Carrot cake is a favorite cake loved by many.

It is probably my most popular keto dessert recipe on my social media although a close rival is my keto chocolate cake and a new recipe I have keto cheesecake. Everyone who tries this sugar-free cake, loves it as well as their non-keto friends and family! I especially love it in the Spring and around Easter because thats usually the season of carrot cake.

I created this keto carrot cake recipe with cream cheese frosting because I needed to satisfy my occasional craving for carrot cake.

This low carb cake recipe is moist and full of carrot and spice flavors because it is made using REAL carrots.

Using real carrots helps give this cake a spongy texture and helps keep the almond flour based cake from drying out. We also dont use coconut flour in this recipe as coconut flour tends to be more dense and will be a denser cake instead of one that is light and airy.

Many keto carrot cake recipes use carrot cake flavoring extract instead of actual carrots. They do this because some keto police say that carrots arent keto. But thats not true. As long as you arent consuming a ton a carrots, the occasional carrot isnt going to budge your carb limit that much.

Using real grated carrots in this recipe not only produces authentic carrot cake flavor but it provides moisture to the cake too. You will be sold once you make this low carb carrot cake and so will your guests. Just cover with frosting and if desired, top with chopped walnuts.

Even if you use real sugar, you still only need 2/3 cup total for an entire double layer cake, which is crazy low in comparison to traditional chocolate cake recipes that often have at least double that amount!

Add all ingredients to blender and blend until smooth. You may need to scrape the sides a couple of times and blitz again.

Tip: By adding the wet ingredients FIRST and the dry ingredients SECOND, you avoid the flours sticking to the bottom.

Also, don’t forget the salt. It adds depth of flavor to the recipe.

Prefer dairy free? Use coconut oil instead of the butter, coconut yogurt instead of the yoghurt and whipped coconut cream in place of the mascarpone.

Want to add a bit of zing? Grate the zest of a lemon into the batter.

Need to speed things up? Add a handful of berries directly into the batter . Then you can leave out the mascarpone frosting.

Like it Paleo? Replace the powdered sweetener with coconut sugar.

Insist on super fine almond flour? I recommend to reduce the amount to 3 cups for a moist result.

And last but not least… Prefer coconut flour?? Halve the amount stated for almond flour. For a stronger crumb structure, you could also add 1 teaspoon of xanthan gum.

Just a few simple steps and you will be indulging in a piece of keto vanilla cake in no time! Here are the easy directions:

    You want to make sure that the eggs are ROOM TEMPERATURE. If you forgot to take them our 30 minutes before starting on the cake, you can always warm them up in a bowl with hot water.

    Keeping the eggs at room temperature prevents the mix from splitting and becoming lumpy once you add the warm chocolate and butter.

    2.) Add the powdered erythritol and whisk again until well-combined.

    Tip: If you only have granulated sweetener, blitz it in a food processor or with the attachment of a stick blender to turn it into a powder. You don’t want any crunchy bits in your gooey, moist chocolate cake!

    TASTE the cake batter and add more sweetener if necessary. I don’t have much of a sweet tooth, so you may prefer it a little sweeter than I do.

    3.) Melt butter and chocolate and stir until combined. You can do this in a microwave or on the stove – but slowly and gently. TAKE YOUR TIME!!! If the chocolate gets too hot too quickly, it can seize or separate.

    Then add the mix to the bowl and fold it in with a spatula or spoon.

    4.) See how it’s slowly coming together?

    5. And this is how it should look like – gooey, creamy goodness!

    6.) Lastly, you add the almond flour / ground almonds and stir until they are evenly distributed.

    Let the cake cool completely before cutting.
