My Tips For Making This Recipe From Scratch:
There are a few tips to make note of when making gluten-free cornbread from scratch. Cornbread is easy, so no need to complicate it. And, no need to use a mix! You probably already have the ingredients handy.
- Mis en place your ingredients. That means get out and measure all of the componants of the recipe. This takes only a few minutes and makes the assembly a breeze.
- Whisk together the wet ingredients so everything is blended evenly before going into the dry mixture.
- Keep the mixing process fast! Use a whisk to blend the wet and dry ingredients together quickly, breaking up any lumps. Don’t slowly stir and take your time. This is meant to be quickly mixed and get into the oven. You don’t want your leavening to lose its power.
- Have your oven pre-heated. This takes at least 20 minutes. Even if your oven rings to signify it is heated after 10 minutes, the elements are still on full power and could cause your cornbread to cook unevenly. Wait the full 20 minutes so the oven is perfectly hot.
Is Cornbread Normally Gluten Free Is Cornmeal Gluten Free Is Corn Gluten Free
Corn itself does not have gluten in it, so its naturally gluten free. Cornmeal is made by simply grinding yellow corn into a coarse or fine grind.

You first have to be careful about the cornmeal you buy to ensure that it isnt contaminated with gluten-containing grains during manufacturing.
Bobs Red Mill brand has a certified gluten free cornmeal variety, so if you buy that brand be sure to pick up the right package.
Most cornbread is made from cornmeal and wheat flour, so its not actually gluten free.
The only flour in my original old fashioned cornbread recipe is coarsely ground yellow cornmeal. Theres no wheat flour, so its naturally gluten free.
Gluten Free Cornbread: The Cornmeal And Corn Flour Recipe
Cornmeal is coarsely ground corn, and corn flour is finely ground corn. You can buy corn flour, but I generally take my coarsely ground yellow cornmeal and simply grind it again in a blender until its lighter.
I consider this variety, made with half coarsely ground yellow cornmeal and half corn flour, to be the best gluten free cornbread of all.
Replacing half of the coarsely ground cornmeal in this recipe with more finely ground corn flour makes for a less crumbly, more cohesive cornbread. It also has a smoother mouth feel, and tends to stay fresh another day longer when stored at room temperature, wrapped tightly.
Since Ive started experimenting with changing up the flours in this recipe, this variation has become my favorite. I do sometimes buy corn flour if Im placing an order for other things from nuts.com , but more often grind my own.

How To Store Gluten & Dairy
Cornbread in my opinion should be eaten the same day but it is still good to eat up to 2 days later when left on the counter in a tightly sealed container.
You can also slice and freeze cornbread which is what I like to do for up to 3 months in a tightly sealed freezer bag or freezer-safe container. Then you can just pull out a piece or two and heat in the microwave to eat with a big bowl of soup or chilli for lunch!
How To Make Golden Sweet Cornbread
In my opinion, the best GF cornbread is golden and sweet. For this moist cornbread, I use yellow cornmeal.
Is cornmeal gluten-free? It sure is! It is naturally gluten-free and yellow cornmeal gives the cornbread a pretty, buttery yellow color, and has a great flavor.
Yellow cornmeal is slightly sweeter than white cornmeal , so it’s often preferred in baking muffins, bread, or pastries.
You can certainly use white cornmeal if you have it on hand or prefer it. The texture will be the same if you use white cornmeal, if it is the same grind as your yellow cornmeal.
I prefer finely ground cornmeal in this recipe. There is plenty of toothsome crunch, even when you don’t use course ground cornmeal.

How I Made This Cornbread Gluten Free
You would think that cornbread would be naturally gluten free, but youd be wrong! Unfortunately, most cornbread recipes have flour in them. Substituting with my AP GF flour blend was the biggest change to Disneys original recipe.

- Sugar some people think sugar doesnt belong in cornbread, but I say they dont know what theyre talking about.
- Baking Powder this will help the bread rise.
- Vegetable Oil the oil in this bread makes it the most incredibly moist cornbread youll ever have.
- Buttermilk I substituted the milk in the original recipe with buttermilk because it makes the cake richer and even more tender.
What Does This Cornbread Taste Like
My gluten free cornbread recipe is made with honey, and so it has a beautiful subtle sweetness to it. Its texture is tender, and perfect to scoop up your chili with! Some gluten free breads can be crumbly in texture, but that is not the case with this recipe. Youd be hard pressed to guess this is GF!

Can I Make Cornbread Muffins With This Recipe
Sure can! Just grease a muffin tin well and fill 9 of the muffin cups with the gluten-free cornbread mix. This recipe doesnt make enough to fill all 12 muffin cups so just leave the last 3 empty.
Bake at 425 F for about 12-15 minutes or until the tops are golden brown and a toothpick inserted into the centre comes out clean.

Gluten free cornbread is big in my family, especially come holiday season. But really, any time is the right time for cornbread.

How To Store And Reheat Leftovers
Storing: Place leftovers into an airtight container and store them at room temperature for 2 3 days or in the refrigerator for 4 5 days.
Reheating: Reheat in the oven at 350°F for 5 10 minutes or in the microwave for 30 60 seconds until warm. If you are using the microwave, make sure to heat the cornbread on a microwave-safe plate.
How Is This Recipe Healthier
The term healthy is relative to each person, but. I consider this cornbread to be a much better and healthier option than classic recipes. First, it is gluten free. Second, it is refined sugar free since we use honey, not cane sugar, to naturally sweeten the cornbread. Third, it is full of healthy fats and protein from the almond flour. Fourth, it is low carb since we are not using regular all-purpose flour.

How To Make It Moist And Soft
Instead of being savory, and dry like a classic, Southern cornbread , this easy recipe is soft and moist. So how do you make moist gluten-free cornbread?
There is plenty of liquid in this recipe in the form of eggs and milk. Adding oil and melting the butter help to add to this moisture. The ratio of liquid to dry ingredients is close to 1:1 which results in a moist quick bread.

How To Make Gluten Free Dairy
I have successfully transformed this into a gluten free, dairy-free cornbread recipe by using Earth Balance buttery sticks in place of unsalted butter and dairy-free plain yogurt in place of yogurt.
You can also try a mix of half plain dairy-free yogurt and half unsweetened almond milk as a buttermilk replacement. Thats your best bet.
Serving And Optional Modifications
- Serve warm with butter, honey, or jam.
- Make a quick honey butter by mixing together 1/4 cup softened butter with 2 tablespoons honey and a pinch of salt.
- Jalapeño Cornbread Stir in 1-2 fresh jalapeño peppers, freshly minced.

There are so many yummy ways to serve gluten free cornbread, whether youre serving the bread as an accompaniment to a meal or enjoying it on its own.

If you make a naturally gluten free variety of the cornbread, without any rice-based flour blend, you should eat it soon after baking, or quickly freeze it for later use. When youre ready to eat it, defrost briefly in the microwave, as even a warm oven will dry out the cornbread.
While you can freeze many non-gluten free cornbread batter recipes, I wouldnt recommend it with mine. It may taste largely the same in the end, but it wont rise as much so it will be quite dense.

Ill be honest, my gluten free cornbread doesnt tend to last long around my house. But when Im really craving it, Ill make a couple of batches so I can enjoy it throughout the week.
Thankfully, storing this delicious GF cornbread is super easy just wait until it has cooled completely, and then store it in an air-tight container. I have a plastic container that fits a whole batch beautifully, but zip-top storage bags work great in a pinch too.
If youll eat your cornbread within two or three days, leaving it outside at room temperature is fine. Any longer than that, I recommend storing it in the refrigerator.

Is all cornmeal gluten free? The answer is actually NO, which may surprise you.
Cornmeal is often processed on the same machinery as gluten-containing grains, so cross contact can be an issue. I buy Arrowhead Mills cornmeal because it is certified gluten free. and I also buy Bob’s Red Mill’s gluten free cornmeal, it isn’t certified gluten free, but they do in-house testing and process it in a dedicated gluten-free facility (which I’ve seen with my own two eyes.

How To Make Gluten Free Cornbread
I put a nice chunk of butter in my cast iron skillet and stick it in the oven to melt while the oven is preheating.
Then just mix the batter, pour it in the pan, and bake.
Measure your gluten free cornmeal, gluten free flour, baking powder, xanthan gum, and salt and whisk them together,
Add the milk, honey, oil, and an egg, and mix it all up.
Because you add the honey you can control exactly how sweet your cornbread is. I like mine just slightly sweet, but if you like it sweeter just add a few more tablespoons of honey, up to half a cup.
You can also use sugar instead of honey, if you prefer. You’ll need about 3 tablespoons of sugar, and you’ll need to add an extra 2-3 tablespoons of milk.
This simple gluten free cornbread recipe only takes a few minutes longer than a gluten free cornbread mix, and it tastes better and is way cheaper.
