Hearty and delicious, this shepherd’s pie preps in just 15 minutes by using Simply Potatoes® Mashed Potatoes.

| 1 ½ pounds lean ground beef |
| 1 cup chopped onion |
| 2 cups frozen green beans, thawed |
| 1 cup frozen corn niblets, thawed |
| 1 can diced tomatoes, drained |
| 1 jar beef gravy |
| 1 teaspoon dried thyme leaves |
| ½ teaspoon salt |
| 1 package Simply Potatoes® Mashed Potatoes |
Steps:
- Heat oven to 375 degrees F. Spray 2-1/2 to 3 quart casserole baking dish with nonstick cooking spray.*

Since beef stock makes up the base of this soup, youll want to make sure youre using a high-quality stock. In this recipe I used Kitchen Basics® Original Beef Stock because I love the rich beefy flavor and it tastes so close to homemade.
To make this extra easy the remaining veggies are frozen .
Shepherds Pie is topped with potatoes that are baked until golden adding flavor and a creamy texture. In this recipe, make mini potato puffs and bake them to golden brown. These potatoes are best added to the bowl once the soup has been ladled in. If you dont want to make mashed potatoes from scratch, adding egg yolks to store bought mashed potatoes will work just as well.
How To Make Tater Tot Shepherds Pie
This is one of those recipes that I have been meaning to make forever. I picked up a bag of Tater Tots something that rarely graces my freezer because they are delicious and evil and addicting and thought perhaps I would do a classic mushroom soup and Tater Tot casserole, something a friend suggested I try when I was craving my usual mushroom soup fix.
For some reason when I went to pull out the bag of Tater Tots, I had this irresistible urge to make Shepherds Pie with Tater Tots on top, instead of the mushroom soup concoction.
My son also wanted to make dinner that night and this was the perfect dinner for him to practice his budding culinary skills on. At ten he is more than capable of frying up the ground beef
