie, be sure to let it cool completely before freezing for up to 3 months. You can also put it straight into the oven frozen, but only bake for 30 to 35 minutes.

How Do I Prevent A Potpie Crust From Getting Soggy

    • For a single-crust pie, prebake the crust before filling.
    • Brush the crust with a beaten egg white. This will help seal the crust and prevent the liquid filling from absorbing into the crust.
    • Pour the filling into the crust while its still hot and immediately place the potpie in the oven. The heat from the filling will help set the crust.
    • Bake the pie on a lower rack in the oven. Since heat is concentrated at the bottom, placing the potpie on the lowest rack ensures the bottom of the crust will bake up crisp and golden brown.
