How To Make Ice Cream Cone Cupcakes

Preheat the oven to 350 F/176 C. Place the main rack in the middle position.

Now time to make your cake batter. You can use whatever cupcake or cake batter recipe that you want. Make it completely from scratch or just use a cake mix or cupcake mix box. I mentioned a few recipes above that you can try if you like.

You will of course need the extra ingredients for whatever cake batter that you make. For a box cake mix, it is usually water, oil, and eggs. Cant have eggs, try using Greek Yogurt or unsweetened applesauce instead.

Make the batter in a large bowl. Or if you like you could mix it in a pitcher, to make it easier to pour the batter later.

Take your cupcake cones and arrange them in either a muffin pan or in a 13×9-inch baking pan. You may be able to get all 24 in the baking pan. You can also use a sheet pan.

My preference is the baking pan because it seems to be more stable. But they work fine as well in a cupcake pan.

Next, use a little measuring cup and pour about 3 tablespoons of batter into each cone. It should be just above the ridge/handle part of the cone. Dont fill it up too much, because then it will overflow when you bake.

Or if you made the batter in a pitcher you can just pour the batter instead of scooping it. Depending on how thick or thin your batter is, you could even use a piping bag and pipe the batter into the ice cream cones.

Featherweight piping bags are my favorite for cake decorating, because they clean up easily with hot, soapy water. But you could also use the disposable kind! No cleanup required, just toss em when youre done!

Ive used a jumbo open star tip here to pipe on the frosting. A jumbo round tip would work really well too.

A pinch of rainbow sprinkles is the final touch! Theyd also look really cute with a maraschino cherry on top.

For a standard size ice cream cone, I use one scoop of batter with a medium cookie scoop and one scoop of batter with a small cookie scoop . If you do not have cookie scoops, this would equal 2 1/2 tablespoons of cupcake batter. Yes, it will look underfilled, but the cupcakes will puff up when baking. If you overfill the cones, the cupcakes will spill over the top of the cone.

Ive wanted to make funfetti ice cream cone cupcakes since it started warming up, but I never found an occasion for it until my 12-year old niece was in town a few weekends ago for a softball tournament. For these cupcakes, I used an Ateco 826 tip, but you can use whichever piping tip you would like! Another favorite is the Wilton 1M tip! Position the piping tip in the center of the cupcake.   • Bake, cool and frost your cake, using any recipe or flavor you like. I used 1/2 the recipe for my vanilla cake to make a 6-inch 3-layer cake. The full recipe will make an 8-inch 3-layer cake.
  • For the buttercream, I recommend American Buttercream, using half shortening and half butter for a nice white color.
  • In a bowl, combine the granulated sugar and coarse sparkling sugar. Before the buttercream on the cake crusts over, scatter sugar over the top and sides of the cake. You can use your hand or a pastry brush to scoop up the sugar and gently press it against the sides of the cake, gathering up what falls off to use again.
  • If you want the ice cream cone trees to be different heights, youll need to use your fingers to gently break pieces off two of the cones to shorten them, so you have one tall, one medium and one short tree. Dont try to cut them shorter with a knife, as this will just break and crush the cones.
