THE BEST Banana Bread | Chocolate Chip | Gluten Free & Dairy Free!

The best way to store gluten-free banana bread is in an airtight container in a cool, dark place. Don’t slice them all at once to avoid it from drying out, and only slice as many as you’re going to eat in a sitting.

The banana bread will last up to 3 days when stored in an airtight container. It doesn’t seem like a long time before they start to taste stale, but gluten-free baked goods tend to have a shorter lifespan compared to their wheat-filled counterparts.

If you want them to last longer, wrap each slice and place them in a freezer bag to store in the freezer for up to a month.

Of course, there are other options aside from chocolate chips. Here are a few of my favourites:

Our Favorite Pan For Banana Bread

The type of pan you use can make a BIG difference in your bakes. Dark pans can scorch the exterior of your cakes or breads before the interior is done, while glass and ceramic bakeware can take longer to cook.

I recommend a coated aluminum pan. We love and recommend this 9×5 loaf pan. Its affordable, lasts for ages, and has nice, crisp corners for stunning-looking bakes. Be sure you use the size loaf pan called for, as using a larger or smaller pan will impact your bake time.

Ingredients For Perfect Banana Bread

  • Old Bananas – Once those bananas turn mushy and the skin is spotty and black, then they’re perfect for banana bread!
  • Coconut Oil – Using coconut oil lends so much moisture with less harmful fats. Plus, it won’t taste coconutty at all. If you’re out of coconut oil, feel free to substitute vegetable or canola oil insted.
  • Honey – Honey is an all-time favorite for me in quick breads and muffins. It’s my only sweetener in these healthy banana muffins. In this recipe I added a bit of regular sugar because using all honey was causing the bread to be too wet in the center. This way, it’s thick and rich and moist without being claggy. Quick bread perfection!
  • Gluten Free Flour Blend – The bread in the pictures was made with Namaste gluten free flour blend . Everyone loved it and no one knew it was gluten free. It can also be made with regular all-purpose flour and be just as delicious.

How To Make The Best Gluten

Chocolate Chip Banana Bread

Preheat the oven to 350. Spray a 9×5 loaf pan with cooking spray or line with parchment paper for easy removal.

In a large mixing bowl combine the flour, baking powder, baking soda, and salt. Mix and set aside.

In a medium bowl cream together the butter, sugar, eggs, and vanilla until creamy. Then add to the dry ingredients along with the mashed bananas. Stir to combine well and then fold in the chocolate chips.

Pour the batter into the prepared loaf pan, top with chocolates, and bake for 45-55 minutes or until a knife inserted into the center comes out clean. Remove from the oven and let cool before slicing into 10-12 even slices.

What Flour Brands To Look For

Bobs Red Mill Natural Foods sells hulled millet. Hulled means manufacturing equipment already cracked and discarded the hard outer shell. Buying large quantities of grains is a smart choice for large families. I share a few shopping tips in my blog, Affordable Gluten Free Cooking and Baking Tips.

  • In a large mixing bowl mix mashed banana and applesauce.
  • Add oil, sugar, eggs, and vanilla.
  • Whisk until smooth.
  • Add flour, cocoa powder, baking soda and salt. Stir until combined.
  • Fold in chocolate chips.
  • Pour batter into the prepared loaf pan and tap it on the counter a few times until it’s level. Bake for 60-70 minutes or until a toothpick inserted in the center comes out clean.

    Gluten-free flours are denser, which can lead to baked goods that are dry. To add moisture to gluten-free bread, you can use more butter, oil, or brown sugar instead of white sugar. Also, when it’s baked, store your gluten-free bread in a breadbox and make sure it has enough empty space around it so the air can circulate. A closed breadbox retains moisture inside the box so the bread doesn’t dry out, but you don’t want to hold it so close to the bread to make it soggy either!

    What Chocolate Should I Use

    Make sure you use a gluten free chocolate variety, with no may contain warning. My go tos are Callebaut and Dr Oetker.

    Callebaut I typically buy in bulk on Amazon, and Dr Oetker is available in most UK supermarkets. Callebaut have a few dark chocolate varieties, I use their 54% one for this banana bread but feel free to go for the mega intense darker varieties if you are a dark choc fan :).

    If you dont have Greek yogurt or sour cream, you can also use plain unsweetened yogurt.

    Can I use less sugar in this recipe?

    Sugar plays a big role in the moist texture of this bread. Adjusting it will likely change the banana bread. For a refined sugar free option, try swapping all of the sugar with coconut sugar.

    Why did my banana bread sink in the middle?

    This is likely due to two missteps: 1. You over mixed the batter. Over mixing develops the gluten strands in the flour, creating a more dense and heavy batter. Mix just until the ingredients are combined. This is why its important to mix the batter by hand. 2. Your pan is too small. 9×5 loaf pans can vary in size, as mine is about 9.5x5x5 inches. If you have a smaller loaf pan, only fill the pan about 2/3 full. Any more than than and the center of the banana bread will have trouble baking all the way through.

    Do I need to make this banana bread with chocolate chips?

    If you just want plain banana bread, you can leave out the chocolate chips. Alternatively, you can add nuts instead.

    • Ive only baked this in a metal loaf pan. For glass or stoneware pans, typically you want to lower the temperature and bake it a little longer.
    • Check for browning. Youll want to check it at about 60 minutes and see if it is starting to brown too quickly on top. You can cover it with aluminum foil for the remainder of the baking time.

    How To Store And Freeze Banana Bread

    It’s best to store banana bread covered on your countertop. It should last up to 5 or 6 days that way, but it’s best within the first 3 to 4 days. It is still perfectly edible after day 4, but it might start to dry out.

    If you don’t think you’ll use it up in time, don’t worry. Freezing banana bread is easy.

    How To Make Banana Bread

    Start by combining the almond flour, tapioca starch, baking soda, and salt in a large bowl and mix well. In another bowl, mash the rip bananas and set aside.

    Mix the coconut sugar and egg until light and fluffy in another bowl. Add the melted ghee or butter, vanilla, and apple cider vinegar.

    Add the mashed banana to the wet ingredients and then add to the dry ingredients. Mix well, add the walnuts, and transfer the banana bread batter to a prepared loaf tin and bake at 350F for 50 minutes.
