  • 16 oz of cream cheese, softened at room temperature.
  • One teaspoon of pure vanilla extract.
  • 1/2 cup unsalted butter, softened at room temperature.
  • 2 3/4 cups powdered sugar.
  • 1 Tablespoon of heavy cream.

A Few Notes On This Red Velvet Cake Ice Cream Recipe:

  • I highly recommend this red velvet cupcake recipe from Buttermilk by Sam. And it is so chocolaty and moist and is just the right size for this ice cream recipe!
  • Use the good cocoa, and if you can find it, use cocoa rouge – it is naturally a deep red color which means you can use less food coloring.
  • similarly, use the good extracts. All natural, highest quality.
  • And about that food coloring – I am not a fan of artificial anything, so I always use a natural food coloring especially in something like this where you are using quite a lot. This is totally up to you. This is the one I use: Watkins Natural Red Food Coloring
  • This recipe does require an ice cream maker. I have not tried it without one and I can’t recommend you try to make it without one.
  • Making the ice cream base the night before and letting it chill overnight before churning is the way to go. You want it completely chilled before churning.

Even if you aren’t the biggest fan of Valentine’s Day, the holiday is a perfect excuse for playing with red velvet creations. Though it’s the dead middle of winter and we just experienced yet another snowfall, I found myself wanting to make an ice cream cake.

Using a springform pan makes putting together an ice cream cake is easy peasy. I didn’t want to make a cake that was too large since it was meant to be a treat just for us, so I used a cute, tiny 6-inch springform that was perfect! This is the one I used. I baked a single cake layer and cut it in half so that I would have 2 thin layers of cake with a thicker layer of ice cream.

I used a simple no-churn cream cheese ice cream and added in a layer of homemade “chocolate crunchies” like the kind you find in store-bought ice cream cakes. Because in my book, you just can’t have an ice cream cake without those little crunchies.

I considered frosting the entire cake in whipped cream like what I’ve seen from some leading cake shops similar to Anges de Sucre cake shop, but when I took it out of the pan it looked so pretty with all of the layers visible that I just couldn’t bring myself to cover it. Instead, I decided to decorate the top with extra ice cream scoops, crunchies, and some Valentine’s Day Sprinkles. The big pink heart is a PEEP from their holiday line.

Prepare The Red Velvet Mixture

Beat the butter and sugar until you achieve a fluffy consistency. Continue this process while slowly adding one egg at a time, beating until blended. Then, carefully incorporate the granulated sugar, also beating until blended.

After that, slowly add the dry ingredients and food coloring to the mixture and mix all the ingredients thoroughly.

What Flavor Is Red Velvet

When I asked my son the annual birthday question, “what kind of birthday cake do you want?” and he chose Red Velvet Cake, I was not the least bit surprised.

To store leftover ice cream, Id recommend investing in a high-quality container that can be used year round. This containeris a favorite of mine its inexpensive and doesnt take up much freezer space. Alternatively, these biodegradable containers also make for quick, sustainable storage.

Other options for storage include: Tupperware or Rubbermaid freezer-safe containers, old plastic ice cream containers , a loaf pan covered with plastic wrap, or even a pie dish!

Homemade ice cream is best consumed within 2 weeks but it can be stored for up to 4 months. The quality, taste, texture, and color will deteriorate after long-period freezer storage. Keep the container tightly sealed to prevent freezer burn and serve while fresh.

The first step in making this keto red velvet ice cream cake is the baking of the cake. While the cake is baking, you can make the easy keto churn-free ice cream.

To make this red velvet low carb ice cream cake you will need the following ingredients:

Making Method Step By Step:

Step 1: Preheat the oven to 350 degrees and prepare your baking pan and cake.

Step 2: Place your cake batter in a small bowl and add vanilla extract, white vinegar, and about 3 tablespoons of Cream Cheese.

Step 3: Beat the batter on a powerful standing electric mixer for 1 minute. Add 2 more tablespoons of cream cheese and continue beating for a few minutes until everything is well incorporated.

Step 4: In a large bowl, sift together dry ingredients.

Step 5: Add 1 and 3/4 cups of sugar and mix well with your hand mixer until the batter is nice and smooth. Make sure you scrape the sides of the bowl off with a spatula so that the batter is equally mixed.

Step 6: Add the eggs, one at a time. Be sure to leave some time between each egg so that it has time to mix with the batter.

Step 7: Add 1 cup of softened butter and continue mixing on medium speed until the butter is completely mixed into the batter. May also use your hand mixer for better results.

Step 8: Pour your cake batter into a 9X12 baking pan. Bake at 350 degrees for 30 minutes or until a toothpick inserted in the center comes out clean.

Step 9: Allow cooling for about 5 minutes before adding the icing.

Step 10: In a mixer, beat cream cheese and butter. Add in sugar and continue mixing. Beat in vanilla extract and heavy cream until smooth.

Step 11: After cooling the cake, spread evenly with icing on top.

Step 12: Once the icing is spread on top of the cake, allow it to set for about an hour or until it becomes hard.

Why do light bulbs have to be so complicated? I almost always buy the wrong light bulbs because I never know what to look for on the box. Tell me Im not alone there.
