Cherry Pie Tri County Pinot Noir 2017 750ml
Cherry Pie wines are a distinct expression of Pinot Noir with a strong sense of place. Combining three counties, each its own distinct terroir, Cherry Pie Pinot Noir showcases the best of each countries unique flavor profile which results in a juicy wine, rich with flavors of Bing cherries and raspberries that culminates in a long, silky smooth finish.
Combining three counties, each in its own distinct AVA, Cherry Pie Pinot Noir showcases the best of each counties unique flavor profile. The Sonoma County grapes are primarily sourced from the Russian River Valley which is a warmer growing climate for Pinot Noir that results in lush juicy fruit flavors with an undertone of minerality from the soil. The grapes from Monterey County are sourced from the Alta Loma Vineyard and Arroyo Loma Vineyard which overlook the Salinas River Valley and are planted on gravelly loam soil which creates rich, concentrated earthly flavors in the fruit. The Santa Barbara County grapes are from the Los Alamos Vineyard which lies tucked into a canyon that leads directly to the Pacific Ocean. The sandy soils, bright sunshine and cool ocean breezes combine to lengthen fruit ripening and extend hang time, resulting in intense aromatics and great acidity.

Red Wine Cherry Sauce
In a medium saucepan, add the pitted and halved cherries, granulated sugar, red wine, cornstarch and lemon juice. Place over medium-low heat and boil for 10-15 minutes stirring occasionally. The cherry sauce should be cooked down and have a medium thick consistency. Remove from heat and transfer to a bowl. Let it come to room temperature, or refrigerate for 30 minutes. Pour the cherry sauce into the cool Graham cracker crust and spread evenly using a spatula. Return back to refrigerator.

Ingredients For Red Wine Cherry Tart
Fresh Sweet Cherries: opt for sweet cherries not tart cherries as they tend to be more sour and they wont work for this cherry tart recipe. Since cherries are the highlight, I recommend you purchase good quality cherries.
Red Wine: Baking with wine can be tricky but these tips will help you choose the best for this cherry tart. When deciding on what wine to use, have these factors in mind avoid full bodied, strong tannin wines such as Cabernet Sauvignons and Syrahs. Oaky red wines will overpower the cherries, leaving an unpleasant chalky taste. An inexpensive but decent wine will work great so no need to spend a lot. Red wine blends with fruity hints, Beaujolais and Pinot Noirs will be ideal for this cherry tart recipe. We use red wine to enrich the cherry flavor and add depth to the dessert. That means, the wine needs to be reduced and the alcohol should evaporate.
Lemon Zest & Juice: The grated lemon zest incorporated in the Graham cracker crust provides a pleasant citrus flavor. Moreover, by using lemon juice for the cherry sauce filling, we balance the sweetness and give a zesty flavor hint.

Cherry Berry Pinot Birthday Pie Recipe
August 23, 2013 By beckysue
Cherry Berry Pie with a pinot noir reduction.
I am just going to say this once, birthday pie puts birthday cake to shame. Cake is sweet and predictable, but pie pie is the sultry seductive mistress of desserts. No question. My husbands birthday is August 21st and therefore in the middle of hottest pie baking season. Lucky for me, he is a bigger pie fan than I. And lucky for him, I am big fan of baking summer pies. Last year I made him a boozy bourbon cherry pie for his birthday, oh yeahhhh. This year, I sexed up some old recipes and came up with a seductive new pie recipe, just for him. After a ménage à trois of cherries, berries and pinot noir, the Cherry Berry Pinot Pie was born.
I tenderly tossed cherries, blueberries and raspberries with a cup of sugar and then soaked them in a luxurious bath of Oregon Pinot Noir. The cherries, berries and I drank up the sweet berry wine for about an hour, and then I drained the juices of the swollen fruit into a saucepan. The pinot juice slowly simmered and reduced down to a thick and rich jammy syrup. I then mixed the red hot syrup back into the berries and added some tapioca to soak up all that sexy sweetness.
Instead of cheesing up the pie with waxy birthday candles, I uninhibitedly cut a candle shaped slit in the top to let out all that hot steam that bubbled up while it baked in the oven.
Pour some sugar on me. Oooh, in the name of love.
Dousing the cherries and berries in pinot.
