How Do You Make Healthy Weight Watchers Chocolate Chip Cookie Bars

  • Preheat the oven to 300°F, and coat an 8-square pan with nonstick cooking spray.
  • In a large bowl, stir together the peanut butter and cashew milk. Stir in the salt, vanilla, stevia, and maple syrup.
  • Pour in the oat flour, and sprinkle the baking powder over the oat flour . Stir in the oat flour and baking powder until just incorporated. Stir in 3 tablespoons of miniature chocolate chips.
  • Spread the mixture into the prepared pan. Gently press the remaining miniature chocolate chips on top.
  • Bake at 300°F for 12-15 minutes. Cool completely to room temperature in the pan, and let the bars rest for at least 6 hours once at room temperature for the best taste and texture before slicing and serving.
  • Tips to make these Healthy Chocolate Chip Cookie Bars

    • I always line my baking pans with parchment paper. This way you can lift the entire cookie bar mass out then easily cut into squares. Also makes for quick clean up.
    • Dont overbake these cookie bars! Theyll actually be done when the edges look firm but the center still looks glossy and a bit underdone. The center will continue to cook through from the heat of the warm pan while you let the pan cool completely to room temperature on the counter.
    • You must let these healthy cookie bars rest for at least 6 hours once theyve reached room temperature. They turn fudgier and chewier the longer you let them rest.

    These are absolutely family friendly no bake cookies for Weight Watchers. Theyre protein bites but they eat like a little cookie, they are just the perfect amount of sweet and chewy. The whole family enjoys these. I usually prep a batch on a Sunday night and then I have some for everyone to enjoy all week long.

    I would much rather have my kids and family eating these Weight Watchers cookies than another more processed snack that contains all kinds of mystery ingredients and loads more calories and fat.

    Weight Watchers Nanaimo Bars Recipe

    WEEKLY WW MEAL PREP | PEANUT BUTTER PIE | PANERA SALAD | BLUEBERRY BFAST BARS | WEIGHT WATCHERS!

    1 cup graham cracker crumbs
    2 Tbsp chopped walnuts
    2 oz milk chocolate chips
    1/8 cup dried shredded and sweetened coconut meat
    3 Tbsp reduced-calorie margarine, melted
    1 oz fat-free sugar-free instant vanilla pudding mix
    1 cup fat-free skim milk
    5 oz lite whipped topping
    4 oz semisweet chocolate
    1 Tbsp reduced-calorie margarine

    Steps:

    • Line bottom of an 8 X 8-inch baking pan with parchment or waxed paper. Place graham cracker crumbs, nuts, chocolate chips and coconut in a food processor pulse until combined and then add melted margarine. Stir together and pour into prepared baking pan, patting down crust evenly on the bottom place into freezer for 10 minutes. In a bowl, whisk together pudding mix and milk until firm add in whipped topping. Spread evenly on top of chilled crust and place back into freezer for 45 minutes, or until firm. Melt baking chocolate and 1 tablespoon of margarine in a small saucepan over low heat stir and set aside until luke warm. Pour and spread over pudding layer and place into refrigerator until set, about 5 minutes. Cut into 16 bars and serve.

    No Bake Peanut Butter Pie

    Whip this up in minutes with a prepared graham cracker crust for a no-bake dessert, or make your own graham cracker crust for prettier presentation .

    Although I dont have the biggest sweet tooth, I do have a weakness for pie, especially peanut butter pie! This recipe hits the spot when I have a craving. To lighten this pie, I used Better n Peanut Butter which I usually buy at Trader Joes, but you can also get it at Target or

    I have not tried the with PB2, if you wish to use it instead, prepare the PB2 with water as instructed then measure it prepared and use it in place of the the Better n Peanut Butter.

    When I originally created this recipe in 2013, Weight Watchers had a different point system. Once they switched their points over to their new Freestyle, the points for this pie increased quite a bit. So I made a few small tweaks such as reducing the sugar and using less cream. Also by turning this into 12 slices instead of 10. Yesterday I tried it and it was heavenly bliss ! I could probably cut the sugar down even more without missing it. I found this 12 cut pie cutter online which I think is pretty cool and helpful to make cut your portions smaller. Now, I cant even imagine how many points a traditional peanut butter pie would be, my guess is a lot! Hope you enjoy and if you try it with PB2, Id love to know how it tastes!

    Easy Chocolate Peanut Butter Pie Recipe Notes

    Mix up the yogurt and peanut butter powder ahead of time and store in mini Mason Jars or small Tupperware containers. Keep the graham cracker crumbs and whipped topping separate and be sure to add them just before eating to ensure it doesn’t get soggy.

    Substitute chopped almonds or walnuts for the peanuts, if desired.

    Substitute honey graham cracker crumbs, or your favorite granola, for the chocolate graham cracker crumbs.

    For even more chocolate or peanut butter flavors, add a tablespoon of mini chocolate chips .

    Be sure to adjust your WW Points accordingly when making any substitutions.

    Liquid stevia is highly concentrated. By adding a mere 1 teaspoon of liquid stevia, you add the sweetness equivalent of ½ cup of maple syrup!

    When you use both pure maple syrup and liquid stevia, your healthy one-bowl flourless chocolate chip peanut butter cookie bars are perfectly sweet, soft, and chewy. Its the best of both worlds!
